AB  - This research examined the effects of two rearing systems (conventional versus free-range) on carcass characteristics, and cholesterol content, chemical and fatty acid properties of the backfat from Mangalitsa pigs. Depending on the rearing system utilized and live weight observed, we found important differences in the heaviness of the cold and warm Mangalitsa carcasses. The
maximum total cholesterol in the backfat of pigs reared outdoors was 46.96 mg kg⁻1, while the maximum total cholesterol in backfat of conventionally-raised Mangalitsa pigs was 55.80 mg kg⁻1. The backfat from free-ranging Mangalitsa pigs contained lower levels of PUFA n-6 and greater amounts of PUFA n-3. The ratio of PUFA/SFA was remarkably different in pigs raised in the two systems, whereas the ratio of MUFA/SFA was lower in the pigs reared outdoors. Based on these results, the selection of rearing system could affect the chemical properties and carcass characteristics of Mangalitsa backfat.

AB  - The aim of this study was to determine the influence of sire, sire within the breed, genotype, farm and age on variability of production traits of gilts tested: age at end of the test (AET), life daily gain (LDG), backfat thickness 1 and 2 (BFT1 and BFT2) and back muscle depth (MLD). The production traits of gilts were examined in two pig herds and for three consecutive years. The study included 3605 gilts of 3 genotypes, originating from 82 sire boars. The test included only those boar sires who had 10 or more daughters. In the first herd there were 1233 and in the second 2372 tested gilts. There were 1962 gilts of Landrace (L) breed, 1324 of Large White (LW) and 319 gilts of Duroc (D) breed. Total of 885 animals were tested in the first year, 1145 in the second and 1575 in the third year. Based on the obtained results, it was determined that the genotype had a statistically significant effect (P<0.001) on BFT1, BFT2 and MLD, while the AET and LDG traits were not influenced (P> 0.05). Considering the farm as a source of variation of gilts’ traits, it was concluded that it had a statistically very highly significant effect on the traits tested (P<0.001). The year of testing of gilts as a source of variation showed a very high statistical effect (P <0.001) on all traits examined. The sire breed statistically highly (P<0.001) led to the variation of the examined traits, which was also the case with the influence of the sires within the breed (P<0.001). The properties BFT1, BFT2 and MLD were highly statistically dependent (P <0.001) on weight at the end of the test.

AB  - Climate change and the emergence of new animal diseases emphasize the need to maintain and conserve plant and animal resources because of their adaptive capacity. For hundreds of millions of poor rural households, livestock produc-tion and crop farming are a key resource for life. Livestock production has great contribution and is vitally important for the life and safety of crop production. Conservation of animal genetic resources is not easy and simple, but it is of con-cern that in the past some animal genetic resources have been lost before their characterization and their genetic potential has not been studied. It is known that with the loss of a single breed or strain, the genetic diversity contained within also disappears. That is why it is necessary to continuously work on the conservation of animal genetic resources using various methods of conservation. The preservation and improvement of livestock production and animal genetic diversity, the preser-vation and the development of locally adapted (autochthonous) new breeds, as well as the preservation of genetically diverse populations provide society with a greater range of options to meet future challenges and further develop agriculture.

AB  - In the present study, the aim was to determine the impact of the following factors: age, farm, and gilt genotype, as well as the regression impact of body weight at the end of the performance test on the following tested properties: age at the end of the test/final age (FA), lifetime daily gain (LDG), the backfat thickness measured in two places (according to the Main Breeding program for Central Serbia), the depth of the long back muscle (BM) and the estimated lean meat content/meatiness (M). The study included two farms of pigs (farm 1 and farm 2), for three consecutive years (year 1, year 2 and year 3). The number of tested heads per year was 974 (year 1), 1311 (year 2) and 757 (year 3). The tested gilts were of Swedish Landrace, Large White and Duroc breeds. The gilts originated from 97 sires, while the number of daughters per sires ranged from 10 to 100. The results show that the Duroc animals were the oldest (245 days), which had the highest values for both measures of backfat thickness, but the lowest values for meatiness. In the third study year, the lowest average values were determined for the properties of the LDG, BM and M. The female animals from the farm 1 showed less growth/gain and had lower values for the estimated meatiness. As a result of the study, it was established that all included factors had a very high statistically significant influence on the variation of the tested properties (P <0.001), only the genotype of gilts showed ahigh statistically significant effect on the BM property (P <0.01).

six boars, of two genotype Large White (LW) and Swedish Landrace (SL).
Average body mass of examined animals were 114.5 kg. Share of meat yield of pig
carcass was estimated on the slaughter line using two methods. First method use
“two point” system where first measurement is depth of m. longissimus measured
as the shortest link/connection between front (cranial) end of m. gluteus medius and
the top (dorsal) rim/edge of the spinal canal and second is where m. gluteus medius
penetrates the fat tissue the most. Second method also use two measurements: X1=
thickness of fat tissue (with skin) in millimeters measured on medial carcass
surface between 3rd and 4th lumbal vertebrae, caudo-cranially and X2=thickness
of fat tissue (with skin) in milimeters measured on medial carcass surface between
3rd and 4th rib, caudo-cranially. The meatiness of the progeny very significantly
depended on boar genotype (p<0.01). Offspring of SL boars had better results in
both methods (60.47; 56.45%), than LW offspring (60.35; 55.85%).

AB  - The effects of the use of antibiotics and garlic powder in the
nutrition of weaning piglets were compared. The trial included 120 weaned piglets
of the same genotype (Large White) distributed in three feeding treatments. In the
first study period (day 27-56), a feed mixture with 20% protein was used, while in
the second period (day 57-84), a mixture with 18% protein. The control group was

AB  - The study included 201 offspring (108 castrated males and 93
females) of Landrace (L), Large White (LW) and Pietrain (P) sires. The studied
animals were of following genotype: Landrace (L; n = 48); two breed crosses with
50:50 share of parental breeds (LWxL, n=32; and PxL, n=23), two breed crosses
with 75% of paternal breed [Lx(♀LWxL), n=35] and [LWx(♀LxWL) n=38] and
three breed crosses [Px(♀LWxL) n=25]. Animals included in this study were born
during four seasons: winter (n=38), spring (n=65), summer (n=40) and autumn
(n=58). Studies have shown that, at an average weight of warm carcass side of
81.20 kg, the highest average values for the weight of round (RW; 10.204 kg), the
weight of intermuscular fatty tissue (RINT; 0.478 kg), bone tissue (RBT; 0.850 kg)
and muscle tissue (RMT, 7.552 kg) in the round, were established in three-breed
crosses of Px (LWxL) genotype compared to other genotypes. The least skin and
subcutaneous fatty tissue (RST; 1.269 kg) was recorded in two breed crosses PxL.
They had less skin and subcutaneous fatty tissue by 454 g and 467 grams,
respectively, compared to two breed crosses (LWxL) and LWx (♀LxLW).
Research has shown that there is a genotype on a farm that gives more muscle
tissue in the round by 1.521 kg [Px (♀LWxL): LWx (♀LWxL)] with the same
weight of warm carcass side, which is a very large difference. With the same
average weight of warm carcass side, female animals had higher average weight of
the round and yield of muscle tissue compared to male castrated animals. The
effect of genotype (P<0.001) on all investigated traits was recorded, also the effect
of the season of birth on the skin and subcutaneous fat tissue and on the weight of intermuscular fat in the round was recorded. The effect of sex/gender was significant (P<0.01) on the weight of skin and subcutaneous fat and on the weight of the muscle tissues in the round but no significant effect on other tested properties (P> 0.05) was observed.

AB  - The production characteristics of fatteners in this paper were examined in two farms of pigs in
the Republic of Serbia. The research included 1166 pigs of both genders (female animals and male castrated heads) with various genotypes. Research examined influence of sire breed, sire within sire breed, gender of the pigs and the mass at the end of the fattening on the following characteristics of the fatteners: daily gain of the warm carcass side mass (PTP), rump fat thickness (DSK), backfat thickness (DSL) and sum of the fat thickness rump+back (DSKL). The pigs in this research come from the following sires: Large White (LW), Swedish Landrace (SL), Duroc and Crossbreed H × D. Data processing was done using the Harvey computer program. It was determined that all the involved effects in the model show a different level of influence on the researched traits (P < 0.05; P < 0.01; P < 0.001), whereas only one factor, sire within sire breed H × D does not influence the expression of the characteristic gain of the warm carcass side mass (P > 0.05).

Effect of immunocastration on sex glands of male Mangulica (Swallow-bellied Mangalitsa) pigs

AB  - The objective of this research was to study the effect of immunocastration
on the morphometric characteristics of sex glands in male Swallow-bellied Mangalitsa
pigs. The study included 24 animals (13 entire and 11 immunocastrated males). The
research focused on the following traits: age at slaughter (days), live weight at slaughter
(kg), growth rate (kg day−1), and morphometric testicle traits (volume, cm3; weight, g;
length, width, thickness, and circumference, mm). The efficacy of immunocastration
was determined based on androstenone and skatole levels in adipose tissue. The
group of immunocastrated animals had higher body weight at slaughter (+18.8 kg)
due to higher average daily live gain (+87 g). Immunocastration resulted in reduced
morphometric measures of testes. The volumes and weight of testes/epididymes were
reduced by 28.9-54.4 and 32.1-53.3%, respectively. Testis length and other size-related
traits were significantly reduced by 17.4-27.6%. The linear regression effect of live body
weight at slaughter within the immunocastrated group on testis measurements was not
significant. Within the entire group of males, the increase of live body weight at slaughter
by 1 kg had an effect on the increase of volume and weight of testes/epididymes by
0.55-2.24 cm3 and 0.52-2.28 g, respectively. Other size-related testis traits increased
by 0.04-0.55 mm for each kg of body weight. Immunocastration also resulted in
79.6% decrease in the weight of accessory sex glands. The present study is the first to
demonstrate that immunocastration could be a method of choice for castration of the
local fatty pig breed, Mangulica (Swallow-bellied Mangalitsa).

AB  - Indigenous breeds of pigs are adapted to the specific areas in which they were created. In terms of scientific substantiation, their production potential and the products
obtained from them are, as in the case of Moravka pig, practically untapped. The main
objective of the present chapter is to present history and current status of this breed,
breeding area, its performance, production systems and main products from this local
breed of pigs. Reproductive traits were estimated by means of sow age at first farrowing,
litter size, weaning weight, duration of lactation and length of the farrowing interval.
Growth performance was estimated by means of average daily gain and average daily
feed intake in the early, middle, late and overall fattening stage. Carcass performance
was evaluated by means of slaughter weight, hot carcass weight, carcass yield, lean meat
content, loin eye area, the back fat thickness at the level of the last rib and withers and
the back fat and muscle thickness above the gluteus medius muscle. Meat quality traits of
the longissimus muscle were evaluated by means of pH at 45 min and 24 h after slaughter, objective colour (CIE L*, a* b*), intra muscular fat content and fatty acid content of
intramuscular fat.

AB  - Autochthonous pig breed is adapted to the specific local environment, fed with
various locally available feedstuffs and well adapted to extensive conditions of housing. Their genes represent safety in the production of food in future times, in which
the greater importance will be attributed to the resistance and adaptability of the
breed. In terms of scientific substantiation, their performances and products are, as in
the case of Mangalitsa pig, practically untapped. Thus, the aim of the present chapter
is to present history and current status of Mangalitsa pig breed, its exterior phenotypic characteristics, geographical distribution, production management and main
products from this Serbian autochthonous breed of pigs, one of the local pig breeds
investigated in the project TREASURE. Moreover, a collection and review of available
literature data, available until August 2017, on reproductive and productive traits of
Mangalitsa pig breed were carried out. Mangalitsa is a late and extremely fatty pig
breed with low fertility, long suckling period and a very weak-slow growth. Although
studies on Mangalitsa pig are scarce, the current review gives the first insight into this
local pig breed.

AB  - Agro biodiversity or genetic resources for agriculture and food
is one of the most significant component of total biodiversity, and it encompasses
various animals, plants and micro-organisms that are necessary to maintain the key
functions of agro-ecosystems. According to the United Nations, the world
population has reached as much as 7.3 billion to date, with a forecast of 9.7 billion
in 2050 and 11 billion by the end of the century. Well-adapted and well-developed
livestock farming is an essential element of the agricultural production system,
especially important in difficult conditions when crop production in the agroecosystem cannot sustain and increase its productivity and adapt to changing
circumstances, and is crucial for the food security of the population. Preservation
and improvement of livestock farming, animal genetic diversity, preservation of
autochthonous and development of new breeds, preservation of genetically diverse
populations provide society with a greater range of options to meet the future
challenges in the development of agriculture. This paper gives review of the
condition of farm animals and autochthonous breeds: Podolian bovine, Busha,
domestic buffalo, domestic-mountain horse, Nonius, Balkan donkey, Mangalitsa,
Moravka, and Resavka pig, Pirot sheep, Bardoka, Krivovir sheep, Karakachan
sheep, Lipska sheep, Vlaška-Vitoroga sheep, Čokan Tsigai goat, Balkan goat,
Svrljig hen, Banat Naked Neck hen and Sombor Kaporka hen. Genetic resources in
animal husbandry represent all species, breeds and strains of farm animals and they
have economic, scientific and cultural significance for our country.

AB  - The interest in autochthonous meat products from local pig breeds managed in
comprehensive, sustainable breeding programs is expanding in Europe. Dry fermented sausages
in Serbia and other southern European countries are highly appreciated food specialties. It is,
therefore, desirable that study attempts to improve the quality of food and the security of
traditional, dry sausages will result in products that are of higher added value and have quality
standards that best meet the needs of contemporary customers. Meat and meat products from
traditional pig breeds usually have an excellent public and media reputation, and are often
regarded as better than the meat and meat products of conventionally raised pigs and crossbreed
pigs. Traditional, dry fermented sausages, with their characteristic chemical contents and sensory
properties, can be produced with suitable proportions of meat and backfat from the indigenous
Mangalitsa pig breed. These outcomes should hopefully encourage the sustainable breeding of
endangered Mangalitsa pigs, as there are market opportunities for kulen and sremska sausages.

AB  - Na teritoriji mačvanskog i braničevskog regiona praćene su reproduktivne osobine 1902 legla
kod šest genotipova svinja: dve čiste rase, Švedski Landras (ŠL), Veliki Jorkšir (VJ), kao i četiri
meleza nastala ukrštanejm ŠLxVJ, VJxŠL, Nemačkog Landrasa (NL) xVJ i VJx NL. Praćeni su
sledeći parametri: broj živorođene prasadi u leglu, broj mrtvorođene prasadi u leglu, broj odgajene prasadi po leglu, dužina trajanja laktacije (dani) i masa legla na zalučenju (kg). Sve krmače
su se nalazile na srednjim i velikim gazdinstvima (od 20 do 120 krmača). Najveći broj živorođene
prasadi su imale krmače genotipa VJ (12,39), kao i najveći broj odgajene prasadi po leglu (11,32),
dok je najveći broj mrtvorođene prasadi utvrđen kod krmača genotipa ŠLxVJ i NLxVJ (0,50).
Dužina laktacije je bila najveća kod genotipa VJ x ŠL (34 dana), dok su najveći masu legla imale
krmače genotipa VJ (93,42kg). Posmatrajući region kao faktor, utvrđeno je, da su svi ispitivani
parametri statistički značajno (P<0.01) varirali, izuzev mase legla na zalučenju. Braničevski region je imao bolje rezultate za parametre: broj živorođene prasadi, broj mrtvorođene prasadi, dok
je mačvanski region imao veći broj odgajene prasadi, kraće trajanje laktacije sa većom masom
legla na zalučenju. Testiranjem značajnosti utvrđeno je da je genotip statistički značajno (P<0.01)
uticao na sve ispitivane parametre osim na broj živorođene prasadi.
AB  - On the territory of the Mačva and Braničevo region, reproductive properties for 1902 litters were monitored in 6 pig genotypes: Swedish Landrace (SL), Large White (LW) and crosses - SL x LW, LW x SL, German Landrace (GL) x LW and LW x GL. The following parameters were observed: number of live-born piglets in the litter, number of stillborn piglets in the litter, number of piglets reared per litter, duration of lactation (days), and litter mass at weaning (kg). All sows were reared on medium size and large farms (from 20 to 120 sows). The highest number of live-born piglets was determined for LW genotype (12.39), as well as the highest number of piglets reared per litter (11.32), while the highest number of stillborn piglets was found in sows SL x LW and GL x LW (0.50). The lactation duration was the highest in genotype LW x SL (34 days), while the greatest mass of the litter was determined in sows of the LW genotype - 93.42kg. Observing the region as a factor, it was found that all investigated parameters vary statistically significant (P<0.01), except for the mass of the litter at weaning. The Braničevo region had better results for the following parameters: the number of live-born piglets, the number of stillborn piglets, while the Mačva region showed a higher number of reared piglets, a shorter lactation duration with a higher mass of litter at weaning. Reviewing the possibility of the substitution of antibiotics with probiotics in diet for weaned piglets

AB  - The  effects  of  the  use  of  antibiotics  and  probiotics  in  the  nutrition  of  weaned  piglets  were  examined.  The  trial  was  conducted  on  36  piglets  divided  into  two  groups  during  the  entire  investigation  period.  In  the  first  study  period,  a  feed  mixture  with  20%  protein  was  used,  while  in  the  second  period,  a  mixture  with  18%  protein.  The  first  group,  control,  was  fed  with  mixtures  containing antibiotics in the amount of 0.2%, while the experimental group was fed with  mixtures  containing  probiotic  in  the  concentration  of  0.03%.  The  obtained  results  showed  that  the  use  of  probiotics,  instead  of  antibiotics,  resulted  in  the  increase  of  gain  by  4.09%,  as  well  as  food  conversion  ratio  by  5.37%  during  the  entire research period, while the cost was reduced by 6.48% per kilogram of gain.

AB  - Fatty acids composition of m. longissimus dorsi (MLD) of Moravka pigs was analyzed considering also the effect of sex and body weight of pigs at slaughter. Pigs were reared in facilities with the openaire section and fed a complete feed mixtures adapted to the stage of growth (from 20-60 kg mixture I: 15.50% of crude protein (CP) and 12.95 MJ metabolisable energy (ME)/kg,; from 60-120 kg mixture II: 13.00% CP and 13.05 MJ ME/kg). The study included 21 pigs (12 castrated males and 9 females). Pigs were slaughtered at 339±30 days of age and 112.8±19.9 kg of live weight. MLD of Moravka pigs had the following fatty acids composition: 41.8 % saturated fatty acids (ΣSFA), 54.0% monounsaturated fatty acids (ΣMUFA) and 4.1% polyunsaturated fatty acids (ΣPUFA) resulting in value 0.10 for the ratio of polyunsaturated to saturated fatty acids (P/S). Fatty acids C16:0 and C18:0 represented the largest share of ΣSFA (61.7 and 34.3 %, respectively), C18:1 and C16:1 the largest share of ΣMUFA (90.1 and 7.1%, respectively), and C18:2 the largest share of ΣPUFA (93.5%). With regard to sex effect, castrated males exhibited higher content of saturated fatty acids C14:0 (1.42 vs. 1.26, P=0.046) and C18:0 (15.07 vs. 13.38, P=0.025) than females. Significant effect (P&lt;0.05) of body weight was observed on some fatty acids; thus 1 kg increase of slaughter weight was accompanied with 0.036% decrease of linoleic acid (C18:2n-6), 0.038% decrease of total content of polyunsaturated acids (ΣPUFA), 0.020% increase of palmitoleic acid (C16:1cis-9), 0.067% increase in total content of monounsaturated fatty acids (ΣMUFA), 0.003% increase of C17:0. Ratio P/S decreased by 0.001 unit per kg increase of slaughter weight. In agreement with their high relative content, a strong correlation (rP=0.79 and rP=0.77) was found between C16:0 and C18:0 and total content of saturated fatty acids (ΣSFA), between C16:1cis-9 and C18:1cis-9 and ΣMUFA (rP=0.80 and rP=0.98, p&lt;0.001), and between linoleic acid (C18:2n-6) and ΣPUFA (rP=0.99, p&lt;0.001).

AB  - The objective of this study was to determine carcass quality of fatteners of Swallow-belly Mangalitsa breed reared in  outdoor system. In m. longissimus dorsi (MLD) samples chemical composition, cholesterol content and fatty acids profile was determined. The study included 22 castrated males reared in the oak forest from the early spring to late autumn, with minimal corn harvest (approx. 0.5 kg per day). During the winter, the fatteners were kept in wooden stables and fed with cereals (corn and barley mixture in a ratio of 70:30, approx. 3 kg per day). The data was carried out by statistical package SAS 9.1.3 (SAS Inst. Inc., 2002-2003) and basic statistical parameters are showed (Mean±SD). At the end of fattening, the pigs were about one year old, and slaughtered at 92.0±16.7 kg live body weight. The average lean content in the carcasses was 35.9±2.8 %, while the content of intermuscular fat in MLD was 6.2±1.2 %. In the MLD samples average content of proteins, water, fat and ash were 20.7±0.5 %, 70.4±0.5 %, 7.7±0.5 % and 1.0±0.1 %, respectively. Average cholesterol content was 41.4±3.8 mg/100g. Shares of saturated fatty acids (ΣSFA) in MLD fat was 35.6±1.2 %, monounsaturated fatty acids (ΣMUFA) was 56.6±1.8 % and polyunsaturated fatty acids (ΣPUFA) was 6.9±1.2%. Within ΣSFA the most common was palmitic acid (C16:0, 24.7±0.6 %), wile within ΣMUFA it was oleic acid (C18:1c-9, 46.9±1.1 %) and within ΣPUFA it was linoleic acid (C18:2n-6, 5.6±1.0 %). ΣPUFA and ΣSFA ratio was 0.2±0.0, while omega-6 and omega-3 ratio was 25.1±5.6. Showed ratios are not desirable from the nutritional aspect of human diet.

AB  - Objective of this paper was to evaluate phenotypic variability of fertility traits of indigenous breeds of Mangalitsa (Swallow-Belly Strain Mangalitsa-SBSM), Moravka breed (M) and Resavka (R). Indigenous pig populations are usually constituted by a quite low number of active boars and sows. Their pedigree information is lacking or absent, complete phenotypic description is usually not available for most of these populations that are very well adapted to specific local agro-climatic environments. In controlled herds in period of four years, the average age at first farrowing (AFF) was 18.5 months with large variability of 5.9 months for Swallow belly Mangalitsa. Less AFF (14.3 months) and less variability (4.4 months), in relation to SBSM, determined for Moravka breed while for Resavka determined age of 14.7 months with at least variability for this trait from 4.4 months. The average number of piglets born alive (for a period of four years) of SBSM was the lowest from 4.37 to 4.81; in case of M and R, this value was significantly (P (lt) 0.001) higher (from 5.75 to 8.17 and for R breed 6.40 to 9.00). With average duration of suckling period (duration of lactation - DL) of 52.92 days in the first year for the breed SBSM with the lowest number of reared piglets (NRP=4.10) whereas the DL for M and R breeds was shorter (from 45.75 to 52.03 day) with a higher NRP (from 4.57 to 8.92 reared piglets).
AB  - Cilj ovog rada je bio da se utvrdi fenotipska varijabilnost osobina plodnosti autohtonih rasa mangulice (lasasta mangulica-SBSM), moravke (M) i resavke (R). Autohtone populacije svinja obično čini prilično mali broj aktivnih nerasta i krmača. Informacije o poreklu često nedostaju ili su nedostupne, kompletan fenotipski opis obično nije dostupan za većinu ovih populacija koje su vrlo dobro prilagođene specifičnim lokalnim agro-klimatskim uslovima. Kod kontrolisanih zapata, u periodu od četiri godine, prosečan uzrast pri prvom prašenju (AFF) iznosio je 18,5 meseci sa velikom varijacijom od 5,9 meseci kod lasaste mangulice. Indigenous pig populations are usually constituted by a quite low number of active boars and sows. Their pedigree information is lacking or absent, complete phenotypic description is usually not available for most of these populations that are very well adapted to specific local agro-climatic environments. In controlled herds in period of four years, the average age at first farrowing (AFF) was 18.5 months with large variability of 5.9 months for Swallow belly Mangalitsa. Less AFF (14.3 months) and less variability (4.4 months), in relation to SBSM, determined for Moravka breed while for Resavka determined age of 14.7 months with at least variability for this trait from 4.4 months. The average number of piglets born alive (for a period of four years) of SBSM was the lowest from 4.37 to 4.81; in case of M and R, this value was significantly (P (lt) 0.001) higher (from 5.75 to 8.17 and for R breed 6.40 to 9.00). Autohtone populacije svinja obično čini prilično mali broj aktivnih nerasta i krmača. Informacije o poreklu često nedostaju ili su nedostupne, kompletan fenotipski opis obično nije dostupan za većinu ovih populacija koje su vrlo dobro prilagođene specifičnim lokalnim agro-klimatskim uslovima. Kod kontrolisanih zapata, u periodu od četiri godine, prosečan uzrast pri prvom prašenju (AFF) iznosio je 18,5 meseci sa velikom varijacijom od 5,9 meseci kod lasaste mangulice. AB  - Objective of this paper was to evalutte phenotypic variability of carcass side and pork quality traits of fatteners (male castrated and female heads). Investigation included 12 pigs per group of Mangalitsa (Genotype 1), Moravka (Genotype 2), cross-breed Mangalitsa with Moravka (Genotype 3) and cross-breed Moravka with Duroc boar (Genotype 4). Results show that Mangalitsa had lower daily gain (268 g) than other genotypes (p (lt) 0.001). The greatest difference for fat thickness was determined between Genotype 1 and Genotype 4. As expected, the thinnest fat and maximum value for gain and depth of Musculus longissimus (ML) had the Genotype 4. The highest value for the ML surface was found in Genotype 4(47.52 cm(2)) whereas for the same trait in Mangalitsa the lowest value was observed (24.16 cm(2)). Mangalitsa had significantly lower L*, a* and b* values of ML compared with all other groups (p (lt) 0.001). Considering the low production performance of indigenous pig breeds, crossbreeding with the Duroc breed will contribute a improvement of growth and carcass traits.

Fertility of boars: What is important to know

AB  - The most important part in reproductive management is the control of boar fertility. A common division of fertility traits is on the: in vitro (sperm traits) and in vivo (return rate, farrowing rate and litter size traits) fertility. In many studies were found differences between breed in the both groups of fertility traits. Variability of sperm traits of boars during the reproductive exploitation is influenced by various genetic (boar, breed) and paragenetic factors/effects (age, season, intensity of use). Good libido is desirable characteristics in boars, but the knowledge of the correlation of libido and boar fertility traits are limited. Also, there is no standardised procedure or methods for the estimation of libido of the boars. The permanent ranking of boars according to the reproductive efficiency should be performing. Good reproductive management implies the timely identification of boars with the low fertility (or close to the average).
AB  - Najvažniji segment u reproduktivnom menadžmentu je kontrola plodnosti nerasta. Uobičajena je podela osobina plodnosti na: in vitro (osobine sperme) i in vivo (procenat povađanja, procenat prašenja i osobine veličine legla) plodnost. Mnoga istraživanja pokazala su razlike između rasa u obe grupe osobina plodnosti. Varijabilnost osobina sperme nerasta tokom iskorišćavanja pod uticajem je različitih genetskih (nerast, rasa) i paragenetskih (starost, sezona, intenzitet korišćenja) faktora. Dobar libido je poželjna karakteristika nerasta, ali saznanja o povezanosti libida i plodnosti nerasta su ograničena. Takođe ne postoji standardizovana procedura ili metod za ocenu libida nerasta. Neophodno je stalno rangiranje nerasta na osnovu reproduktivne efikasnosti. Dobar reproduktivni menadžment podrazumeva pravovremenu identifikaciju nerasta sa niskom plodnošću (ili blizu proseka).

AB  - Production  of  traditional  meat  products,  characterized  by  very  good  organoleptic  properties  demands  specific  raw  material  which  is  meat  from  pigs  with  slaughter  weight  120  kg,  intramuscular  fat  content  higher  then  3%  and  bred  by  extensive  system.  Some  of  breeds  which  can  fulfil  this  requirements  are  native  breeds  likeMangalitza, Moravka, Złotnicka Spotted, Złotnicka White and Pulawska  pigs.  Aim  of  this  study  was  analysis  of  raw  meat  from  Mangalitza,  Moravka, Złotnicka Spotted, Złotnicka White and Pulawska pigs –   quality of meat and  its  technological  values  were  evaluated.  Meat  from  analysed  pigs  had  proper  chemical  composition,  favourable  n3/n6  fatty  acids  profile,  low  drip  loss,  proper  pH.  The  composition  of  loin  of:  Puławska,  Złotnicka,  Mangalica  and  Moravka races  was  similar  in  protein,  ash  and  carbohydrates  contents.  The  content  of  intramusular fat in loins of examined races ranged from 3.0% (Złotnicka White) to 5,1%  (Moravka).  In  this  study  there  was  confirmed  good  meat  quality  and  its  usefulness for production of traditional products.
AB  - Proizvodnja tradicionalnih proizvoda  od  mesa,  koje  karakterišu  vrlo  dobre  organoleptičke osobine, zahteva specifičnu sirovinu tj. meso od svinja težine na klanju od 120 kg, intramuskularnim sadržajem masti većim od 3% i uzgajanih u ekstenzivnom  sistemu.  Neke  od  rasa  koje  mogu  ispuniti  ove  zahteve su domaće rase kao što su mangulica,  moravka,  zlotnička šarena, zlotnička bela i pulavska svinja.  Cilj  ove  studije  bila  je  analiza  sirovog  mesa  svinja  rase  mangulica,  moravka,  zlotnička  šarena,  zlotnička  bela  i  pulavska -  kvalitet  mesa  i  njegove  tehnološke  vrednosti.  Meso  od  analiziranih  svinja  imalo  je  adekvatan  hemijski  sastav, povoljan profil n3/n6 masnih kiselina, nizak kalo, odgovarajući pH. Sastav slabine pułavske svinje, złotničke svinje, mangulice i moravke je sličan u sadržaju proteina,  pepela  i  ugljenih  hidrata.  Sadržaj  intramuslularne  masti  u  slabinama  ispitanih rasa varira od 3,0% (zlotnička bela) do 5,1% (moravka). U ovoj studiji potvrdjen  je  dobar  kvalitet  mesa  i  njegova  korisnost  za  proizvodnju  tradicionalnih  proizvoda.

Sensory properties and fatty acids profiles of fermented dry sausages made of pork meat from various breeds

AB  - In this study, the parallel examinations on fatty acid profiles and sensory properties of fermented dry sausages are presented. Three types of kulen and sremska sausages were made, which varied depending on the percentage of meat and fat derived from different pig breeds: autochthonous (Swallow-Belly Mangalitsa and Moravka) and commercial (Swedish Landrace). In sausages made from meat of commercial pig breed, the highest cholesterol content was detected. However, sausage made from the Mangalitsa pork meat contained higher levels of monounsaturated fatty acid (MUFA) and unsaturated fatty acid (USFA), and lower saturated fatty acid levels (SFA). The level of polyunsaturated (PUFA) in sausage made of Landrace pork meat was significantly higher than levels in other types. These differences between fatty acids were mostly deriving by higher total n-6 PUFA content. In a sausage made of Mangulitsa meat, the values of atherogenic (IA) and thrombogenic (IT) health lipid indexes are lower. Kulen and sremska sausages made from the Mangalitsa pork meat was superior in terms of colour, odour, taste, after taste and overall acceptability. This study demonstrate that pig breed have an effect on the chemical content, fatty acids profiles and sensory properties of dry fermented sausages.

Correlation of litter size traits

AB  - Heredity and correlation of litter size traits were observed in 3693 litters, i.e. in 1622 daughters of two genotypes Swedish Landrace genotype - SL; and F1 ♀ SLxLW. The study included daughters (minimum ten daughters per sire) of 24 sires. Heritability estimates for the total number of piglets per litter in the first, the first two parities, and for all three parities was 0.174; 0.167 and 0.135. Heritability estimates for the number of piglets born alive were 0.181; 0.160 and 0.121, and for the weight of litter at birth 0.166; 0.174 and 0.150. On the other hand, very low heritability was determined for the number of weaned piglets, litter weight of piglets reared, individual weight of born and reared piglets, i.e. for the traits that are under greater influence of the environment (from 0.004 to 0.037). Phenotypic and genetic correlations ranged from weak to complete (rp = 0.021 to rp = 0.973 and rg=0.188 to rg=0.999, respectively). Analysis of the significance of correlations showed that the genetic correlations were statistically highly significant (P  (lt) 0.01).
AB  - Naslednost i međusobna povezanost osobina veličine legla praćene su za 3693 legla, odnosno kod 1622 kćeri dva genotipa švedski landras - ŠL; i F1 ♀ŠLxVJ. Ispitivanjem su obuhvaćene kćeri (minimalno deset kćeri po ocu) od 24 oca. Heritabiliteti za ukupan broj prasadi u leglu u prvom, prvom i drugom i za sva tri prašenja iznosio je 0,174; 0,167 i 0,135. Za broj živorođene prasadi vrednosi heritabiliteta su iznosile 0,181; 0,160 i 0,121, dok su za masu legla pri rođenju vrednosti 0,166; 0,174 i 0,150. Sa druge strane utvrđen je jako slab heritabilitet za broj odgajene prasadi, masu legla odgajene prasadi, individualnu masu rođene i odgajene prasadi odnosno za ispitivane osobine koje su pod većim uticajem okoline (od 0,004 do 0,037). Fenotipske i genetske korelacije kretale su se od slabih do potpunih (rp=0,021 to rp=0,973 odnosno rg=0,188 to rg=0,999). Testiranje značajnosti korelacija pokazalo je da su genetske bile statistički visoko značajne (P (lt) 0,01).

Differences in meat colour between free-range Swallow Belly Mangalitsa and commercially reared Swedish Landrace pigs during 6 days of vacuum storage

AB  - The influence of storage on meat colour differences between free-range Swallow Belly Mangalitsa (MA, n = 19) and commercially reared Swedish Landrace (SL, n = 17) pigs, are investigated in the present study. Proximate composition analyses were done on fresh samples of M. longissimus thoracis (LT) and M. gluteus medius (GM), while pH values and colour quality attributes were determined on fresh cuts of the muscles (day 1) and after 3 and 6 days of vacuum storage at 4 +/- 1 degrees C. MA pork had a significantly higher share of intramuscular fat, a darker colour, a higher deoxymyoglobin (Mb) content and oxy / met (oxymyoglobin / metmyoglobin) ratio, higher pH(24h) values and a slower pH decline compared to the control SL group (P  (lt)  0.05). Greater changes in myoglobin forms during storage were observed in MA pork, which were reflected in a significant decrease in the content of Mb and an increase in the oxy / met ratio (P  (lt)  0.05). After 6 days of vacuum storage, higher pH(6d) values, a lower metmyoglobin (MetMb) content and a higher oxy / met ratio of MA pork lead to the conclusion that aged meat from free-range Swallow Belly Mangalitsa pigs had better colour quality compared to Swedish Landrace pigs.
