Assessment of egg and eggshell quality: Insights from a three-year study on Isa Brown hybrid layers

AB  - The aim of this research was to examine the influence of the year (production cycle) and laying age on the quality of eggs for consumption. Examination of certain properties of egg and shell quality was carried out over a period of three years continuously and in four evenly spaced time intervals (24, 35, 46, and 57 weeks of age). Determining the external quality of eggs included determining the weight and shape index. Examination of the internal quality of eggs included the determination of albumen height and Haugh units. At the same time, the quality of the eggshell involved the determination of the following properties: (weight, thickness, deformation, breaking force, and color of the shell). The obtained results showed that during three production cycles, the genetic progress of this hybrid was confirmed, which is primarily reflected in a statistically significantly higher (p<0.05) value of egg weight, egg white height, and Haugh's units in the third year compared to the first year examinations. Also, under the influence of this factor, statistically significantly higher values of weight and shell thickness and a darker shell color were determined in the third compared to the first year of research. No statistically significant differences were found for other examined parameters under the influence of this factor. In the presence of statistically significant influence (p<0.05), various laying ages were systematically examined for internal and external egg quality attributes alongside shell quality properties, excluding shell deformation. Egg weight increased significantly with increasing laying age, while shape index values, contrary to egg weight, decreased. The parameters of internal egg quality were worse with increasing laying age. Regarding the shell quality properties, it was found that the shell weight and thickness, similar to the egg weight, increased with the age of the layers, while the breaking force was found to be the lowest in the oldest layers. The interaction of both tested factors did not cause a statistically significant effect on tested egg quality traits.

Eggs from different housing systems and production programs on the market of the city of Belgrade

AB  - In the year when the already extended deadline for egg producers in Serbia to shift from cage
farming to hen housing systems expires, the aim of the study was to analyse the egg market in Belgrade, as the largest market in Serbia. The representation of eggs from different housing systems and production programs in 11 supermarkets, covering the majority of retail chains in Serbia, was examined. In addition, the survey of 247 consumers was conducted in order to determine their views on the housing system and the price of eggs. Results showed the presence of 9 egg producers on Belgrade market, 8 of which provided eggs from the cage system, 5 from the floor system, while 4 offered free-range eggs. Cage eggs were represented in all supermarkets (11), floor eggs in 9 supermarkets, free-range eggs in 6, eggs from the functional food program (ꞷ-3 enriched) in 7, and organic eggs in one supermarket. The analysis of the prices of eggs in
different supermarkets, showed that the price per egg from the cage system, for a package of 10 eggs, varied between 0.13 and 0.21 EUR for Grade M, and between 0.14 and 0.25 EUR for Grade L eggs. The price for floor eggs (Grade M) ranged between 0.17 and 0.25, free-range eggs 0.20 and 0.28, ꞷ-3 eggs 0.26 and 0.32 EUR, while it was 0.55 EUR for organic eggs. By comparing the average price of Grade M cage eggs (0.18 EUR), with eggs from other housing systems and production programs, it was found that the price of floor eggs was 25% higher, free-range eggs 41% higher, ꞷ-3 eggs 56% higher and eggs from organic production 206% higher, respectively. Housing system and the price of eggs, as factors affecting decision when purchasing eggs, were not important for 35.19%, and 34.07% of respondents in the survey, respectively. It can be concluded that eggs from the cage system are still the most represented in Belgrade supermarket, but, compared to the similar research from 2017, the supply of eggs from the floor and free-range housing systems has increased. This indicates that the changes in the regulation influenced the transition of egg producers to permitted housing systems. Supply of ꞷ-3 eggs is satisfactory, while other types of designer eggs are lacking. The supply of organic eggs in supermarkets is insufficient.

Quality of eggs from Banat naked neck and ISA brown layers during storage

AB  - The genotype of the hens, as well as the production system and the diet of the hens, determine the quality of the eggs that are best at the moment of oviposition. In addition to the initial quality of the eggs, the duration and conditions of storage are factors that determine the quality of the eggs that reach the consumer. The aim of the work was to determine the sustainability of the egg quality of the native Banat Naked Neck (BNN) hens and to compare it with the eggs of the ISA Brown (ISA) hybrid laying hens under the same conditions of production and storage. The eggs were stored in a refrigerator at a temperature of 8℃ for 2 or 4 weeks, and in accordance with the Rulebook on Egg Quality (2019). Eggs were sampled in 3 repetitions, and two groups were formed: storage time 2 weeks (ST2) and storage time 4 weeks (ST4) each with 90 eggs, i.e.
45 eggs per genotype and duration of storage. The analysis of the initial quality of BNN and ISA eggs showed differences (p<0.01) in the ratio of egg structural parts, that is, yolk and white, which were maintained throughout the entire storage period. The eggs of BNN had a higher share of egg yolk and a lower share of albumen compared to the eggs of ISA layers. Egg weight of BNN and ISA layers did not initially differ and was 62.06 g and 62.78 g, respectively. However, egg weight loss during the storage period was lower (p<0.01) in BNN (1.20% after 2 weeks and 2.66% after 4 weeks) compared to ISA eggs (1.98% after 2 weeks and 4.24% after 4 weeks). Albumen height and Haugh Units (HU) showed higher values initially and after two weeks of storage (p<0.01) in ISA laying eggs. After four weeks of storage, there were no significant (p>0.05) differences between eggs of BNN and ISA layers in terms of albumen height and HU. In accordance with the mentioned parameters of egg freshness, the pH value of the albumen was higher (p<0.01) in BNN hens after two weeks of egg storage. After four weeks of storage, these processes were more moderate and the determined differences between the eggs of BNN and ISA layers were at a lower
level of significance (p<0.05). In conclusion, BNN eggs during the storage period have more moderate processes of loss of freshness and egg weight compared to eggs of ISA layers, which after four weeks of storage brings them into an equal relationship in terms of quality, although the initial quality of eggs of ISA layers was better.

CAN ONE WEEK’S USE OF NETTLE IN BROILER FEED AFFECT THE CHEMICAL QUALITY OF MEAT?

AB  - This experiment aimed to evaluate the effects of adding fresh or dry nettle (Urtica dioica L.) to broiler diets during the last week of fattening on proximate composition, fatty acid and mineral content of meat. The trial was performed on a total of 600 ROSS-308 unsexed day-old chickens, divided into 3 groups (C - Control group; FN - Fresh Nettle group; DN - Dry Nettle group). All broilers were bred and fed equally, with standard diets from age 1-42 days, except for the last seven days of fattening when in FN group was added daily to the feeders (on top) 20g/chicken freshly collected, blanched and chopped nettle, or in case of DN group of broilers, 10g/kg finely ground dry nettle mixed into a finisher. On day 42, random sample of 6 male and 6 female birds were taken from each group and slaughtered. Meat samples (breasts and drumsticks) were collected and the proximate composition analysis was conducted on each portion of each chicken (total of 72 samples). The fatty acid composition (Shimadzu GC-2014 with FID detector) and mineral analysis (Na, Mg, K, Ca, Mn, Fe, Cu, Zn and Se content measured by iCap Q) was conducted on each portion (breast and drumstick) of 6 chicken per group (3 male and 3 female). An analysis of variance and t-test (IBM SPSS Statistics 20 software) was performed. Meat fat content was significantly lower (P=0.028) in broilers fed with the addition of dry nettle compared with other two groups, which could have an impact on quality characteristics of meat, such as flavor and tenderness. The addition of fresh or dry nettle influenced meat ash content as well, which was significantly larger compared with C group (P<0.001). Total MUFA was highest in DN group (31.20%), while there were no significant differences between other two groups (P<0.001), mainly due to higher share of palmitoleic and oleic acid found in meat from DN group. The lowest amount of total PUFA (35.08%) and n-6 fatty acids (32.19%) was found in DN group (P<0.001), specifically significantly lower content of linoleic acid. Also, DN group have better n-6/n-3 ratio (11.83) compared to control (13.46, P=0.036), while there was no effect when fresh nettle was used. Analysis of minerals in meat showed significantly higher level of Na and Se in DN group, and Fe and Zn in FN group. Generally, research shows that extra addition of 1% dry nettle in broiler feed during the last seven days of fattening can result in different chemical, fatty acid and mineral composition of meat.

The trial was performed on a total of 600 ROSS-308 unsexed day-old chickens, divided into 3 groups (C - Control group; FN - Fresh Nettle group; DN - Dry Nettle group). All broilers were bred and fed equally, with standard diets from age 1-42 days, except for the last seven days of fattening when in FN group was added daily to the feeders (on top) 20g/chicken freshly collected, blanched and chopped nettle, or in case of DN group of broilers, 10g/kg finely ground dry nettle mixed into a finisher. On day 42, random sample of 6 male and 6 female birds were taken from each group and slaughtered. Meat samples (breasts and drumsticks) were collected and the proximate composition analysis was conducted on each portion of each chicken (total of 72 samples). The fatty acid composition (Shimadzu GC-2014 with FID detector) and mineral analysis (Na, Mg, K, Ca, Mn, Fe, Cu, Zn and Se content measured by iCap Q) was conducted on each portion (breast and drumstick) of 6 chicken per group (3 male and 3 female). An analysis of variance and t-test (IBM SPSS Statistics 20 software) was performed. Meat fat content was significantly lower (P=0.028) in broilers fed with the addition of dry nettle compared with other two groups, which could have an impact on quality characteristics of meat, such as flavor and tenderness. The addition of fresh or dry nettle influenced meat ash content as well, which was significantly larger compared with C group (P<0.001). Total MUFA was highest in DN group (31.20%), while there were no significant differences between other two groups (P<0.001), mainly due to higher share of palmitoleic and oleic acid found in meat from DN group. The lowest amount of total PUFA (35.08%) and n-6 fatty acids (32.19%) was found in DN group (P<0.001), specifically significantly lower content of linoleic acid. Also, DN group have better n-6/n-3 ratio (11.83) compared to control (13.46, P=0.036), while there was no effect when fresh nettle was used. Analysis of minerals in meat showed significantly higher level of Na and Se in DN group, and Fe and Zn in FN group. Generally, research shows that extra addition of 1% dry nettle in broiler feed during the last seven days of fattening can result in different chemical, fatty acid and mineral composition of meat.",

AB  - Ishrana brojlera je jedan od najznačajnijih uslova za ispoljavnje genetskog potencijala savremenih hibrida, a u ukupnim troškovima proizvodnje čini oko 70 %. U proizvodnim uslovima, kod nas i u svetu, najčešće primenjivan koncept ishrane brojlera je sa tri do pet potpunih krmnih smeša. NCR 1994 (National Research Council, USA) za ishranu brojlera definiše potrebe za tri fiksna perioda: starter (1-3 nedelje), grover (3-6 nedelja) i finišer (6-8 nedelja). Rezultati istraživanja ukazuju da pri ishrani sa tri ili četiri smeše, potrebe brojlera u pojedinim fazama tova nisu usaglašene sa nutritivnim sastavom smeša. Posledice pothranjenosti/prehranjenosti brojlera istovremeno predstavljaju ekonomski i ekološki problem u proizvodnji pilećeg mesa. Nedostatak proteina u starter periodu rezultira izostankom osnove za optimalan rast, dok višak proteina u finišer periodu dovodi, sa jedne strane do povećanja troškova proizvodnje usled ishrane smešama višeg nivoa proteina, koje imaju višu cenu, pri čemu za njima nema realne potrebe, a sa druge strane, do ekološkog problema usled povećanja ekskrecije azota u fecesu, koji potiče iz viška proteina u hrani. U rešavanju problema neprecizne ishrane primenjuju se različiti programi multifazne ishrane, pri čemu su jedni sa fokusom na ekonomičnost, pojedini na očuvanju životne sredine, dok pojedini programi imaju za cilj jedno i drugo i zasnivaju se na konceptu sniženog sadržaja proteina do nivoa kojim se ne ugrožavaju proizvodne performanse brojlera, a ostvaruje se smanjenje ekskrecije azota.
Inovacija novog modela multifazne ishrane brojlera zasniva se na definisanom programu ishrane za provenijencu Ross 308, za tov pilića po polovima, sa ukupno devet smeša, uključujući i tehnološki postupak njihovog dobijanja.

AB  - The egg production sector is in a transitional period with regard to the permitted housing systems, i.e. rearing in conventional cages under certain conditions to the complete ban of any form of cage system. The changes were caused by concern for the layer wellfare but with the expected effects on productivity as well. The aim of the research was to determine the effects of the floor space allowance in cage and non-cage housing systems on the feather score and egg production of laying hens of three ages, from the aspect of the regulated minimum and optimal space in the cage system (C) and the space provided in the extensive rearing system with hens in smaller groups in the facility (extensive indoor -EI). In order to determine the feather score, the body weight of the laying hens and the weight of the eggs, three groups of laying hens were formed: C4 (564 cm2 per hen, cage system), C3 (751 cm2 per hen, cage system) and EI ( 3000 cm2 per hen, extensive indoor). The feather score and body weight of laying hens were determined in three ages of hens (30, 40, 50 weeks), by individual assessment and measurement of all hens in the experiment. The hen-day egg production and egg weight were determined in the same weeks of laying age. In addition to the expected decrease in feather score with the age of hens, results indicated a significant interaction between age and space allowance per hen. Observed by individual body parts, as well as based on the overall feather score, the space allowance per hen exhibited a full, cumulative effect at 50 weeks of age. Based on the space allowance, it was possible to rank the overall feather score, with the laying hens with the most space having the best feather score. The effect of the space allowance on the body weight of the laying hens was manifested through the space available on the feeder, which resulted in the lowest (p<0.01) body weight values recorded in laying hens of the C4 group. Egg production was not significantly influenced by the space allowance per hen (p=0.069), but a connection between egg production and the housing system can be concluded. The average egg weight, in addition to the known effect of layer age, was the lowest (p<0.01) in the group with the least space allowance per hen.

AB  - Key questions for a local broiler farm are: which broiler hybrid to rear and which industrial
feed to use? To show how farmers can manage them, a combination of biological tests and feed
characterizations of the most commonly used hybrids and broiler feeds in the local (Serbian) market was designed and performed. The hybrids Cobb 500 and Ross 308 were used, as well as feed of the same quality category from three established domestic producers (A, B, and C) available in the market. A factorial trial (2   3) was performed on a total of 1800 unsexed day-old chicks divided into six experimental treatments, with six repetitions per treatment and 50 chickens in each repetition.
Prior to and after the biological trial, the feed was characterized. The results confirm the equally
high production potential of the two tested fast-growing hybrids, the different quality of the three
industrial feeds, and that for the expression of genetic potential, each feeding and fattening period
was equally valuable. A complete picture of the tested feeds was obtained within a suitable posttest feed characterization with a farm economy included in the analysis, and the results differed in different production and market scenarios, which allows for finding the optimal feed for the local farm.

Egg quality of Banat naked neck hens during storage

AB  - In less intensive production systems, native poultry breeds can be used in order to diversify the products and achieve self-sustainability of these breeds through production. Given the missing data on the sustainability of quality of eggs obtained from indigenous, native hens, during storage, the aim of the study was to determine the most important parameters of egg quality of indigenous breed of Banat Naked Neck hens during a four-week period in different storage conditions. The design of the experiment was two-factorial with 4 levels of storage time factors (fresh eggs - 0, 1, 2, 3 and 4 weeks of storage) and 2 levels of temperature storage condition factors (room temperature and refrigerator). The room temperature was on average 21.3°C and the refrigerator temperature 8°C. Quality analysis was performed on a total of 200 eggs, and it included following parameters: egg weight, egg weight loss, weight and proportion of structural components: shell, yolk and albumen, albumen height, yolk colour, Haugh Units and albumen pH. The storage time had a significant effect on all properties of egg quality, except for the yolk colour, which was under the impact of the interaction of storage time and temperature. Storage temperature influenced egg weight loss (<0.001), shell weight (<0.05), albumen height (<0.0001), Haugh Units (<0.0001) and albumen pH (<0.0001). By storing in the refrigerator, changes in internal quality were significantly slowed down. After 28 days of storage in the refrigerator, the values of albumen and Haugh Units were higher than the same parameters of eggs stored for only 7 days at room temperature.

nutritionists, but also for each individual. The choice of food stuffs in the diet is
significantly influenced by habits, and in recent decades it has been noticed that
consumers are increasingly concerned about the way food is produced, its safety
and harmlessness. Although eggs, as a food, have an excellent nutritional
composition, they have had a bad reputation for decades due to the high content of
cholesterol, which was considered bad, which is why many consumers avoided
them or ate only egg whites. The results of research indicating that cholesterol in
food such as eggs has an insignificant effect on blood cholesterol have contributed
to solving the problem of cholestephobia, so that official nutrition organizations,
around year 2000, recommended the abolition of restrictions on egg consumption.
Egg consumption and method of preparation vary significantly among different
countries, which may be related to dietary traditions and consumer preferences.
During the last decades, the attitudes of consumers are gaining in importance and
are being studied in relation to the characteristics of egg quality, according to
production systems, the welfare of chickens, etc. A comprehensive view of
consumers' perceptions, their habits and understanding of the role of eggs in the
diet requires a systematic approach, at the level of the entire social community,
including education, which is especially important for younger populations. The
aim of this paper is to point out the importance of eggs in the diet, to show the
situation in the sector of table egg production in Serbia, with reference to EU
countries, including expected changes caused by changes in the legislation, which
may have far-reaching consequences for this sector, consumers and the market
situation.

AB  - A comparative study of production traits was performed between COBB 500 broilers from a 52-week-old breeder flock and a ROSS 308 from two breeder flocks of different ages (52 weeks and molted flock 79-week-old) in equal, relatively suboptimal ambiental (temperature oscillations) and nutritional conditions (market feed of average quality). The experiment was performed on a total of 720 day-old chicks of both sexes in 4 experimental groups (Cobb; Ross 52; Ross 79; Ross mix - a mixture of Ross broilers from two breeder ages), with 6 replications per group and 30 chickens in each replication. Mortality, body weight (days 0, 7, 21 and 42), weight gain, feed conversion and production index (EPEF) were monitored in 42 days of fattening. It was determined that heavier day-old chickens (p<0.01) with better gain in the first week of production, were obtained from the older breeder flock. Except in the first week, Cobb generally had the highest (p<0.05) body weights and gains in the experiment, aside from in mid and the end of the test, where did not differ significantly from the body weight of the Ross 79 and Ross mix group of broilers, respectively. Results also indicate that genetics (used hybrid) may have a greater influence on the final body weight and daily gain in suboptimal test conditions than the breeder age. Cobb 500 broilers also had significantly higher mortality under test conditions (p<0.05). Feed conversion and the achieved EPEF production index did not vary significantly in the test in chickens of different genotypes or parents. In general, suboptimal conditions in our research constrained realisation of the genetic production potential, with a suppressive effect on both hybrids, higher on the growth in Ross 308, and on the resistance measured by mortality in Cobb 500 hybrids.

AB  - The aim of the survey was to determine how the egg production sector is complying with animal welfare legislation, which requires a ban on conventional cages and the transition to permitted systems for rearing laying hens - enriched cages and alternative systems, as well as the attitudes of egg producers and consumers on the impact of permitted systems of egg production/purchase and hen welfare. The survey included producers (50), with 1000 and more hens, where in the sample, the percentage share of producers was according to the capacity - the size of the farm, i.e. similar to the share in the total egg production in Serbia. A consumer survey (261) established their views on the impact of the welfare of layers and the rearing system when buying eggs. According to the test results, it can be stated that: when switching to permitted rearing systems, enriched cages were the choice of all surveyed producers (100%) and that in the transition period from 2014 to autumn 2020, 16.3% of respondents switched from conventional cages to enriched ones (2.04% in full and 14.29% in part). According to the results obtained, 80.49% of them are planning to switch from a conventional cage system to another rearing system, of which 60.98% said they would do so if they had the financial means, while about 19% of producers believe they will be forced to leave production. All producers expect that the transition to enriched cages will lead to a reduction in their production, and 83.33% of them believe that it will be from 20 to 40%. Surveyed producers (87.18%) expect that the transition from conventional cages will increase production costs, and 65.11% believe that this will not affect

the welfare of layers. A survey of consumer attitudes found that when buying eggs, the production system was very important for 19.91% of consumers, and for 19.41% of consumers it was not important at all, while the welfare of layers was very important for 26.84% and not at all important for 10.32% of consumers. The conclusion of the research is that in Serbia the transition to permitted rearing systems is slow, that harmonization with legal regulations is a great challenge and that changes are expected in the coming period that may have far-reaching consequences for the sector of table egg production.

AB  - The comparison of physical quality properties of table eggs of commercial hybrid Tetra SL and two native indigenous breeds of hens, Banat Naked Neck and Svrljig hen, was performed in conditions of alternative production in the pasture system in portable cages without the floor. The experiment was conducted during the vegetation period, at the age of hens of 53-57 weeks. In order to produce good quality eggs, the diet was designed with a complete mixture based on maize and soybean. In addition, constant availability of pastures was ensured. Egg sampling was performed in the morning and the initial egg quality was examined based on egg weight, shape index, egg white, egg yolk and shell quality parameters. Layer hens of the commercial hybrid Tetra SL had significantly higher egg weight and better internal egg quality (p<0.01) compared to hens of Banat Naked Neck and Svrljig hens, except for the colour of the yolk, which was more intense in the same feeding and breeding conditions and the age of laying hens, in eggs of native breeds (p<0.01). Native breeds in relation to the commercial hybrid had lighter shell colour (p<0.01). Deformation and egg shell thickness differed (p<0.01) between all three genotypes. The determined rank of layer hen genotypes for shell thickness was: Tetra SL, Banat Naked Neck, Svrljig hen. However, the breaking force was without statistically confirmed difference between hen genotypes.

The Attitudes of Table Egg Consumers in Serbia on the Welfare of Laying Hens

AB  - In order to examine the attitude of egg consumers about the poultry welfare and their willingness to spend more money to buy eggs produced in accordance with animal welfare principles, 529 consumers were surveyed in three regions of Serbia (Belgrade, region of Šumadija and Western Serbia and South and Eastern Serbia region). Through the survey questionnaire, consumers have stated how important the welfare of laying hens is to them and if they are willing to spend more money on eggs produced acording to principles of animal welfare. The answers of the surveyed consumers were analyzed by gender, age, education, number of children in the family and the environment in which they live. According to the results of the survey, it can be concluded that in Serbia, poultry welfare is moderately important to 28.17% of egg consumers and very important to 50.77% of consumers, while not at all or little to 21.13%, and that there are differences between individual regions. The willingness to pay more for eggs produced according to welfare principles was expressed by 78.53% of consumers, on average for all three regions. The analysis of data within the category of consumers for which the poultry welfare is very important, revealed that 54.15% are women and 44.02% are men, and that the welfare is more important for consumers with higher education (52.66%) compared to middle school (47.67%), also, for consumers in the 35-55 age group (55.60%) compared to younger and older respondents and those with three or more children in the family (52.94%) compared to families with fewer children. The survey results indicate that consumers in Serbia attribute more importance to the welfare of laying hens, and show their willingness to pay more for eggs produced in compliance with the welfare principles. In the coming period, the education focusing on the increase of consumer awareness of the importance of the welfare of laying hens and the connection with the quality of the product will be necessary.

Through the survey questionnaire, respondents declared themselves whether they are buying organic eggs and how much money they are ready to allocate for this type of eggs. Answers from surveyed respondents who are buying organic eggs were analyzed by gender, age, status, education, monthly income and the region in which they are living. According to the survey results, it can be concluded that in Serbia, there is a very small number of consumers who are buying organic eggs (2.41%), and that all of them are located in the Belgrade region. Furthermore, only 8.34% of consumers were willing to pay 30% higher price for organic eggs, on average for all three regions. Analyzing data within the category of organic eggs consumers, the highest tendency for buying organic eggs was determined for female respondents (76.92%), those with the higher education level (61.54%), the employed respondents (92.31%), the respondents aged from 36 to 55 (61.52%) and the respondents with the highest monthly household income (46.15%). The results of the present study indicate that the percentage of consumers who buy organic eggs in Serbia is very small, it is present only in certain regions and the willingness to pay more for organic eggs is low.

AB  - Egg quality parameters of hybrid layers were analyzed by comparative testing of conventional cage and alternative housing systems: floor pen and mobile cages on the pasture. The analysis of the quality of eggs from the conventional cage and floor pen housing system was carried out at the age of 42 to 44 weeks, and from the conventional cage and the mobile cage on pasture, in the period from 51 to 53 weeks of age. Each trial was organized in 3 repetitions in the 3 seven-day periods and 30 eggs per repetition, i.e. 90 per housing system were analyzed. The quality of 360 eggs in total was analyzed. The initial egg quality was studied based on the properties of the external and internal quality of eggs and eggshell quality. In the conditions of the same genetic of laying hens, the parameters of the egg quality that were significantly affected by the housing system are the egg weight, certain properties of eggshell quality (cleanliness, colour and weight), the ratio of the albumen and yolk, and the yolk colour. Significantly higher egg weight and a lower albumen to egg yolk ratio were recorded in eggs from alternative housing systems compared to the conventional cage system. Eggs from the floor system had a darker and dirtier egg shell compared to the conventional cage system. The eggshell weight and the yolk colour were significantly higher in eggs from mobile cages.

AB  - Abstract: The possibility for use of high light intensity in broiler production management to improve the health of broilers’ legs was examined in a study aiming to determine the effect of two levels of light intensity in different stocking densities of broiler chickens. The study was carried out on 1200 Ross 308 broilers according to a random block system with 6 treatments (2 x 3 factorial design) and 4 replicates per treatment. The examined light intensity levels of 150 lx (high light intensity-HLI) and 20 lx (low light intensity-LLI) were applied to 3 stocking densities of broilers: 10, 13 and 15 birds/m2 . Scoring of foot pad (FP) and hock burns (HB) was carried out on the 42nd day, on a sample of 240 broilers. Osteometric and biomechanical measurements on tibia were performed after slaughtering and primary processing, on a sample of 72 broilers. The high level intensity of light exerted no significant effect on the development and firmness of the tibia of broilers grown in the densities of 10, 13 and 15 birds/m2 . There are indications that in the highest studied stocking density the increased light intensity can improve the individual properties of tibia. The differences in the average assessment of hock burns were concluded to be the result of the stocking density that was observed only in conditions of the increased intensity of light. The average score of foot pad lesions was under the significant main effect of both investigated factors. The differences in the average FP estimation between the light intensity treatments were confirmed in the stocking density of 13 birds/m2.

Rezime:Mogućnost upotrebe svetlosti jačeg intenziteta u menadžmentu brojlerske proizvodnje za poboljšanje zdravlja nogu brojlera, ispitana je u ogledu sa ciljem utvrđivanja efekta dva nivoa intenziteta svetlosti u različitim gustinama naseljenosti brojlerskih pilića. Istraživanje je sprovedeno na 1200 Ross 308 brojlera po slučajnom blok sistemu sa 6 tretmana (2 x 3 faktorijalni ogled) i 4 ponavljanja. Ispitivani nivoi intenziteta svetlosti 150 lx (HLI) i 20 lx (LLI) su primenjeni u 3 gustine naseljenosti brojlera: 10, 13 i 15 birds/m2 . AB  - In order to determine the effect of intensity of light and stocking density, as well as the interaction of light intensity x stocking density on body weight and individual carcass traits, an experiment was performed on 1200 broilers of the Ross 308 genotype. The investigated factors were the intensity of light (LI): 20 lx (K) ; 150 lx (O) and stocking density (SD): 10 broilers/m2 (A); 13 broilers/m2 (B); 15 broilers/m2 (C), in 4 repetitions. The light source was incandescent bulbs of adequate intensity and a light program 16L: 4D: 2L: 2D was applied. Broiler body weight was controlled on 11th, 21st, 35th and 42nd day, by individual measurement of all chickens in the trial. The average sample containing 12 chickens per treatment with equal gender representation (total of 72 broilers) was used to study the slaughter quality of carcasses based on the parameters of absolute and relative yield of more valuable carcass parts (breast, thighs and drumsticks) and meat in the more valuable parts of the carcass. The effect of light with different intensity on the body weight differed depending on the broiler rearing phase. The interaction effect of the intensity of light and stocking density on the body weight of broilers was confirmed in all stages of growing up to the age of 42 days. A higher intensity of light (150 lx) showed the potential to alleviate the negative effects of higher stocking density (15 broilers/m2 ) on the final body weight of the broiler. The carcass traits were not significantly affected by the intensity of the light, while the stocking density, as well as the intensity of the light x stocking density did influence the yield of whole breast and the yield of breast meat.
AB  - U cilju utvrđivanja efekta intenziteta svetlosti i gustine naseljenosti, kao i interakcije intenzitet svetlosti x gustina naseljenosti na telesnu masu i pojedine karakteristike trupa, sproveden je ogled na 1200 brojlera genotipa Ross 308. Ispitivani faktori su intenzitet svetlosti (LI): 20 lx (K); 150 lx (O) i gustina naseljenosti (SD): 10 grlo/m2 (A); 13 grlo/m2 (B); 15 grlo/m2 (C), u 4 ponavljanja. Izvor svetlosti su bile incandescent bulbs odgovarajućeg intenziteta i primenjen je svetlosni program 16L:4D:2L:2D. Telesna masa pilića je kontrolisana 11., 21., 35. i 42. dana, pojedinačnim merenjem svih pilića u ogledu. Na prosečnom uzorku od 12 pilića po tretmanu sa podjednakom zastupljenošću polova (ukupno 72 brojlera) izvršeno je ispitivanje klaničnog kvaliteta trupa na osnovu parametara apsolutnog i relativnog prinosa vrednijih delova trupa (grudi, bataci i karabataci) i mesa u vrednijim delovima trupa. Efekat svetlosti različitog intenziteta na telesnu masu se razlikovao u zavisnosti od faze gajenja brojlera. Interakcijski efekat intenziteta svetlosti i gustine naseljenosti na telesnu masu brojlera je potvrđen u svim fazama gajenja do starosti 42 dana. Veći intenzitet svetla (150 lx) je pokazao potencijal da ublaži negativne efekte većih gustina naseljenosti (15 grlo/m2 ) na završnu telesnu masu brojlera. Karakteristike trupa nisu bile pod značajnim glavnim efektom intenziteta svetlosti dok je gustina naseljenosti, kao i interakcija intenzitet svetlosti x gustina naseljenosti, uticala na prinos celih grudi i prinos mesa grudi.

Consumer criteria for purchasing eggs and the quality of eggs in the markets of the city of Belgrade

AB  - In order to examine the consumers' attitude towards eggs, 239 respondents in the area of the City of Belgrade were surveyed, and the assessment of the quality of eggs on the Belgrade market was done by examining the quality of eggs in super/hypermarkets. In the survey, consumers expressed their views about the place of purchase of eggs, the criteria for purchasing and the significance of certain quality traits/properties. In the egg quality test eggs of class A were used, and it was done on egg samples from 5 super/hypermarkets, from a total of 10 egg manufacturers. Based on the results of the study, it was found that most egg consumers buy in super/hypermarkets (39.62%), that the brand/manufacturer was not important for 30.37% of the respondents, that they preferred to buy larger eggs (SS, S and A classes). The quality of eggs is very important for 73.28% of subjects, and the colour of the yolk preferred by the respondents was extremely yellow (62.76%). The supply of table eggs on the market was different (from 1 to 5 manufacturers) per retail store. The quality of eggs, observed for all super/hypermarkets and all manufacturers, expressed in Haugh units, decreased with the shelf life of eggs. The quality of eggs from category 1 to 10 days, in all super/hypermarkets, observed for all manufacturers, was within the studied class A, with egg weight ranging from 60.9 to 64.1g, egg shell colour from 3.6 to 4.2, egg cleanness 4.4 to 5.0, the colour of the yolk (Roche) from 10.9 to 13.2, and the number of Haugh units from 73.2 to 91.7. The results of the research indicate that consumers in the City of Belgrade are placing importance on the quality of table eggs, that there are differences in the supply and freshness of the eggs between the markets, and that there are differences in the quality within the same market, regardless of the manufacturer.
AB  - U cilju ispitivanja stavova potrošača jaja anketirano je 239 ispitanika na području Grada Beogradu, a ocena kvaliteta jaja na beogradskom tržištu obavljena je ispitivanjem kvaliteta jaja u super/hipermarketima. Kroz anketno ispitivanje potrošači su se izjasnili o mestu kupovine jaja, o kriterijumima pri kupovini i o značaju pojedinih osobina kvaliteta. Ispitivanje kvaliteta jaja odnosilo se na jaja klase A, a obavljeno je na uzorcima jaja iz 5 super/hipermarketa, za ukupno 10 proizvođača jaja. Na osnovu rezultata ispitivanja konstatovano je da većina potrošača jaja kupuje u super/hipermarketima (39,62%), da pri kupovini nije bitna robna marka/proizvođača za 30,37% ispitanika, da najradije kupuju jaja veće mase (SS, S i A klase). Kvalitet jaja veoma je važan za 73,28% ispitanika, a boja žumanca koju preferiraju je iz kategorije izrazito žuta (62,76%). Ponuda konzumnih jaja bila je različita (od 1 do 5 proizvođača) po marketu. Kvalitet jaja, posmatrano za sve super/hipermarkete i sve proizvođače iskazan kroz Hogove jedinice opadao je sa starošću jaja. Kvalitet jaja iz kategorije 1 do 10 dana, u svim super/hipermarketima, posmatrano za sve proizvođače, bio je u okviru ispitivane klase A, pri čemu se masa jaja kretala od 60,9 do 64,1g, boja ljuske od 3,6 do 4,2; čistoća jaja od 4,4 do 5,0; boja žumanca (Roche) od 10,9 do 13,.2, a broj Hogovih jedinica od 73,2 do 91,7. Rezultati istraživanja upućuju na zaključak da potrošači u Gradu Beogradu poklanjaju pažnju značaju kvaliteta konzumnih jaja, da između marketa postoje razlike u pogledu ponude i svežine jaja, kao i da unutar jednog marketa i posmatrano na nivou svih marketa postoje razlike u kvalitetu, u zavisnosti od proizvođača.

Attittudes of consumers in Serbia towards the importance of a balanced diet and table egggs as foodstuff

AB  - To investigate consumers' attitudes towards a balanced diet and eggs as foodstuff, 509 consumers have been surveyed. Through this survey, the consumers answered questions about the importance of a balanced diet, importance of having eggs in diet, the most common way of egg consumption, benefits and drawbacks of eating eggs. The responses were analysed by gender, age, occupation, education and place of living of the respondents (city of Belgrade, other cities and other populated places). Based on these results, it can be concluded that most of the respondents (79% males and 87% females) think a balanced diet is important, whereas 41% males and 52% females think it is very important. Moreover, most of the respondents find it important to have eggs in diet, and males and females do not differ in their responses (69%). The most common way of cooking and consuming eggs is frying, according to 68% male and 50% female respondents from all the places (60% from Belgrade, 55% from other cities and 62% from other populated places). As a benefit of eating eggs, the most frequent response is 'nutritive value' (43% respondents), whereas, the most frequent drawback is 'a risk of cholesterol' (19% respondents). Hence, one should pay particular attention to education on the importance of diet, at the level of the whole community.

Kroz anketno ispitivanje potrošači su se izjasnili o značaju uravnotežene ishrane, značaju jaja u ishrani i najčešćim načinima konzumiranja, prednostima i nedostacima jaja. Odgovori anketiranih potrošača obrađeni su po polu, starosti, zanimanju, obrazovanju i sredini u kojoj žive (grad Beograd, ostali gradovi, ostala naseljena mesta). Na osnovu rezultata ispitivanja može se zaključiti da je većini anketiranih potrošača važna uravnotežena ishrana (79% za muški i 87% za ženski pol), pri čemu se o ishrani kao veoma važnoj izjasnilo 41% muškaraca i 52% žena. Takođe, za većinu anketiranih potrošača zastupljenost jaja u ishrani je važna, a po ovom pitanju među pripadnicima različitih polova nema razlika (69%). Najčešći način pripreme, odnosno konzumiranja, su pržena jaja, kod oba pola (za muškarce je to 68%, a kod žena 50%) i u svim životnim sredinama u Beogradu 60%, ostalim gradovima 55% i ostalim naseljenim mestima 62%). Kao prednost jaja u ishrani potrošači su najčešće naveli hranljivost (43% ispitanika), a kao najčešći nedostatak strah od povećanja holesterola (19% ispitanika). Edukaciji o značaju ishrane, sa akcentom na značaj jaja kao visokovredne namirnice, trebalo bi posvetiti posebnu pažnju, na nivou celokupne društvene zajednice.
