AB  - In the third decade of the 21st century, starting from 2020, leading breeding companies promise that their modern hybrids of laying hens will be genetically able to produce 500 eggs per hen till 100 weeks of age. This paper discuss some important questions about what we need to know and practice in the management, and especially in the feeding of these highly sophisticated, extremely
productive and very demanding birds to achieve that goal in near future. The management and nutrition strategies, needs and recommendations, dynamics of feeding during the day and during the production cycle are discussed. The maximum production results in line with genetic predisposition can be achieved by precision nutrition, as well as by maintaining and preserving the health of laying hens and the quality of egg shell with proper nutrients and specially formulated
diets, but first with closer cooperation between breeders, nutritionists and egg producers.

AB  - The aim of the study was to study the effect of the addition of different
concentrations of garlic to feed for broiler chickens on the quality of the carcass. The trial
was carried out on 800 chickens divided into 4 groups with 4 repetitions per group.
Chickens were fed ad libitum and the composition of the feed mixture differed only in the
amount of added garlic powder. In the control group (K) no garlic was added. Chickens in
the first (I) group consumed feed with the addition of 0.2% garlic powder, in the second
group (II) 0.4% was added while 0.6% of garlic was added in the third group (III). At the
end of the experiment, at the age of 42 days, the randomly selected 12 chickens (6 males
and 6 females) from each group were sacrificed in order to determine the carcass quality
traits. The results showed, that increasing the ratio of garlic significantly (p <0.01)
decreased the abdominal fat content.

The Attitudes of Table Egg Consumers in Serbia on the Welfare of Laying Hens

AB  - In order to examine the attitude of egg consumers about the poultry welfare and their willingness to spend more money to buy eggs produced in accordance with animal welfare principles, 529 consumers were surveyed in three regions of Serbia (Belgrade, region of Šumadija and Western Serbia and South and Eastern Serbia region). Through the survey questionnaire, consumers have stated how important the welfare of laying hens is to them and if they are willing to spend more money on eggs produced acording to principles of animal welfare. The answers of the surveyed consumers were analyzed by gender, age, education, number of children in the family and the environment in which they live. According to the results of the survey, it can be concluded that in Serbia, poultry welfare is moderately important to 28.17% of egg consumers and very important to 50.77% of consumers, while not at all or little to 21.13%, and that there are differences between individual regions. The willingness to pay more for eggs produced according to welfare principles was expressed by 78.53% of consumers, on average for all three regions. The analysis of data within the category of consumers for which the poultry welfare is very important, revealed that 54.15% are women and 44.02% are men, and that the welfare is more important for consumers with higher education (52.66%) compared to middle school (47.67%), also, for consumers in the 35-55 age group (55.60%) compared to younger and older respondents and those with three or more children in the family (52.94%) compared to families with fewer children. The survey results indicate that consumers in Serbia attribute more importance to the welfare of laying hens, and show their willingness to pay more for eggs produced in compliance with the welfare principles. In the coming period, the education focusing on the increase of consumer awareness of the importance of the welfare of laying hens and the connection with the quality of the product will be necessary.

AB  - The aim of this study was to compare the effect of two alternative rearing systems (floor and organic) on egg quality traits of New Hampshire laying hens in three different phases of the productive cycle (32, 48 and 72 weeks of age). Egg samples (15 eggs per group) were analysed for quality (egg weight, egg shape index, albumen height, Haugh unit, yolk colour) and chemical composition (dry matter, minerals, proteins and lipids). Egg weight, dry matter and protein content increased, while albumen height, Haugh unit and lipid content decreased with hen age (p≤0.05). Eggs from the floor rearing system had a higher shape index and lipid content compared to organic eggs (p≤0.05). Both factors and their interactions had a significant effect on yolk colour (p≤0.05).

AB  - Pulmonary hypertension syndrome or ascites is a complex problem in poultry production. This disease has multiple causes, including genetic factors (genotype, sex) and non-genetic factors (altitude, improper egg incubation, ambient conditions in the poultry house, diet, etc.). Results from numerous studies have shown that improper diet and its interaction with other factors are among major reasons for the incidence of ascites symptoms. The objective of this study was to highlight major nutritional aspects related to pulmonary hypertension syndrome in broiler chickens. Therefore, particular attention should be paid to the dietary levels of antioxidant compounds, some minerals, energy and protein, feed forms, type of diet, and feed supplementation with ingredients which reduce the incidence of ascites.

AB  - In this study, a total of 30 poultry (chicken and laying hens) feed samples collected from different poultry farms in Serbia in 2016 were tested for fungal and aflatoxin contamination. Using the plate count and standard mycological methods, total fungal counts and potentially toxigenic fungal genera were determined. Natural occurrence of aflatoxin B1 (AFB1) was detected by ELISA (enzyme-linked immune sorbent assay) method.
The total fungal count was in the range from 1 x 102 (2 log CFU g–1) to 1.83 x 105 CFU g–1 (5.26 log CFU g–1). The majority of the chicken feeds (78.57%) had the total fungal count in the ranged from 1 x 102 to 4.8 x 104 CFU g–1, whereas in 68.75% of the laying hens feeds it was ranged from 5.3 x 104 to 1.83 x 105 CFU g–1. In 21.43% of the chicken feeds fungal contamination reached the level above the regulation limits. Three potentially toxigenic fungal genera, Aspergillus, Fusarium, and Penicillium, have been identified. In the tested poultry feed samples, more samples contaminated with Aspergillus were determined compared to samples contaminated by Fusarium and Penicillium species. The AFB1 was detected in concentrations from 1.34 to 18.29 μg kg–1, with an average of 4.47 and 4.56 μg kg–1 in the chicken and laying hens feed samples, respectively. In 14.29% of the chicken feeds, the level of AFB1 was above the regulation limits.
The obtained results confirmed the importance of continuous mycological and mycotoxicological control of poultry feed, as well as need to improve risk assessments of such contaminants along the food chain.

Primenom metode razređenja i standardnih mikoloških metoda utvrđeni su ukupan broj gljiva i identifikovani su potencijalno toksigeni rodovi gljiva. Prirodna pojava aflatoksina B1 (AFB1) utvrđena je primenom biohemijske imunoadsorpcione metode (ELISA).

Najveći broj uzoraka hrane za piliće (78,57%) imao je ukupan broj gljiva u rangu od 1 x 102 do 4,8 x 104 CFU g–1, dok je 68,75% uzoraka hrane za nosilje imalo ukupan broj gljiva u rangu od 5,3 x 104 do 1,83 x 105 CFU g–1. U 21,43% hrane za piliće ustanovljen je nedozvoljen ukupan broj gljiva. Identifikovana su tri potencijalno toksigena roda gljiva Aspergillus, Fusarium i Penicillium. Najveći broj ispitivanih uzoraka hrane za živinu bio je kontaminiran Aspergillus vrstama, u odnosu na Fusarium i Penicillium vrste koje su kontaminirale manji broj uzoraka. abstract = "In this study, a total of 30 poultry (chicken and laying hens) feed samples collected from different poultry farms in Serbia in 2016 were tested for fungal and aflatoxin contamination. Using the plate count and standard mycological methods, total fungal counts and potentially toxigenic fungal genera were determined. The total fungal count was in the range from 1 x 102 (2 log CFU g–1) to 1.83 x 105 CFU g–1 (5.26 log CFU g–1). The majority of the chicken feeds (78.57%) had the total fungal count in the ranged from 1 x 102 to 4.8 x 104 CFU g–1, whereas in 68.75% of the laying hens feeds it was ranged from 5.3 x 104 to 1.83 x 105 CFU g–1. In 21.43% of the chicken feeds fungal contamination reached the level above the regulation limits. Three potentially toxigenic fungal genera, Aspergillus, Fusarium, and Penicillium, have been identified. In the tested poultry feed samples, more samples contaminated with Aspergillus were determined compared to samples contaminated by Fusarium and Penicillium species. The AFB1 was detected in concentrations from 1.34 to 18.29 μg kg–1, with an average of 4.47 and 4.56 μg kg–1 in the chicken and laying hens feed samples, respectively. In 14.29% of the chicken feeds, the level of AFB1 was above the regulation limits.

AB  - Field trials were set up in the Belgrade area (Serbia) in 2013 and 2014 to determine the effect of plant density on the natural incidence of potentially toxigenic fungi and the level of mycotoxins, aflatoxin B1 (AFB1), deoxynivalenol (DON) and fumonisins (FBs) in two Serbian maize hybrids of the FAO maturity group 700 (ZP 735 and NS Zenit). Three plant density treatments, namely, 55,000 plants ha−1 (PD1), 64,000 plants ha−1 (PD2) and 75,000 plants ha−1 (PD3), were evaluated. The incidence of identified potentially toxigenic fungi of the genera Aspergillus, Fusarium, and Penicillium and the FB level increased significantly (P ≤ 0.01) at PD3. The effect of year was also significant (P ≤ 0.01) on the incidence of toxigenic fungi, as all fungal species had a higher incidence in 2014 than in 2013, with the exception of Aspergillus spp. that showed a significantly higher incidence in 2013. Levels of all tested mycotoxins were higher in 2014 than in 2013. The higher incidence of Fusarium graminearum, Fusarium proliferatum, Fusarium subglutinans, Fusarium verticillioides and Penicillium spp. and higher levels of AFB1 and FBs were observed in the hybrid ZP 735, whereas the hybrid NS Zenit had a higher incidence of Aspergillus spp. The effect of hybrids was not significant on the incidence of F. subglutinans and the DON level. These results indicated that the highest investigated plant density increased the fungal incidence and the FB level, especially in 2014. Although the two hybrids originated from the same FAO group, they differed in their effects on some toxigenic fungi and mycotoxins. © 2018 Elsevier Ltd

Preferences of consumers from Serbia toward organic eggs

AB  - In order to examine consumers’ preferences toward eggs from organic production and their willingness to allocate more money for these eggs, 581 respondents were surveyed in three regions of Serbia (the Belgrade region, the Šumadija and the Western Serbia region, and the Southern and Eastern Serbia region). Through the survey questionnaire, respondents declared themselves whether they are buying organic eggs and how much money they are ready to allocate for this type of eggs. Answers from surveyed respondents who are buying organic eggs were analyzed by gender, age, status, education, monthly income and the region in which they are living. According to the survey results, it can be concluded that in Serbia, there is a very small number of consumers who are buying organic eggs (2.41%), and that all of them are located in the Belgrade region. Furthermore, only 8.34% of consumers were willing to pay 30% higher price for organic eggs, on average for all three regions. Analyzing data within the category of organic eggs consumers, the highest tendency for buying organic eggs was determined for female respondents (76.92%), those with the higher education level (61.54%), the employed respondents (92.31%), the respondents aged from 36 to 55 (61.52%) and the respondents with the highest monthly household income (46.15%). The results of the present study indicate that the percentage of consumers who buy organic eggs in Serbia is very small, it is present only in certain regions and the willingness to pay more for organic eggs is low.

AB  - Egg quality parameters of hybrid layers were analyzed by comparative testing of conventional cage and alternative housing systems: floor pen and mobile cages on the pasture. The analysis of the quality of eggs from the conventional cage and floor pen housing system was carried out at the age of 42 to 44 weeks, and from the conventional cage and the mobile cage on pasture, in the period from 51 to 53 weeks of age. Each trial was organized in 3 repetitions in the 3 seven-day periods and 30 eggs per repetition, i.e. 90 per housing system were analyzed. The quality of 360 eggs in total was analyzed. The initial egg quality was studied based on the properties of the external and internal quality of eggs and eggshell quality. In the conditions of the same genetic of laying hens, the parameters of the egg quality that were significantly affected by the housing system are the egg weight, certain properties of eggshell quality (cleanliness, colour and weight), the ratio of the albumen and yolk, and the yolk colour. Significantly higher egg weight and a lower albumen to egg yolk ratio were recorded in eggs from alternative housing systems compared to the conventional cage system. Eggs from the floor system had a darker and dirtier egg shell compared to the conventional cage system. The eggshell weight and the yolk colour were significantly higher in eggs from mobile cages.

AB  - This study evaluates the effect of protease-supplemented diets containing different crude protein levels, sex and length of the fattening period on the weight and percentage yield of primal cuts in Cobb 500 broilers. Chickens were fed maize-and-soybean-based diets. Fattening periods lasted 49 and 63 days. The results showed that the recommended crude protein reduction by 4% in diets
supplemented with 0.2% protease had no effect on the weight and percentage yield of primal cuts (P>0.05), while the effect of broiler sex and slaughter age on the studied carcass quality parameters was significant (P<0.05).

AB  - Abstract: The possibility for use of high light intensity in broiler production management to improve the health of broilers’ legs was examined in a study aiming to determine the effect of two levels of light intensity in different stocking densities of broiler chickens. The study was carried out on 1200 Ross 308 broilers according to a random block system with 6 treatments (2 x 3 factorial design) and 4 replicates per treatment. The examined light intensity levels of 150 lx (high light intensity-HLI) and 20 lx (low light intensity-LLI) were applied to 3 stocking densities of broilers: 10, 13 and 15 birds/m2 . Scoring of foot pad (FP) and hock burns (HB) was carried out on the 42nd day, on a sample of 240 broilers. Osteometric and biomechanical measurements on tibia were performed after slaughtering and primary processing, on a sample of 72 broilers. The high level intensity of light exerted no significant effect on the development and firmness of the tibia of broilers grown in the densities of 10, 13 and 15 birds/m2 . There are indications that in the highest studied stocking density the increased light intensity can improve the individual properties of tibia. The differences in the average assessment of hock burns were concluded to be the result of the stocking density that was observed only in conditions of the increased intensity of light. The average score of foot pad lesions was under the significant main effect of both investigated factors. The differences in the average FP estimation between the light intensity treatments were confirmed in the stocking density of 13 birds/m2.

Rezime:Mogućnost upotrebe svetlosti jačeg intenziteta u menadžmentu brojlerske proizvodnje za poboljšanje zdravlja nogu brojlera, ispitana je u ogledu sa ciljem utvrđivanja efekta dva nivoa intenziteta svetlosti u različitim gustinama naseljenosti brojlerskih pilića. Istraživanje je sprovedeno na 1200 Ross 308 brojlera po slučajnom blok sistemu sa 6 tretmana (2 x 3 faktorijalni ogled) i 4 ponavljanja. Ispitivani nivoi intenziteta svetlosti 150 lx (HLI) i 20 lx (LLI) su primenjeni u 3 gustine naseljenosti brojlera: 10, 13 i 15 birds/m2 . AB  - The aim of this study was to investigate the effects of the supplementation of different concentrations of rosemary in broiler
diets from day 1 to 42 on growth performance, carcass quality, and cecal microbiological composition of chickens. The research was
carried out with 1200 Ross 308 chickens, divided into 4 groups with 6 repetitions per group. The treatment groups were: control
group (C) without rosemary, 0.2% rosemary group (0.2R), 0.4% rosemary group (0.4R), and 0.6% rosemary group (0.6R). Production
parameters and the European Production Efficiency Factor (EPEF) were determined. At the end of the trial 12 chicks per group were
selected and euthanised in order to determine the slaughtering properties and for the microbiological analysis of the cecum contents.
The obtained results showed that the use of rosemary in diets leads to increase in average daily gain, feed conversion, and EPEF value.
The share of abdominal fat in carcasses was lower (P < 0.05) in the 0.4R and 0.6R groups. Lactobacilli count was found higher in the
0.4R and 0.6R groups (P < 0.001) compared to the C group. These results demonstrate that addition of 0.4% rosemary powder to broiler
feed could have positive effects on the gain, feed conversion, fat deposition, and cecal microbiological composition. Further increase in
the amount of added rosemary had no additive effect in this research.

AB  - In order to determine the effect of intensity of light and stocking density, as well as the interaction of light intensity x stocking density on body weight and individual carcass traits, an experiment was performed on 1200 broilers of the Ross 308 genotype. The investigated factors were the intensity of light (LI): 20 lx (K) ; 150 lx (O) and stocking density (SD): 10 broilers/m2 (A); 13 broilers/m2 (B); 15 broilers/m2 (C), in 4 repetitions. The light source was incandescent bulbs of adequate intensity and a light program 16L: 4D: 2L: 2D was applied. Broiler body weight was controlled on 11th, 21st, 35th and 42nd day, by individual measurement of all chickens in the trial. The average sample containing 12 chickens per treatment with equal gender representation (total of 72 broilers) was used to study the slaughter quality of carcasses based on the parameters of absolute and relative yield of more valuable carcass parts (breast, thighs and drumsticks) and meat in the more valuable parts of the carcass. The effect of light with different intensity on the body weight differed depending on the broiler rearing phase. The interaction effect of the intensity of light and stocking density on the body weight of broilers was confirmed in all stages of growing up to the age of 42 days. A higher intensity of light (150 lx) showed the potential to alleviate the negative effects of higher stocking density (15 broilers/m2 ) on the final body weight of the broiler. The carcass traits were not significantly affected by the intensity of the light, while the stocking density, as well as the intensity of the light x stocking density did influence the yield of whole breast and the yield of breast meat.
AB  - U cilju utvrđivanja efekta intenziteta svetlosti i gustine naseljenosti, kao i interakcije intenzitet svetlosti x gustina naseljenosti na telesnu masu i pojedine karakteristike trupa, sproveden je ogled na 1200 brojlera genotipa Ross 308. Ispitivani faktori su intenzitet svetlosti (LI): 20 lx (K); 150 lx (O) i gustina naseljenosti (SD): 10 grlo/m2 (A); 13 grlo/m2 (B); 15 grlo/m2 (C), u 4 ponavljanja. Izvor svetlosti su bile incandescent bulbs odgovarajućeg intenziteta i primenjen je svetlosni program 16L:4D:2L:2D. Efekat svetlosti različitog intenziteta na telesnu masu se razlikovao u zavisnosti od faze gajenja brojlera. Interakcijski efekat intenziteta svetlosti i gustine naseljenosti na telesnu masu brojlera je potvrđen u svim fazama gajenja do starosti 42 dana. Veći intenzitet svetla (150 lx) je pokazao potencijal da ublaži negativne efekte većih gustina naseljenosti (15 grlo/m2 ) na završnu telesnu masu brojlera. Karakteristike trupa nisu bile pod značajnim glavnim efektom intenziteta svetlosti dok je gustina naseljenosti, kao i interakcija intenzitet svetlosti x gustina naseljenosti, uticala na prinos celih grudi i prinos mesa grudi.

Toxigenic fungal and mycotoxin contamination of maize samples from different districts in Serbia

AB  - This study was carried out in order to investigate the natural occurrence of toxigenic fungi and levels of zearalenone (ZEA), deoxynivalenol (DON) and aflatoxin B1 (AFB1) in the maize stored immediately after harvesting in 2016 and used for animal feed in Serbia. A total of 22 maize samples were collected from four different districts across the country: City of Belgrade (nine samples), Šumadija (eight samples), Podunavlje (four samples) and Kolubara (one sample). Toxigenic fungi were identified according to the morphological characteristics whereas the mycotoxins contamination were detected using biochemistry enzyme-linked immuno-sorbent (ELISA) assay. The tested samples were mostly infected with Aspergillus, Fusarium and Penicillium spp., except that one sample originated from Kolubara was not contaminated with Aspergillus species. Fusarium graminearum was the most common species in the maize sample from Kolubara district (60%), F. verticillioides in the maize samples from Podunavlje (43.75%) and City of Belgrade (22.4%) districts, and Penicillium spp. in the maize samples from Šumadija district (26.38%). In the analysed maize samples the presence of Aspergillus species was low (0-1.78%). Mycotoxicological analysis revealed the presence of zearalenone (ZEA), deoxynivalenol (DON) and aflatoxin B1 (AFB1) in all the investigated samples, except that DON and AFB1 were not recorded in the samples from Podunavlje and Kolubara districts, respectively. The investigated samples were highly contaminated with ZEA, with incidence of 100% for the samples from Šumadija, Podunavlje and Kolubara districts and 88.89% for the samples from City of Belgrade district. In addition, the samples contamination with DON was 100% and 22.2% for the samples from Šumadija, Kolubara and City of Belgrade, districts, respectively. The highest number of AFB1 positive samples was found in Šumadija district (87.5%), while in the City of Belgrade and Podunavlje districts, 55.56% and 50% AFB1 positive samples were established, respectively. Generally, remarkable infection of all the tested samples with toxigenic fungal species from Aspergillus, Fusarium and Penicillium genera were recorded. In addition, high contamination with mycotoxins ZEA, DON and AFB1 were also recorded; nevertheless, only in one sample the level of DON exceeded the allowed legal limit (1750 μg kg-1 ) according to Regulation for unprocessed maize. Therefore, permanent mycological and mycotoxicological analyses of maize grain are necessary for risk assessment of fungal and mycotoxin contamination throughout the food chain.
AB  - Ispitivanja u ovom radu izvedena su s ciljem da se odredi prirodna pojava potencijalno toksigenih gljiva iz rodova Aspergillus, Fusarium i Penicillium i sadržaj mikotoksina zearalenona (ZEA), deoksinivalenola (DON) i aflatoksina B1 (AFB1) u kukuruzu uskladištenom neposredno posle berbe u 2016. godini i korišćenom za ishranu životinja. Ukupno 22 uzoraka zrna kukuruza sakupljeni su iz četiri regiona u Srbiji: Beogradski (devet uzoraka), Šumadijski (osam uzoraka), Podunavski (četiri uzorka) i Kolubarski (jedan uzorak). Toksigene vrste gljiva su identifikovane na osnovu morfoloških osobina, a sadržaj mikotoksina određen je pomoću biohemijske, imunoadsorpcione enzimske metode (ELISA). Ispitivani uzorci kukuruza većinom su bili inficirani sa Aspergillus, Fusarium i Penicillium spp., izuzev što u uzorku iz Kolubarskog regiona nisu bile identifikovane Aspergillus vrste. Najveći broj AFB1 pozitivnih uzoraka ustanovljen je u Šumadijskom regionu (87,5%), dok je u Beogradskom i Podunavskom regionu ustanovljeno 55,56% i 50% AFB1 pozitivnih uzoraka, respektivno. Uopšteno razmatrajući, u ovim analizama ustanovljena je visoka zastupljenost toksigenih vrsta u svim ispitivanim uzorcima kukuruza. Isto tako, ustanovljena je visoka kontaminiranost uzoraka sa mikotoksinima ZEA, DON i AFB1, iako je samo u jednom uzorku sadržaj DON premašio dozvoljeni limit (1750 μg kg-1 ) prema zakonskoj regulativi za neprerađeni kukuruz. Zbog toga, stalne mikološke i mikotoksikološke analize zrna kukuruza neophodne su radi ocene rizika od gljivične i mikotoksin kontaminacije u lancu ishrane.

Effect of genotype and age of laying hens on the quality of eggs and egg shells

AB  - The paper presents the results of testing of the egg and egg shell quality of two light line hen hybrids (Tetra SL and Bowans Brown). There were total of 4 tests. At the end of 35, 45, 55 and 65 weeks of age, the external and internal egg quality properties were tested as well as the quality of egg shell. Testing was conducted on a sample of 30 eggs for each hybrid. The weight and egg shape index were determined for each egg, as properties of the external quality, also internal quality properties such as albumen height and value of Haugh units (HU), and of the egg shell qualities measured the egg shell deformation, the shell breaking force, the weight of raw shell and egg shell thickness were determined. The weight of the eggs did not differ significantly under the influence of said factors. Significantly higher mean values of the egg shape index at the age of 35 weeks were determined in comparison to 65 weeks of age. Under the influence of genotype, significantly higher (p (lt) 0.05) values of the albumen height in genotype Tetra SL were recorded. Albumen height in the 35th week of age was significantly higher (p (lt) 0.01) compared to other ages. Tetra SL layers showed significantly higher (p (lt) 0.05) HU values. With the increase of the age of hens the value of this parameter decreased, so, in the 35th week of age, statistically significantly higher HU value (p (lt) 0.01) was determined, compared to other ages. Deformation of the egg shell, breaking force and egg shell weight did not differ significantly influenced by genotype and age of laying hens. Significantly higher egg shell thickness values (p (lt) 0.05) were recorded for genotype Bowans Brown. With the increase of age of laying hens, there were no significant changes in egg shell thickness. Overall, it is concluded that both examined hybrids in terms of egg and egg shell quality traits have given satisfactory results. For most of the egg quality traits, better results were observed for Tetra SL hen genotype, while the most egg shell quality traits were in favour of hens of Bowans Brown genotype.

Fungal contamination of maize grain samples with a special focus on toxigenic genera

AB  - In this study, the total fungal count and contamination with toxigenic fungi from Aspergillus, Fusarium and Penicillium genera of 127 maize grain samples collected from animal farms in subrbs of Belgrade area during 2012-2015, were determined. The total fungal count was determined using a dilution method, and standard mycological procedures were used to identify potential toxigenic fungi genera. In the tested samples of maize grains, the total fungal count was from 1 x 101 to 3 x 106 cfu g-1. No statistically significant differences between investigated years in regard to the mean total fungal count were determined. According to the Regulation on the quality of animal feed of the Republic of Serbia, the total fungal count above permitted limit (2 x 105 cfu g-1) was established in 9.52, 7.89, 20.69 and 55.56% tested samples in 2012, 2013, 2014 and 2015, respectively. Potentially toxigenic fungi from Aspergillus, Fusarium and Penicillim genera have been identified as the most common in all the samples. In most of the samples, based on the average value for the four-year period (2012-2015), Fusarium species (92.22%) have been identified, followed by the species of the genera Aspergillus (80.83%) and Penicillium (48.68%). A weak positive correlation was established between the moisture content of the samples and the total fungal count in 2012 (r=0.41), in 2013 (r=0.27) and in 2014 (r=0.36) and the medium positive correlation (r=0.61) in 2015. Based on the results of mycological analysis of grain maize it can be concluded that the test samples in a relatively large number did not meet the criteria of hygienic quality. Therefore, regular and continuous control of the mycological quality of maize grain as the most important nutrient in animal nutrition is necessary as a preventive measure to reduce and control contamination of grain with mycotoxigenic fungi.
AB  - Ukupan broj gljiva i kontaminacija s potencijalno toksigenim vrstama iz rodova Aspergillus, Fusarium i Penicillium određivani su u 127 uzoraka zrna kukuruza koji su sakupljeni na farmama u okolini Beograda tokom četvorogodišnjeg perioda (2012-2015). Primenom metode razređenja određen je ukupan broj gljiva, dok su standardne mikološke metode korišćene za identifikaciju potencijalno toksigenih rodova gljiva. U ispitivanim uzorcima zrna kukuruza ukupan broj gljiva je bio od 1 x 101 do 3 x 106 cfu g-1. Između ispitivanih godina nisu ustanovljene statističke značajne razlike u prosečnim vrednostima ukupnog broja gljiva. Prema Pravilniku Republike Srbije o kvalitetu hrane za životinje, u hranivima biljnog porekla, ukupan broj gljiva iznad dozvoljenog limita (2 x 105 cfu g-1) ustanovljen je u 9,52, 7,89, 20,69 i 55,56% ispitivanih uzoraka u 2012., 2013., 2014. i 2015. godini, respektivno. Od potencijalno toksigenih gljiva identifikovane su Aspergillus, Fusarium i Penicillim vrste kao najučestalije u svim ispitivanim uzorcima. U najvećem broju uzoraka, na osnovu prosečnih vrednosti u četvorogodišnjem periodu (2012-2015), identifikovane su Fusarium vrste (92.22%), zatim vrste iz rodova Aspergillus (80.83%) i Penicillium (48.68%). Između sadržaja vlage ispitivanih uzoraka i ukupnog broja gljiva ustanovljena je slaba pozitivna korelacija u 2012. (r=0.41), 2013. (r=0.27) i 2014. godini (r=0.36) i srednje pozitivna korelacija (r=0.61) u 2015. godini. Na osnovu dobijenih rezultata mikološke analize zrna kukuruza može se zaključiti da ispitivani uzorci u relativno velikom broju ne zadovoljavaju kriterijume higijenskog kvaliteta. Zbog toga, redovna i stalna kontrola mikološkog kvaliteta zrna kukuruza kao najvažnijeg hraniva u ishrani životinja je neophodna preventivna mera za smanjenje i kontrolu kontaminacije zrna s mikotoksigenim gljivama.

abstract = "In this study, the total fungal count and contamination with toxigenic fungi from Aspergillus, Fusarium and Penicillium genera of 127 maize grain samples collected from animal farms in subrbs of Belgrade area during 2012-2015, were determined. The total fungal count was determined using a dilution method, and standard mycological procedures were used to identify potential toxigenic fungi genera. In the tested samples of maize grains, the total fungal count was from 1 x 101 to 3 x 106 cfu g-1. No statistically significant differences between investigated years in regard to the mean total fungal count were determined. According to the Regulation on the quality of animal feed of the Republic of Serbia, the total fungal count above permitted limit (2 x 105 cfu g-1) was established in 9.52, 7.89, 20.69 and 55.56% tested samples in 2012, 2013, 2014 and 2015, respectively. Potentially toxigenic fungi from Aspergillus, Fusarium and Penicillim genera have been identified as the most common in all the samples. In most of the samples, based on the average value for the four-year period (2012-2015), Fusarium species (92.22%) have been identified, followed by the species of the genera Aspergillus (80.83%) and Penicillium (48.68%). A weak positive correlation was established between the moisture content of the samples and the total fungal count in 2012 (r=0.41), in 2013 (r=0.27) and in 2014 (r=0.36) and the medium positive correlation (r=0.61) in 2015. Based on the results of mycological analysis of grain maize it can be concluded that the test samples in a relatively large number did not meet the criteria of hygienic quality. Therefore, regular and continuous control of the mycological quality of maize grain as the most important nutrient in animal nutrition is necessary as a preventive measure to reduce and control contamination of grain with mycotoxigenic fungi., Ukupan broj gljiva i kontaminacija s potencijalno toksigenim vrstama iz rodova Aspergillus, Fusarium i Penicillium određivani su u 127 uzoraka zrna kukuruza koji su sakupljeni na farmama u okolini Beograda tokom četvorogodišnjeg perioda (2012-2015). Primenom metode razređenja određen je ukupan broj gljiva, dok su standardne mikološke metode korišćene za identifikaciju potencijalno toksigenih rodova gljiva. U ispitivanim uzorcima zrna kukuruza ukupan broj gljiva je bio od 1 x 101 do 3 x 106 cfu g-1. Između ispitivanih godina nisu ustanovljene statističke značajne razlike u prosečnim vrednostima ukupnog broja gljiva. Prema Pravilniku Republike Srbije o kvalitetu hrane za životinje, u hranivima biljnog porekla, ukupan broj gljiva iznad dozvoljenog limita (2 x 105 cfu g-1) ustanovljen je u 9,52, 7,89, 20,69 i 55,56% ispitivanih uzoraka u 2012., 2013., 2014. i 2015. godini, respektivno. AB  - This study analyses the effect of different protein levels in broiler feeds (supplemented with protease) and different lengths of fattening period on some parameters related to dressed carcass quality. Medium-growing Master Gris broiler chickens were used in a fattening trial lasting 63 days. At slaughter, dressing percentages and abdominal fat percentages were determined based on traditionally dressed carcass weights and abdominal fat weights of broilers at 49 and 63 days, and conformation indices were calculated based on absolute conformation measurements. Results showed that dietary treatment had an effect only on one relative conformation measurement - body weight/shank length in chickens at 49 days, as control broilers had higher values of this index compared to chickens receiving feeds containing reduced levels of crude protein and protease supplementation (0.2% or 0.3%). Length of fattening period affected almost all studied parameters, except breast angle, dressing percentage of traditionally dressed carcass and abdominal fat percentage.
AB  - U radu je analiziran uticaj različitog nivoa proteina u hrani za tov pilića (uz dodatak enzima proteaze) i dužine trajanja tova na neke parametre kvaliteta obrađenih trupova. U ogledu je korišćen medium-growing linijski hibrid Master Gris, a ogled je trajao 63 dana. Na liniji klanja, na osnovu mase klasično obrađenog trupa i mase abdominalne masti pilića uzrasta 49. i 63.dana tova utvrđen je randman klasimično obrađenog trupa i udeo abdominalne masti, a na osnovu apsolutnih mera konformacije izračunati su indeksi mera konformacije. Rezultati ogleda su pokazali da je uticaj ispitivanih obroka ispoljio efekat samo na jednu relativnu meru konformacije trupova - telesna masa/dužina piska kod pilića starosti 49.dana, jer su pilići iz kontrolne grupe imali veću vrednost ovog indeksa u odnosu na piliće koji su hranjeni smešama sa nižim nivoima sirovih proteina, uz dodatak enzima proteaze (0,2% ili 0,3%). Različita dužina trajanja tova uticala je na skoro sve ispitivane parametre, izuzev na veličinu grudnog ugla, randman klasično obrađenog trupa i udeo abdominalne masti.

Consumer criteria for purchasing eggs and the quality of eggs in the markets of the city of Belgrade

AB  - In order to examine the consumers' attitude towards eggs, 239 respondents in the area of the City of Belgrade were surveyed, and the assessment of the quality of eggs on the Belgrade market was done by examining the quality of eggs in super/hypermarkets. In the survey, consumers expressed their views about the place of purchase of eggs, the criteria for purchasing and the significance of certain quality traits/properties. In the egg quality test eggs of class A were used, and it was done on egg samples from 5 super/hypermarkets, from a total of 10 egg manufacturers. Based on the results of the study, it was found that most egg consumers buy in super/hypermarkets (39.62%), that the brand/manufacturer was not important for 30.37% of the respondents, that they preferred to buy larger eggs (SS, S and A classes). The quality of eggs is very important for 73.28% of subjects, and the colour of the yolk preferred by the respondents was extremely yellow (62.76%). The supply of table eggs on the market was different (from 1 to 5 manufacturers) per retail store. The quality of eggs, observed for all super/hypermarkets and all manufacturers, expressed in Haugh units, decreased with the shelf life of eggs. The quality of eggs from category 1 to 10 days, in all super/hypermarkets, observed for all manufacturers, was within the studied class A, with egg weight ranging from 60.9 to 64.1g, egg shell colour from 3.6 to 4.2, egg cleanness 4.4 to 5.0, the colour of the yolk (Roche) from 10.9 to 13.2, and the number of Haugh units from 73.2 to 91.7. The results of the research indicate that consumers in the City of Belgrade are placing importance on the quality of table eggs, that there are differences in the supply and freshness of the eggs between the markets, and that there are differences in the quality within the same market, regardless of the manufacturer.
AB  - U cilju ispitivanja stavova potrošača jaja anketirano je 239 ispitanika na području Grada Beogradu, a ocena kvaliteta jaja na beogradskom tržištu obavljena je ispitivanjem kvaliteta jaja u super/hipermarketima. Kroz anketno ispitivanje potrošači su se izjasnili o mestu kupovine jaja, o kriterijumima pri kupovini i o značaju pojedinih osobina kvaliteta. Ispitivanje kvaliteta jaja odnosilo se na jaja klase A, a obavljeno je na uzorcima jaja iz 5 super/hipermarketa, za ukupno 10 proizvođača jaja. Na osnovu rezultata ispitivanja konstatovano je da većina potrošača jaja kupuje u super/hipermarketima (39,62%), da pri kupovini nije bitna robna marka/proizvođača za 30,37% ispitanika, da najradije kupuju jaja veće mase (SS, S i A klase). Kvalitet jaja veoma je važan za 73,28% ispitanika, a boja žumanca koju preferiraju je iz kategorije izrazito žuta (62,76%). Ponuda konzumnih jaja bila je različita (od 1 do 5 proizvođača) po marketu. Kvalitet jaja, posmatrano za sve super/hipermarkete i sve proizvođače iskazan kroz Hogove jedinice opadao je sa starošću jaja. Kvalitet jaja iz kategorije 1 do 10 dana, u svim super/hipermarketima, posmatrano za sve proizvođače, bio je u okviru ispitivane klase A, pri čemu se masa jaja kretala od 60,9 do 64,1g, boja ljuske od 3,6 do 4,2; čistoća jaja od 4,4 do 5,0; boja žumanca (Roche) od 10,9 do 13,.2, a broj Hogovih jedinica od 73,2 do 91,7. Rezultati istraživanja upućuju na zaključak da potrošači u Gradu Beogradu poklanjaju pažnju značaju kvaliteta konzumnih jaja, da između marketa postoje razlike u pogledu ponude i svežine jaja, kao i da unutar jednog marketa i posmatrano na nivou svih marketa postoje razlike u kvalitetu, u zavisnosti od proizvođača.

The effect of the rearing system, genotype and laying hens age on the egg weight and share of main parts of eggs

AB  - The aim of this study was to evaluate the effect of rearing system, genotype and hens age on egg weight and eggs components share. The tested rearing systems were the floor and organic, and tested genotypes were Isa Brown hybrid and New Hampshire breed. Eggs were collected for analyses three times in production cycle (32 weeks hens age, 48 weeks hens age, and 72 weeks hens age). In these samples (fifteen eggs per group, eggs were one day old) were investigated: egg weight, albumen share, yolk share and shell share. Egg weight was increased with hens age. Also, the interaction between the genotype and hens age was found, so the New Hampshire eggs in 32 weeks had less weight then Isa Brown eggs (p≤0.05), while in the 48 and 72 weeks this difference was lost (p≥0.05). The share of egg albumen and yolk was significantly affected by the rearing system, genotype and hens age (p≤0.05). Floor produced eggs had a lower proportion of albumen and a higher proportion of yolk compared to organic eggs. New Hampshire eggs had a higher content of yolk and the smaller content of albumen compared to Isa Brown eggs (p≤0.05). With hens age, the share of yolk was increased and albumen share was decreased. Interaction of all three studied factors - rearing system x genotype x hens age had the most important effect on the shell share.
AB  - Cilj ovog rada je bio da ispita uticaj sistema gajenja, genotipa i starosti kokoši nosilja na masu i udeo glavnih delova jaja. Ispitivani sistemi gajenja su bili podni i organski, a ispitivani genotipovi Isa Brown hibrid i New Hampshire rasa. Jaja su sakupljana za analizu tri puta za vreme proizvodnog ciklusa (kod 32-nedeljnih nosilja, 48-nedeljnih i 72-nedeljnih). Na ovim uzorcima (15 jaja po grupi, jaja stara jedan dan) su ispitivani: masa jaja, udeo belanca, udeo žumanca i udeo ljuske jaja. Masa jaja se povećavala sa starenjem nosilja. Takođe, interakcija genotip x starost nosilja je bila značajna, pa su New hampshire kokoši u 32. nedelji nosile jaja manje mase od Isa Brown hibrida (p≤0.05), dok tih razlika u 48. i 72. nedelji nije bilo (p≥0.05). AB  - U cilju perzistentnosti kvaliteta ljuske konzumnih jaja i smanjenja pojave defekata ljuske i ekonomskih gubitaka nastalih usled nošenja jaja sa napuklom ili razbijenom ljuskom, uzimajući, takođe, u obzir i napuštanje klasičnog kaveznog sistema gajenja kokoši nosilja zbog narušenih uslova za očuvanje dobrobiti nosilja, razvili smo tehničko rešenje koje je zasnovano na eksperimentalnim istraživanjima kvaliteta ljuske u svim bitnim segmentima tehnološkog procesa proizvodnje konzumnih jaja kvalitetne ljuske: ishrana Ca, sistem gajenja i genotip. Na osnovu rezultata sopstvenih istraživanja, razvili smo dva tehnološka postupka u okviru tehničkog rešenja koja se odnose na podmirenja potreba nosilja za kalcijumom i u uslovima smanjene konzumacije i usvojivosti obročnog kalcijuma koji nastaje kao posledica starenja kokoši ali i određenih nepovoljnih uslova u pojedinim sistemima gajenja. Prvim smo odredili optimalan odnos od 60-80% zamene sitno mlevenog krečnjaka (<0,02mm) krupnijim česticama mermera u smešama za ishranu nosilja, kao i optimalnu veličinu čestica izvora kalcijuma od 1,1 do 1,4 mm u obroku nosilja. U završnoj fazi proizvodnog ciklusa, kada se smanjuje sposobnost iskorišćavanja kalcijuma iz obroka i dolazi do povećane pojave jaja napukle ili razbijene ljuske, primenili smo postupak dodatne ishrane kalcijumom, iznad preporuka. Najbolji rezultati u pogledu čvrstoće ljuske postignuti su svakodnevnim naknadnim dodavanjem po hrani količine od 1g po nosilji u dvokratnom periodu (8 i 13 sati) krupno mlevenog mermera–grita. Izbor genotipa kokoši i sistema gajenja u realizaciji tehničkog rešenja izvršen je uzimajući u obzir zabranu klasičnog kaveznog sistema i neophodnost prelaska na alternativne sisteme gajenja, odnosno obogaćene kavezne sisteme gajenja. Istraživanja efekta genetske osnove kokoši, sprovedena na hibridnoj nosilji i autohtonoj rasi su pokazala signifikantan uticaj genotipa na parametre kvaliteta ljuske, odnosno značajno bolji kvalitet ljuske hibridnih nosilja, ali i veću zavisnost parametara kvaliteta od starosti nosilja u poređenju sa autohtonom rasom. Pokazatelji kvaliteta ljuske iz konvencionalne proizvodnje su bili bolji u svim kontrolnim periodima u odnosu na free range proizvodnju. Uporednim ispitivanjem efekta genetskog potencijala kokoši lakog linijskog hibrida, konstatovali smo značajne razlike između hibrida u čvrstoći ljuske. Uzimajući u obzir debljinu i čistoću ljuske, može se konstatovati da izbor obogaćenog kaveznog sistema, kao osnovu novog tehnološkog procesa proizvodnje jaja, smanjuje mogućnost pojave defekata ljuske i obezbeđujući bolje higijenske uslove i veću zdravstvenu bezbednost jaja u ishrani ljudi.

AB  - The experiment of the supstitution of soybean meal with raw soybean in the final diet was carried out on Hubbard F15 chickens at the age of 35-42 days. The effect of different levels and varieties of raw soybeans in diets on carcass conformation and share of major carcass parts was determined in a two factorial experiment 2 x 5 (2 soybean varieties x 5 levels of raw grains in the mixture), ie a total of 10 dietery treatments. At the end of the trial, by a random sample method, 12 chickens (6 males and 6 females) from each group were sacrificed and examined. The results showed that the index of drumstick girth and share of drumstick were under significant (p (lt) 0.05) influence of the soybean varieties. The level of raw soybeans in diets had significant effect (p  (lt) 0.05) on the index of drumstick girth and on the absolute value of the breast depth and breast angle. Shares of breast and thighs of broiler chickens of both sexes were not significantly influenced by the studied factors. It was concluded that the share of raw soybean of 10, 15 and 20% in the final mixtures for broilers hinders the utilization of protein in the ration, resulting in poorer quality of chicken carcasses.

Efekat upotrebe različitog nivoa sirove soje u smešama na konformaciju trupa i udeo vrednijih delova trupa utvrđen je dvofaktorijalnim eksperimentom 2 x 5 (2 sorte soje x 5 nivoa učešća sirovog zrna u smeši) sa 10 tretmana ishrane. Na kraju ogleda metodom slučajnog uzorka iz svake grupe žrtvovano je po 12 pilića (6 muških i 6 ženskih) u cilju utvrđivanja mera konformacije i udela vrednijih delova trupa. Dobijeni rezultati su pokazali da je indeks obima bataka bio pod značajnim (p (lt) 0,05) uticajem sorte soje. Nivo sirove soje u smešama imao je značajnog uticaja (p (lt) 0,05) na indeks obima bataka kao i na apsolutnu vrednost dubine grudi i grudnog ugla. AB  - This paper presents research results on the effect of protease on the dressing percentage of conventionally dressed carcass and body conformation in broiler chickens. Broiler diet was supplemented with 0.2% protease (group E-I) and 0.3% protease (group E-II), and protein content in the feed was reduced by 4% (E-I) and 6% (E-II) through a decrease in soybean meal content. Fast-growing Cobb 500 broilers were used for a 63-day fattening trial. Body conformation measurement included absolute carcass conformation measures (metatarsus length, keel length, breast depth, breast angle, thigh girth) and relative body conformation measures - conformation indices (body weight/metatarsus length, body weight/keel length, body weight/breast depth, body weight/thigh girth). Results showed a significant effect of sex on the dressing percentage of conventionally dressed carcass and all body conformation measures, whereas diet had a significant effect on the dressing percentage of conventionally dressed carcass and breast angle values.
AB  - U radu su prikazani rezultati ispitivanja enzima proteaze na randman klasično obrađenog trupa i konformaciju trupova pilića u tovu. Enzim proteaza dodat je u hranu za piliće u tovu u koncentraciji 0,2% (O-I grupa), odnosno 0,3% (0-II grupa), uz istovremeno smanjivanje sadržaja ukupnih proteina u smešama za 4% (OI grupa), odnosno 6% (O-II grupa), preko smanjenog učešća sojine sačme. U ogledu je korišćen brzorastući hibrid Cobb 500, a tov pilića trajao je 63 dana. Za ocenu konformacije trupova utvrđene su apsolutne mere konformacije trupa (dužina piska, dužina kobilice, dubina grudi, grudni ugao, obim bataka) i relativne mere konformacije trupova - indeksi mera konformacije (telesna masa/dužina piska, telesna masa/dužina kobilice, telesna masa/dubina grudi, telesna masa/obim bataka). Rezultati istraživanja su pokazali da je pol pilića imao značajan uticaj na randman klasično obrađenog trupa i na sve mere konformacije trupova, a da je ishrana pilića različitim formulacijama obroka imala signifikantan efekat na randman klasično obrađenog trupa i vrednost grudnog ugla pilića.

AB  - The aim of this paper was to estimate the effect of rearing systems (floor and organic) on the chemical composition of meat of laying hens. The tested genotypes were Isa Brown hybrid and dual purpose breed New Hampshire. Based on the results of this research can be concluded that the rearing system, generally, did not caused statistically significant differences in any of the parameters examined chemical composition of meat. On the other hand, the breast meat - white meat and thigh and drumstick - dark meat of New Hampshire genotype had significantly higher fat content compared to the Isa Brown hybrid. It must be noted that in the breast meat reported significant interaction genotype x rearing system. The other parameters of the chemical composition of meat were not significantly different between reared genotypes.
AB  - Cilj ovog rada je bio da se ispita uticaj sistema gajenja na hemijski sastav mesa kokoši nosilja iz alternativnih sistema gajenja: podnog i organskog. Ispitivani genotipovi su bili linijski hibrid Isa Brown i rasa kombinovanih proizvodnih sposobnosti New Hampshire. Na osnovu rezultata ovih istraživanja može se zaključiti da sistem gajenja, generalno posmatrano, nije uzrokovao značajne razlike ni u jednom od ispitivanih parametara hemijskog sastava mesa. Sa druge strane, i meso grudi - belo meso i meso bataka i karabataka - tamno meso, New Hampshire genotipa je imalo značajno veći sadržaj masti u odnosu na Isa Brown hibrid, s tim što se mora napomenuti da se kod mesa grudi, javila i značajna interakcija sistem gajenja x genotip. Ostali ispitivani parametri hemijskog sastava mesa nisu se značajno razlikovali između ispitivanih genotipova.

AB  - This study evaluates the effect of different crude protein levels in broiler diets supplemented with 0.2% and 0.3% protease enzyme (Ronozyme Pro Act) on dressed carcass weight and dressing percentage during two fattening periods (49 and 63 days). The fast-growing strain Cobb 500 was used. At the end of the fattening trial i.e. at 49 and 63 days, 10 male and 10 female birds were randomly sacrificed from each experimental group to determine body weights and conventionally dressed, ready-to-roast and ready-to-grill carcass weights. The data obtained were used to calculate the dressing percentages of the differently dressed carcasses. Results indicated that carcass weights and dressing percentages were not affected by diet (P>0.05), but also showed that the increase in the length of the fattening period by two weeks (from 7 to 9 weeks) led to increased carcass weights, while dressing percentages decreased (P (lt) 0.05).
AB  - U radu su prikazani efekti različitih nivoa sirovih proteina u hrani za tovne piliće, uz dodatak enzima proteaze (Ronozyme Pro Act) u količini 0,2% i 0,3% na masu i randmane obrađenih trupova pri različitom trajanju tova (49 i 63 dana). U ogledu je korišćen brzorastući tovni hibrid Cobb 500. Na kraju oglednih perioda, 49 i 63. dana, odabrano je slučajnim izborom po 10 muških i 10 ženskih pilića iz svake eksperimentalne grupe i izmerena je masa grla pre klanja, masa klasično obrađenog trupa, trupa spremno za pečenje i trupa spremno za roštilj. Na osnovu ovih podataka izračunat je randman različito obrađenih trupova pilića. Dobijeni rezultati ukazuju da mase i randmani trupova nisu bili pod uticajem ispitivanih obroka (P>0,05), ali i da su se sa produžavanjem trajanja tova za 2 nedelje (sa 7. na 9 nedelja) povećale mase trupova, uz istovremeno smanjivanje randmana obrađenih trupova (P (lt) 0,05).

Attittudes of consumers in Serbia towards the importance of a balanced diet and table egggs as foodstuff

AB  - To investigate consumers' attitudes towards a balanced diet and eggs as foodstuff, 509 consumers have been surveyed. Through this survey, the consumers answered questions about the importance of a balanced diet, importance of having eggs in diet, the most common way of egg consumption, benefits and drawbacks of eating eggs. The responses were analysed by gender, age, occupation, education and place of living of the respondents (city of Belgrade, other cities and other populated places). Based on these results, it can be concluded that most of the respondents (79% males and 87% females) think a balanced diet is important, whereas 41% males and 52% females think it is very important. Moreover, most of the respondents find it important to have eggs in diet, and males and females do not differ in their responses (69%). The most common way of cooking and consuming eggs is frying, according to 68% male and 50% female respondents from all the places (60% from Belgrade, 55% from other cities and 62% from other populated places). As a benefit of eating eggs, the most frequent response is 'nutritive value' (43% respondents), whereas, the most frequent drawback is 'a risk of cholesterol' (19% respondents). Hence, one should pay particular attention to education on the importance of diet, at the level of the whole community.
AB  - U cilju ispitivanja stavova potrošača o značaju uravnotežene ishrane i jajima kao namirnici anketirano je 509 potrošača, na području Republike Srbije. Kroz anketno ispitivanje potrošači su se izjasnili o značaju uravnotežene ishrane, značaju jaja u ishrani i najčešćim načinima konzumiranja, prednostima i nedostacima jaja. Odgovori anketiranih potrošača obrađeni su po polu, starosti, zanimanju, obrazovanju i sredini u kojoj žive (grad Beograd, ostali gradovi, ostala naseljena mesta). Na osnovu rezultata ispitivanja može se zaključiti da je većini anketiranih potrošača važna uravnotežena ishrana (79% za muški i 87% za ženski pol), pri čemu se o ishrani kao veoma važnoj izjasnilo 41% muškaraca i 52% žena. Takođe, za većinu anketiranih potrošača zastupljenost jaja u ishrani je važna, a po ovom pitanju među pripadnicima različitih polova nema razlika (69%). Najčešći način pripreme, odnosno konzumiranja, su pržena jaja, kod oba pola (za muškarce je to 68%, a kod žena 50%) i u svim životnim sredinama u Beogradu 60%, ostalim gradovima 55% i ostalim naseljenim mestima 62%). Kao prednost jaja u ishrani potrošači su najčešće naveli hranljivost (43% ispitanika), a kao najčešći nedostatak strah od povećanja holesterola (19% ispitanika). Edukaciji o značaju ishrane, sa akcentom na značaj jaja kao visokovredne namirnice, trebalo bi posvetiti posebnu pažnju, na nivou celokupne društvene zajednice.
