EATING QUALITY OF BEEF MEAT

AB  - When we talk about the edible quality of beef, the habits of a particular population should first be taken into account. One of the most important traits of beef for consumers is "eating quality". It is difficult to generally define the characteristic "eating quality" because it depends on many factors. These are primarily the factors that affect the traditions and habits of a population of consumers who prepare and consume beef in a certain way. Some consumers prefer meat rich in fat and meat of older animals, while others are quite the opposite which in turn depends on the habits and methods of preparation. The manner of culinary processing is different in a way that particular population of consumers traditionally thermally process beef by cooking, baking, grilling or prefer raw fermented processed meat. The process of globalization has an impact on the harmonization of the criteria for eating quality. World restaurants that are present on the planet, such as McDonald's, Kentucky Fried Chicken, followed by Chinese, Italian, Japanese, Muslim and other restaurants have played major role in this process, especially in the younger population of consumers. The paper presents the most important criteria of beef meat eating quality such as colour, tenderness, softness and flavour of meat. Also analyzed are the most important pre-mortem and postmortem factors that affect the eating quality of meat. These are primarily factors such as the procedure of transportation, "stress syndrome", method of cooling - "cold shortening".

AB  - The study presents the review of the results and impact of crossing of Simmental breed with French fattening breeds on slaughter properties of meat and meat quality. The investigation of technological properties and sensory characteristics was conducted on a MLD sample of the region of 10th to 12th vertebra. Statistical and mathematical analysis was performed using the method of  Least Squares mixed model with fixed effects (LS - Least Squares).
The obtained results showed significant deviations of carcass weight and the amount of bones in carcass sides (P <0.05) from the average. In crosses of F1 generation obtained by crossing of Simmental cows with Limousine bulls higher meat yield by 11.5 kg was realized compared to the general average, and by 30.7 kg higher meat yield than in Simmental cattle. Highly significant deviation from the general average (P<0.01) was observed in slaughter yield (dressing percentage) and quantity of meat and fat in the carcass sides. Cross-section of MLD was the largest in meat of cattle (Simmental x Charolais). By using the method of sensory evaluation results were established for the important parameters of quality, softness/tenderness ("firmness" or texture) and succulence ("drieness") of cooked or roasted meat (P<0.01).

AB  - The breeding objective for the Simmental breed of cattle is to achieve maximum genetic values for economically important traits, in line with the economic effects of genetic improvement, which this breed has achieved in developed countries.
The present study included 302 Simmental cows selected as bull dams on the territory of the Republic of Serbia in the course of one year. The impacts of paragenetic factors and lactation on production traits (milk yield and fertility) were examined. Order of lactation influenced highly significant deviations (P<0.01) in milk yield, milk fat content, milk fat yield and 4% FCM from the general average, as well as slight variations in the length of gestation and lactation, calving interval and service period, that were not statistically significant (P>0.05).
Simmental bull dams included in the present study, in the lactation period of 311.45 days, have realized milk yield of 5754.49 kg with 3.98% and 230.24 kg of milk fat and 5755.47 kg of 4% FCM. Average duration of gestation of tested heads was 286.31 days, the service period 110.37 days, and calving interval 398.44 days.
Overall comprehension and understanding of a number of paragenetic factors and their interactions on specific production characteristics can have impact on improvement of  milk yield and fertility in cows.

AB  - Definition, implementation, analysis of relevance and development of standards of animal welfare on cattle farms have become very important issues in the late 20th and early 21 century. Today, the most widely accepted definition of welfare is that it is the condition of an animal as a response to its attempts to cope with the effects of the environment. Depending on the type, duration and intensity of action of stimuli and the condition of the animal this struggle can be successfully or unsuccessfully completed in which case the animal welfare is endangered. But how do you assess the welfare as satisfactory and when not? In declaration of welfare as a scientific field, the turning point was the observation of its measurable character or the fact that as a result of the reaction to the effects of the stimulus in the organism of the animal changes occur at the physical, physiological, behavioural and emotional level that can be measured. Traits mentioned belong to output or animal-based welfare indicators which have a primary role in the modern methods of assessment. Unlike them, input indicators relate to information resources (resource - based) and applied management (management - based) and are important as additional information in the evaluation. Problems and the importance of selecting indicators in the assessment of the quality of welfare are still present but the practical implementation of a wide variety of assessment methodologies over time should enable better perception, analysis and even synthesis of the most relevant indicators and targets for evaluation of the different methods. This paper presents an overview of the selection, implementation and use of indicators to assess the welfare of dairy cows with a special emphasis on two current methodologies.

AB  - It is well known that selenium has positive effect on the reproductive tract either in female or male individuals,
but cytology and biochemistry are not well elucidated. In this paper cytologically and microbiologically is shown that
bacteria Bacillus cereus and selenium have large positive and synergistic influence on maturation of oocytes in vitro.
This is caused by the bactericide effect on coliform bacteria which are abundant in the digestive tract. Taking account
that anus and vagina are often nearby each other and that even sterility can be caused by coliform bacteria in the upper
parts of the female reproductive tract, we found microbiologically and cytologically in oocyte in the presence of
coliform bacteria, and Bacillus cereus and selenium, that number of coliform bacteria decreases, and cytologically
oocytes cultured in such medium in vitro have more vitality than in culture medium without at least selenium supplement.
These investigations should be continued with the aim of optimization of conditions for maturation of oocytes
and fertilization in vitro for embryo transfer of domestic animals as well as model for in vivo reproduction.

abstract = "It is well known that selenium has positive effect on the reproductive tract either in female or male individuals,
but cytology and biochemistry are not well elucidated. In this paper cytologically and microbiologically is shown that
bacteria Bacillus cereus and selenium have large positive and synergistic influence on maturation of oocytes in vitro.
This is caused by the bactericide effect on coliform bacteria which are abundant in the digestive tract. Taking account
that anus and vagina are often nearby each other and that even sterility can be caused by coliform bacteria in the upper
parts of the female reproductive tract, we found microbiologically and cytologically in oocyte in the presence of
coliform bacteria, and Bacillus cereus and selenium, that number of coliform bacteria decreases, and cytologically
oocytes cultured in such medium in vitro have more vitality than in culture medium without at least selenium supplement.
These investigations should be continued with the aim of optimization of conditions for maturation of oocytes
and fertilization in vitro for embryo transfer of domestic animals as well as model for in vivo reproduction.",

AB  - Improvement of production capacity of cattle in terms of increasing the production of milk, milk fat and number of calves, greatly depends on phenotype and genotype variability, heritability and correlation between desirable traits, as well as on the production level of the cattle population. Heritability, as a value expressing and measuring average additive gene effect, is one of the major characteristic of quantitative traits from the point of view of creating genetically high-value cattle populations. Knowledge of the heritability is necessary in the estimation of the beeeding value of cattle and has significant impact on the selection of breeding method. Genetic correlations are very important in indirect selection where changes in one trait are induced through selection of other traits between which a genetic correlation exists. Genetic correlations can be determined in all cases where heritability coefficient can be calculated. This research included 3.461 first calving Simmental cows under control, with lactation concluded within one year. All first-calvers were reared on individual farms in the territory of Republic of Serbia. In this study, heritability and genetic correlations between the the following milk and fertility traits were investigated: duration of lactation (days)- DL, milk yield in standard lactation (kg)- MY, milk fat content in standard lactation (%)- MFC, milk fat yield in standard lactation (kg)- MFY, yield of 4% FCM in standard lactation (kg)- 4%FCM, age at first calving (days)- AC and duration of service period (days)- DSP.

AB  - This paper presents the results of a study on the effects of crossing domestic Simmental with French fattening breeds, Charolais and Limousin, on carcass and meat quality. The quality of carcasses from domestic Simmental cattle and its crosses (N = 30) was analysed by total dissection for the proportion of retail cuts in the carcass and carcass tissues. Traits of meat sensory and technological quality were investigated using standard methods on a total of 96 carcasses. The results showed that crossing did not have a significant effect on the proportion of retail cuts except the proportion of tenderloin steak, which was significantly higher (P (lt) 0.01) in crosses with Charolais (1.87%) and Limousin (1.85%) compared to the domestic Simmental breed (1.38%). However, highly significant differences (P (lt) 0.01) were established for the level of tissue content in the whole carcass. The highest proportion of muscle tissue (81.5%) was determined in carcasses obtained from Limousin crosses, whereas the highest content of bone (16.45%) and fat tissue (5.26%) was recorded in carcasses of domestic Simmentals. Crossing had positive effects on the sensory quality of meat except for marbling, which scored very low in the crosses. In general, comparison of the parameters of sensory and technological quality of meat from the studied genotypes showed that the most desirable quality properties of the meat were obtained from crosses of domestic Simmental and Limousin breeds.

AB  - Group of secondary traits such as health, longevity, type and milkability represents some of very important factors for successful milk production. These traits have been given great importance in recent years. In order to realize productive life of dairy cows as long and successful as possible, special attention should be directed to traits of type and body constitution. Objective of the research was to establish heritability coefficients for 14 type traits of first calving Black and White cows, effect of genetic and paragenetic factors (bull sires, farm, year and season of calving, age at scoring and share of Holstein-Friesian [HF] genes) on type traits, so that these scores could be included in calculation of breeding value of the animal. Also, average values of milk traits have been established: milk yield and yield of 4% fat corrected milk (FCM), content and quantity of milk fat. Evaluation was performed on a sample of 2 976 first calving Black and White cows. Evaluated cows were reared on 7 farms of the Agricultural Corporation Belgrade in Serbia. Analysis of discontinuous and continuous influences was done using the method of least squares. Investigation indicated that the value of linear type evaluation should be included in the total evaluation of the breeding value and in this way complete insight into genetic supremacy, especially of breeding bulls, would be obtained. Use of bull semen of proven supremacy in transmission of genes desirable from the aspect of body constitution, in the process of artificial insemination, would lead faster to production herds with animals which are uniform in type, of good conformation and longevity, which is of special significance in conditions of intensive rearing of dairy cattle.

Variability of age at first calving and service period of first calving Simmental cows

AB  - Cattle reproduction is the most important phase of production since in this phase heads of cattle are provided for renewal of the herd, production of milk and meat. In this paper the variability of age at calving and duration of service period was investigated according to year and season of calving on 3.461 first calving Simmental cows housed on farms of individual agricultural producers in Serbia. For the purpose of precise determination of the effects of different paragenetic factors all first calving cows included in this research were divided according to year of calving in 3 and to season of start of lactation in 4 groups. By method of least squares average service period of 115,19 days was established and age at first calving of 795,53 days. Year and season of calving had statistically significant effect (P (lt) 0,01) on age at first calving and duration of service period. Service period is one of the major fertility traits. Optimal duration of service period is 90 days, during which period involution of genital organs is fully completed and they are ready for next fertilization. One of the conclusions related to traits age of heifers at first fertilization and at calving is that these traits are more technological characteristics since they depend on nutrition level, herd renewal requirements and breeding goals.
AB  - Oblast reprodukcije goveda je najznačajnija faza proizvodnje jer se u toj fazi obezbeđuju grla za remont stada, proizvodnju mleka i tov, odnosno proizvodnju mesa. Ovim istraživanjem je ispitana varijabilnost uzrasta pri telenju i trajanja servis perioda prema godini i sezoni telenja kod 3.461 kontrolisane prvotelke simentalske rase na imanjima individualnih poljoprivrednih proizvođača na području Republike Srbije. Primenom metoda najmanjih kvadrata ustanovljen je prosečan servis period od 115,19 dana i uzrast pri prvom telenju od 795,53 dana. Godina i sezona telenja su statistički visoko značajno uticali (P (lt) 0,01) na uzrast pri prvom telenju i dužinu servis perioda.

AB  - Investigation included 292 Simmental cows selected as bull-dams on the territory of the Republic of Serbia in year 2002. For all investigated traits main variation-statistical parameters were calculated: arithmetic mean value, standard deviation, variation coefficients, standard error and variation interval. Average values of evaluation of the type of Simmental bull-dams were following: for type (frame) 7,89, muscle development 7,78, form (appearance) 7,79 and for udder 7,64. Linear evaluation values were above the average determined for Simmental population under control, which justifies the conclusion that bull-dams represent the elite heads of main herd. Visual evaluation and recognition of milk characteristics of cows are preliminary indicators of milk production, and partially also of longevity and reproductive ability of head of cattle, which is very important from the aspect of economical efficiency of milk production.
AB  - Cilj ovih istraživanja je bio da se na imanjima individualnih poljoprivrednih proizvođača primenom linearnog metoda ocenjivanja krava izračunaju osnovne vrednosti tipa grla. Istraživanjem je obuhvaćeno 292 krave simentalske rase odabrane u kategoriju bikovskih majki na području Republike Srbije u toku 2002. godine. Ispitivanja su uključila sledeće linearne ocene: tip ili okvir, muskuloznost, formu ili izgled i vime. Za sve ispitivane osobine izračunati su osnovni varijaciono-statistički parametri: aritmetička sredina, standardna devijacija, koeficijenti varijacije, standardna greška i interval varijacije. Prosečne vrednosti ocene tipa bikovskih majki simentalske rase iznosile su za okvir 7,89, muskuloznost 7,78, formu 7,79 i za vime 7,64.

AB  - U cilju utvrđivanja sadržaja tkiva u maloprodajnim delovima junećeg trupa, obavljena je disekcija 30 polutki prosečne mase 169 kg. Prosečni udeo mesa u delovima trupa I kategorije (but) iznosio je oko 86%, u delovima trupe II kategorije (slabine, leđa, plećka) oko 78%, a u delovima trupa III kategorije (vrat, podplećka, podlaktica, grudi, rebra, trbušina, kolenica) oko 73%. Udeo kostiju u delovima trupa I kategorije bio je oko 11%, II kategorije oko 18%, a III kategorije oko 20%. Udeo loja u delovima trupa I kategorije iznosio je oko 2,0%, II kategorije oko 3,5%, a III kategorije oko 5,5%. Prosečni udeo vezivnog tkiva u delovima trupa I kategorije iznosi oko 0,3%, II kategorije oko 0,7% i III kategorije oko 1,5%. .

AB  - Objective of this paper was to investigate the effects of application of preparation YEASTURE composed of live yeast cultures selected from three strains Saccharomyces cerevisisiae in combination with probiotic bacteria and enzymes (Lactobacillus casei, Streptococcus faecium, Aspergillus oryzae, Lactobacillus acidophilus, 1,3-b and 1,6 D-Glucan, hemicellulase, Protease, cellulase, Alpha amylase) whish have the ability to modify the fermentation in rumen stimulating the development of ruminal bacteria and increasing the fiber digestion. Application of Yeasture started in the stage of high gravidity (15 days prior to calving) and lasted until 60th day of lactation. Based on performed research i.e. in improved digestion of fiber from roughage used in the diet (alalfa hay, maize silage and ensiled sugar beet pulp), increased the quantity and quality of the milk and at the same time improved the health condition of cows’ udder which was concluded based on reduced somatic cell count, it can be recommended the uses of preparation Yeasture in diets for high yielding cows rations.
AB  - U radu su predstavljeni efekti primene preparata YEASTURE u obrocima visokomlečnih krava i njegov uticaj na količinu i kvalitet mleka. Uključivanje ovog preparata u obroke imalo je cilj da prevaziđe brojne probleme koji prate visoku proizvodnju mleka a koji se generiraju već u periodu zasušenja. Ovaj preparat sastoji se od živih ćelija kvasaca selekcionisanih od tri soja Saccharomyces cerevisisiae, u kombinaciji sa probiotskim bakterijama i enzimima (Lactobacillus casei, Streptococcus faecium, Aspergillus oryzae, Lactobacillus acidophilus, 1,3- b i 1,6 D-Glucan, hemicellulase, Protease, cellulase, Alpha amylase).Efekti su ispitani na 60 Holštajn-frizijskih krava koje su dobijale 10 g preparata dnevno u periodu 15 dana pre telenja pa do 60-tog dana laktacije. Njegova aplikacija uticala je na poboljšanje varenja suve materije iz kabastih hraniva čime može da se objasni i povećanje ne samo količine mleka već i poboljšanje njegovog kvaliteta. Jednovremeno došlo je do smanjivanja broja somatskih ćelija što ukazuje i na popravljanje zdravstvenog stanja vimena krava.

Technological improvement of the quality of beef from the aspect of transport of young cattle to slaughtering

AB  - Results of author's own research as well as results obtained by other researchers are presented in this paper and relate to the effect of duration of transport on demonstration of stress syndrome in young cattle and on quality of meat. Stress syndrome in young cattle is caused by the stressor affecting the organism and bringing it into the state of stress. As consequence of the stress, prior to slaughtering, is occurrence of DFD syndrome. Such meat is characterized by special traits (Dark, Firm, Dry) which is the reason why it is called DFD meat. Until recently, research in the field of production of young cattle for slaughtering focused only on nutrition, reproduction and pathology issues, and reactions of animals to changes in their environment weren't much studied. Therefore, EU has passed set of directives and regulations referring to animal transport conditions. Significance of the application of mentioned directives and regulations is in providing minimum demands relating to welfare of animals and in the same way reduce to minimum stress factors which are especially harmful in beef production. Results of our investigation of pH24 M. longissimus dorsi in young bulls which were transported 150 km show that approximately one quarter (28%) of investigated muscles had pH24 6,0 or above this value. Contrary to this, values of pH24 M. longissimus dorsi in young bulls transported only 15 km were within allowed limits, meat had no DFD traits.
AB  - U radu su prikazani sopstveni rezultati i rezultati istraživanja drugih autora o uticaju dužine transporta na ispoljavanje stres sindroma junadi, a samim tim i na kvalitet mesa. Stres sindrom junadi nastaje usled delovanja stresora na organizam koji ga dovodi u stanje stresa. Posledica stresa neposredno pre klanja, je nastanak DFD-sindroma. Ovakvo meso se odlikuje posebnim karakteristikama (Dark-tamno, Firm-čvrsto, Dry-suvo) po čemu je i dobilo ime DFD-meso. Do nedavno istraživanja u oblasti proizvodnje junadi za klanje bila su posvećena samo problemima ishrane, reprodukcije i patologije dok su reakcije životinja na promene okoline malo izučavane. Zbog toga je EU donela čitav niz regulativa i propisa koji se odnose na uslove transporta životinja. Značaj primene ovih propisa i regulativa EU je u obezbeđivanju minimalnih zahteva za dobrobit određene vrste životinja a samim tim minimiziranju stres faktora koji su naročito štetni u proizvodnji junećeg mesa.Rezultati naših ispitivanja pH24 M. longissimus dorsi mladih bikova koji su transportovani 150 km pokazali su da je oko jedne četvrtine (28%) ispitivanih mišića imalo pH24 6,0 ili iznad toga. Nasuprot tome, vrednosti pH24 M. longissimus dorsi mladih bikova koji su transportovani 15 km kretale su se u dozvoljenim granicama; meso nije manifestovalo DFD-simptome.

Contrary to this, values of pH24 M. longissimus dorsi in young bulls transported only 15 km were within allowed limits, meat had no DFD traits., U radu su prikazani sopstveni rezultati i rezultati istraživanja drugih autora o uticaju dužine transporta na ispoljavanje stres sindroma junadi, a samim tim i na kvalitet mesa. Stres sindrom junadi nastaje usled delovanja stresora na organizam koji ga dovodi u stanje stresa. Posledica stresa neposredno pre klanja, je nastanak DFD-sindroma. Ovakvo meso se odlikuje posebnim karakteristikama (Dark-tamno, Firm-čvrsto, Dry-suvo) po čemu je i dobilo ime DFD-meso. Do nedavno istraživanja u oblasti proizvodnje junadi za klanje bila su posvećena samo problemima ishrane, reprodukcije i patologije dok su reakcije životinja na promene okoline malo izučavane. Zbog toga je EU donela čitav niz regulativa i propisa koji se odnose na uslove transporta životinja. Značaj primene ovih propisa i regulativa EU je u obezbeđivanju minimalnih zahteva za dobrobit određene vrste životinja a samim tim minimiziranju stres faktora koji su naročito štetni u proizvodnji junećeg mesa.Rezultati naših ispitivanja pH24 M. longissimus dorsi mladih bikova koji su transportovani 150 km pokazali su da je oko jedne četvrtine (28%) ispitivanih mišića imalo pH24 6,0 ili iznad toga. Nasuprot tome, vrednosti pH24 M. longissimus dorsi mladih bikova koji su transportovani 15 km kretale su se u dozvoljenim granicama; meso nije manifestovalo DFD-simptome.",

AB  - Results of production traits obtained from first calving cows and evaluation of the breeding value of bull sires of Simmental breed in Serbia. Data was analyzed using the method of least squares and for evaluation of bulls' breeding value mixed model of random sire effect (BLUP method). Based on obtained results it was established in statistical analysis that breeding region had highly significantly affected (P (lt) 0.01) the deviation of production traits from the general average. Considerable deviation from the general average was caused by the year and season of calving (P (lt) 0.05), and interaction of breeding region and calving season contributed to high variation in yield of milk and milk fat (P (lt) 0.01).
AB  - U radu su prikazani rezultati koji se odnose na proizvodne osobine krava-prvotelki i ocena priplodne vrednosti bikova - očeva simentalske rase goveda u Srbiji. Podaci su analizirani metodom najmanjih kvadrata, a za ocenu priplodne vrednosti bikova korišćen je mešoviti model slučajnog uticaja oca (BLUP metod). Na osnovu rezultata dobijenih u statističkoj analizi ustanovljeno je da je odgajivačko područje visoko značajno (P (lt) 0.01) prouzrokovalo odstupanja proizvodnih osobina od opšteg proseka. Sistematski faktori okoline, odgajivačko područja, godina i sezona telenja su prouzrokovali visoko značajno (P (lt) 0,01) i značajno (P (lt) 0,05) odstupanje prinosa mleka i mlečne masti krava - prvotelki, a tako dobijeni rezultati ukazuju na opravdanost korišćenja linearnih metoda odnosno korekcije sistematskih faktora okoline. Korišćenjem mešovitog modela, slučajnog uticaja bika - oca na prinos mleka kćeri, kao i formiranjem ranga bikova na osnovu priplodne vrednosti, dobijeni su rezultati koji pokazuju da je bik pod rednim brojem 9 superioran u odnosu na ostale. Bik - otac broj 23 ima najnižu priplodnu vrednost za osobine prinosa mleka i mlečne masti. Na osnovu dobijenih rezultata može se ustanoviti da BLUP metod daje objektivnu ocenu priplodne vrednosti. Ovaj metod uvažava veliki broj sistematskih faktora okoline, uticaj različitog genetskog nivoa bikova i genetski trend te stoga doprinosi objektivnoj oceni priplodne vrednosti bikova.

AB  - Objective of our research was to determine the correlation between quantity of meat, fat and bones in carcass with same tissues in three rib cut and quantity of muscle tissue in carcass with surface of M. longissimus dorsi. Investigation was carried out on male fattening young bulls of Domestic Spotted breed of average weight prior to slaughtering of 503 kg, and by total dissection total quantity of muscle, fat and bone tissue in carcass was determined. Correlation between mass of muscle tissue in carcass and mass of muscle tissue in three rib cut of carcasses weighing in average 284 kg was r=O.69, which means strong and positive. Correlation coefficient between mass of fat and bone tissue in carcass and mass of fat and bone tissue in three rib cut for same group was r=0.65 for fat tissue and r=0.53 for bone tissue. Correlation between mass of muscle tissue in carcass of average mass of 284 kg and cross section surface of M. longissimus dorsi on cut of 11. rib was r=0.80.
AB  - Cilj naših istraživanja je bio da se ispita povezanost količine mesa, loja i kostiju u trupu sa istim tkivima u trorebarnom odresku i količine mišićnog tkiva u trupu sa površinom M. longissimus dorsi. Ispitivanje je sprovedeno na muškim tovnim junadima domaće šarene rase prosečne mase pre klanja 503 kg. a totalnom disekcijom je utvrđena ukupna količina mišićnog. masnog i koštanog tkiva u trupu. Povezanost između mase mišićnog tkiva u trupu i mase mišićnog tkiva u trorebarnom odresku trupova prosečne mase 284 kg je r=0.69, znači jaka i pozitivna. Koeficijent korelacije između mase masnog i koštanog tkiva u trupu i mase masnog, odnosno koštanog tkiva u trorebarnom odresku za istu grupu iznosio je r=0.65 za masno tkivo i r=0.53 za koštano tkivo. Povezanost mase mišićnog tkiva u trupu prosečne mase 284 kg sa površinom poprečnog preseka M. longissimus dorsi na preseku 11. rebra iznosila je r=0.80.

AB  - By applying the method of industrial crossing of Domestic spotted cattle of lower production performances with French fattening/meat breeds (Charolais and Limousine) young cattle is obtained with better fattening traits as well as traits of carcass and meat quality. Application of the method of industrial crossing of Domestic spotted cattle of lower production performances, beside significant increase of the quantity of high quality beef meat, would also have positive effect on the economical aspect of cattle production. Application of new technologies would result in production of meat of standard, special quality under brand name, which would realize higher price on the market.
AB  - Primenom metoda industrijskog ukrštanja domaće šarene rase nižih proizvodnih osobina sa francuskim tovnim rasama (šarole i limuzin) dobijaju se junad koja su ispoljila bolja svojstva tovnosti, kvaliteta trupa i kvaliteta mesa. Primena industrijskog ukrštanja domaće šarene rase nižih proizvodnih osobina, pored značajnog povećanja količine kvalitetnog junećeg mesa, utiče i na povećanje ekonomskog efekta govedarske proizvodnje. Primenom novih tehnologija proizvelo bi se meso garantovanog, posebnog kvaliteta koje bi na tržištu pod trgovačkim, zaštićenim imenom ostvarivalo veću cenu.

AB  - In order to investigate the habits and preferences of consumers of beef as well as their attitude towards the factors affecting the meat quality, 504 consumers of different sex, age, wealth status and profession were selected. Consumers were given a poll questionnaire consisting of questions referring to their habits regarding purchasing of meat and factors affecting the acceptance of meat as food stuff. Answers of participants in the poll were processed according to sex, profession, year of birth and income per household member. Majority of polled consumers answered that they eat more meat during winter season, and mainly liver of all giblets. Majority of participants in the poll is of opinion that meat consumption induces heart diseases, that meat represents source of "harmful" cholesterol and that animal diseases are transferred to humans by meat consumption.
AB  - U cilju ispitivanja navika potrošača pri kupovini junećeg mesa i mišljenja potrošača koji su faktori od uticaja na kvalitet mesa, odabrano je 504 potrošača različitog pola, godina rođenja, imovnog stanja i zanimanja. Potrošačima je podeljena anketa koja je sadržala pitanja o navikama pri kupovini mesa i faktorima koji utiču na prihvatljivost mesa kao prehrambenog proizvoda. Odgovori anketiranih potrošača obrađeni su po polu, zanimanju godini rođenja i prihodu po članu domaćinstva. Većina anketiranih potrošača odgovorila je da više jedu meso u hladnom periodu godine, od iznutrica najviše jedu jetru. Većina misli da konzumiranje mesa utiče na oboljenja srca, da je meso izvor "štetnog" holesterola i da se bolesti životinja konzumiranjem mesa prenose na ljude.

AB  - In order to investigate consumption of beef and consumer attitude towards beef as foodstuff, 504 consumers of different sex, age, financial status and profession were included in carried out poll. Consumers were given questionnaires containing questions about their habits relating to meat purchasing, also meat preparation methods, weekly consumption of meat and factors influencing the meat quality. Answers of polled consumers were processed according to sex, profession, age and income. Based on obtained results the following can be concluded: majority of polled male and female consumers consider meat to be very important in their nutrition; female consumers, students don't think of meat as very important in their nutrition; 48,7% of male consumers and 50,8% of female consumers use meat because of it's nutritious value; all polled consumers regardless of their age, sex, income or profession consume beef more than lamb meat; poled consumers mostly buy meat at the butcher's, however consumers of moderate financial status mostly purchase meat in the country; most frequent method of preparation is cooking, while male students mostly cook meat, female consumers mostly roast or grill meat; majority of polled consumers consider breed, sex and age of animal to be main factors influencing meat quality.
AB  - U cilju ispitivanja potrošnje junećeg mesa i odnosa potrošača prema junećem mesu kao prehrambenom proizvodu, odabrano je 504 potrošača različitog pola godina rođenja, imovnog stanja i zanimanja. Potrošačima je podeljena anketa koja je sadržala pitanja o navikama potrošača pri kupovini mesa, mestu kupovine i načinu pripreme mesa, nedeljnoj potrošnji i o faktorima od uticaja na kvalitet mesa. Odgovori anketiranih potrošača obrađeni su po polu, zanimanju, uzrastu i prihodu. Na osnovu rezultata obavljene ankete može se zaključiti sledeće: - većini anketiranih muških i ženskih potrošača meso igra važnu ulogu u ishrani; - ženskim potrošačima studentkinjama meso ne igra važnu ulogu u ishrani; - 48,7% muških potrošača i 50,8% ženskih potrošača koristi meso u svojoj ishrani zbog njegove hranljive vrednosti; - svi anketirani potrošači različitog pola godina rođenja, prihoda i zanimanja značajno više koriste juneće meso od jagnjećeg; - mesarnica je najčešće mesto kupovine mesa, a potrošači sa najnižim prihodom nabavljaju meso na selu; - najčešći način pripreme mesa je kuvanje, dok muški studenti kuvaju, a ženski najčešće peku na roštilju meso; - većina anketiranih potrošača smatra da su rasa, pol i starost faktori od uticaja na kvalitet mesa.

AB  - Realization of the programme of crossing of Domestic spotted cattle with meat cattle breeds in order to obtain cattle for export (live or as beef) has following production effects: 	- Intensifying of the fattening ability, 	- Improvement of the meat quality by crossing (crossbreds F1 generation), 	- Increased dressing percentage of the carcass, and 	- Realization of higher price (by10-15%) for 1 kg of body mass in export; 	- Reduced cost of feed per 1 kg of gain. 	Improvement of the quality of meat by application of this programme will be achieved in color, firmness, fineness of muscle fibers, marbling and flavor of meat. Majority of mentioned traits is significant in relation to quality as well as the price of 1 kg of meat for export. Dressing percentage of carcass of domestic spotted cattle is extremely low - 53-56%. With this programme higher by 3-4% dressing percentage will be achieved. Cattle obtained by crossing are expected to have an average dressing percentage of 59-60%. 	 Economical efficiency of the production of beef depends on realized daily and total gain of body mass, dressing percentage, quality of meat and cost of feed per 1 kg of gain. Farmers are very interested in realizing high gain with lower costs of feed (conversion) per 1 kg of gain, whereas slaughterhouses and processing plants define their interest in high dressing percentage and quality of meat, as well as export orientation, since in this way they are able to increase the price of meat by 10-15% per 1 kg of carcass sides. Results of carried out researches are beef of high quality for domestic and foreign market. Complete results of mentioned researches will contribute to considerable increase of yield of beef, carcass sides, meat sections of the highest quality, meat in chunks packaged according to moder standards. Obtained results - products will be placed on the market, presented in specialized journals and on numerous scientific meetings and symposia.

AB  - From the aspect of marketing objective of the research concerning the behavior of consumers is to reduce the risk of wrong business decisions and to improve marketing strategy. Gathering of information enables better knowledge of needs and motives of consumers while shopping with further objective to increase the sale of the product, in this case meat, and increase the profit. No attention was directed to the investigation of the consumer opinion and attitude towards lamb meat and consumer attitude towards lamb meat as food stuff. There are no such investigations at all. Since consumption of lamb meat in our country is very low (from 0,1 to 2kg per week, depending on the income of consumers), therefore we considered the investigation of the consumer attitude towards lamb meat justified. As a method we used poll that included consumers on the territory of Belgrade. Obtained results of the poll will be used as basis for broader consideration of mentioned issues and development of marketing strategy with objective to increase consumption of lamb meat.
AB  - Sa marketinškog stanovišta, svrha istraživanja ponašanja potrošača je u tome da se smanji rizik pogrešno donetih poslovnih odluka i unapredi marketing strategija. Pribavljene informacije omogućavaju bolje poznavanje potreba i motiva potrošača pri kupovini u cilju povećanja prodaje proizvoda, u ovom slučaju mesa i povećanja profita. Ispitivanjima mišljenja potošača o jagnjećem mesu i odnosa potrošača prema jagnjećem mesu kao prehrambenom proizvodu nije se uopšte poklanjala pažnja, odnosno praktično uopšte ih nije bilo. Kako je kod nas potrošnja jagnjećeg mesa na veoma niskom nivou (od 0,1 do 2 kg nedeljno, u zavisnosti od prihoda potrošača), smatrali smo opravdanim ispitivanje mišljenja potrošača o jagnjećem mesu. Kao metoda korišćena je anketa kojom su obuhvaćeni potrošači iz Beograda. Dobijeni rezultate ankete posluži će kao polazna osnova za šire razmatranje navedene problamatike i izradu marketing strategije za povećanje potrošnje jagnjećeg mesa.
