AB  - The aim of this study was to determine the extent of changes in physico-chemical and sensory properties of dry fermented sausages where pork backfat was partly replaced by flaxseed oil used as liquid (FXL), after encapsulation (DM), and pie-emulsified with alginate (FXA) and soy protein isolate (FXI). During production and storage, similar pH values of all products were observed. FXL sausages had significantly lower (p (lt) 0.05) weight loss which led to significantly higher moisture content, significantly lower fat content, hardness and chewiness. Also, FXL sausages had the lowest grades in terms of sensory attributes, such as colour. odour. taste, texture and overall acceptability. Flaxseed oil preparations affected the parameters of instrumental colour analysis of sausages. All modified products had significantly higher yellowness (relative to control) and FXI sausages relative to other modified products. Regarding consumer sensory evaluation, FXA sausages stood out among modified products because all other modified products had significantly lower grades relative to control. The thirty-day storage period did not lead to significant changes (p>0.05) in any of the observed sensory characteristics.

Effect of extruded flaxseed enriched diet on physico-chemical and sensory characteristics of broiler meat

AB  - The aim of this experiment was to examine the effect of the addition of extruded flaxseed to chicken feed on physico-chemical and sensory characteristics of breast and leg-thigh meat. The basic chemical composition, pH value, instrumental colour and sensory characteristics of white (breast) and dark meat (leg-thigh) were examined by feeding two groups (both comprising males and females) of 500 Ross 308 hybrid line chickens by standard feed (control group) and with the addition of 6% of extruded flaxseed mixture (experimental group). Instrumental characteristics of colour were changed, especially in white meat. Both breast muscles of male broilers were significantly lighter, but a*values were significantly lower in m. pectoralis profundus and b*values higher in m. pectoralis superficialis of both genders. In dark meat, a*values were significantly lower in the meat of males, while b*values were higher in the meat of females. The addition of extruded flaxseed to chicken feed did not led to significant changes in the sensory characteristics of meat.
AB  - Cilj ovog ogleda je bio da ispita efekat dodavanja ekstrudiranog lanenog semena u ishranu pilića, na fizičko-hemijska i senzorna svojstva mesa. Na početku tova 1000 jednodnevnih pilića linijskog hibrida Ros-308 imali su ad libitum pristup vodi i hrani. Metodom slučajnog uzorka 28. dana su formirane dve jednake grupe (sa po tri ponavljanja svaka) i približno jednakim udelom polova: kontrolna grupa (CONM - mužjaci, CONF - ženke) hranjena standardnom hranom i ogledna (EXPM - mužjaci, EXPF - ženke) hranjena sa dodatkom 6% komercijalne mešavine ekstrudiranog semena lana. Ispitivan je osnovni hemijski sastav, pH vrednost, instrumentalna boja i senzorna ocena belog mesa (grudi) i tamnog mesa (batak sa karabatkom). U pogledu osnovnog hemijskog sastava utvrđen je jedino značajno manji sadržaj proteina tamnog mesa EXPF u odnosu na CONF. Način ishrane nije uticao na pH vrednost. Oba mišića (m. pectoralis superficialis i m. pectoralis profundus) muških pilića brojlera statistički su značajno svetlija (P  (lt)  0.05). Udeo crvene boje značajno se smanjuje kod m. pectoralis profundus, a žute povećava kod m. pectoralis superficialis, oba pola (P  (lt)  0.001). U tamnom mesu (m. biceps femoris) udeo crvene boje značajno se smanjuje (P  (lt)  0.05) kod mesa mužjaka, a udeo žute značajno raste (P  (lt)  0.05) kod mesa ženki. Nije utvrđen značajan uticaj načina ishrane na senzorsku ocenu belog i tamnog mesa.

Controlled nutrition produced pigs with higher concentrations of most minerals (muscle: Mn, Se, K, Mg; liver: Zn, Cu, Mn, Se, Cr, Ca; kidney: Zn, Cu, Mn, Se, K, Mg), but for Fe the opposite trend was found. Long-term free-ranging pigs have a higher risk of contamination by toxic elements (Cd exceeded the maximum residue level in kidney). Principal component analysis and cluster analysis were used to assess the effect of different pig breed/lifestyle (pig type) on element composition of muscle, liver and kidney of pigs. Multivariate data analysis showed good discriminating capabilities.

AB  - During the last 3 years, high aflatoxin M1 (AFM1) concentrations in milk and dairy products occurred in Serbia. It resulted in periodical change of the official regulations regarding maximum levels (MLs) of AFM1 as set by the Serbian Government. The aim of this study was to compare the occurrence of AFM1 in raw milk and dairy products during 2015 and also to determine whether there were some differences in AFM1 level among seasons. The AFM1 level exceeded the European Union ML in 29.3% of raw milk and 4.2% of milk product samples. The highest level of AFM1 in raw milk was found during the autumn season, while during the rest of the 2015, it was significantly lower. Although the improvement of dairy products safety was evident in 2015 when compared to 2013 and 2014, the cause of high concentrations in raw milk remained unresolved yet. This study indicates that dairy plants introduced control measures and refused reception of too high contaminated raw milk.

The importance of buffalo in milk production and buffalo population in Serbia

AB  - This research paper gives an analysis on the size of world's domestic buffalo populations, their milk production and the size of buffalo population in Serbia. Population of domestic buffalo in the world is constantly increasing so that in 2013 there were 199 783 549 individuals, out of which in India in the same year they raised 57.77% of buffalo world population, in Pakistan 18.87%, and in China 11.64%. The share of total world production of buffalo milk in total world milk production in 2012 was 12.92 % or 97 417 135 t out of which 67.76% was produced in India. In Serbia buffalo is raised in the regions of Raška (about 1000 individuals) and Kosovo. Populations of buffalo in central Serbia show a tendency of decreasing in size what was the reason to start a programme of in situ conservation 10 years ago. On the sample of buffalo population encompassed by the programme of conservation the body measures were analysed indicating that the population of buffalo is quite unequalised and that average values obtained for exterior measures are similar to the results obtained by the authors of earlier period for the population of buffalo in the area of former Yugoslavia.
AB  - U radu je analizirano brojno stanje domaćih bivola u svetu, proizvodnja mleka bivola, kao i stanje populacije bivola u Srbiji. Populacija domaćih bivola u svetu stalno raste i 2013. godine bilo je 199.783.549 grla, a od tog broja u Indiji je u 2013. godini gajeno 57,77% svetske populacije bivola, u Pakistanu 18,87%, a u Kini 11,64%. Učešće ukupne svetske proizvodnje bivoljeg mleka u ukupnoj svetskoj proizvodnji mleka 2012. godine bilo je 12,92 % ili 97.417.135 t, a od toga je 67,76% proizvedeno u Indiji. U Srbiji bivoli se gaje u području Raške oblasti (oko 1000 bivola) i na području Kosova. Populacija bivola u centralnoj Srbiji ima tendenciju smanjenja veličine, zbog čega je pre 10 godina počeo da se sprovodi program konzervacije. Na uzorku populacije (37 bivolica) obuhvaćene programom in situ konzervacije utvrđene su prosečne vrednosti za telesne mere. Visina grebena bivolica u populaciji koja je merena bila je 125,97 cm, visina krsta 126,98cm, dužina trupa 142,19cm, dubina grudi 68,75 cm, širina grudi 44,48cm, a obim grudi 184,25 cm. Populacija bivolica je bila dosta neujednačena što ukazuje na odsustvo odgajivačko-selekcijskog rada kod bivola u Srbiji u prethodnim decenijama.

Influence of different growing conditions on production, milk composition and body condition score for Alpina goat breed

AB  - This paper presents the results of testing the impact of different farming systems on milk production, milk composition (milk fat, protein and dry matter without fat) and body condition score of Alpine breed goats in different growing systems during one production year. Control of the amount and chemical composition of milk included a total of 59 French Alpine goats at the age of 2-3 years (2-3 lactations), which are divided into two groups with approximate similar body weight. In the first group of goats a stable diet was applied. Goats had a sufficient amount of alfalfa hay available (ad libitum) and the addition of about 0.5 kg of concentrate that is administered twice a day. Goats in the second group in addition to 0.5 kg of alfalfa hay, received 0.25 kg of concentrate and in the period from April to October during the day stayed at the outlet and the surrounding pasture. Control of body weight of goats and body condition were performed once every two months from March to October, while the rate of body condition (BCS) was given score of 1-5. Somatic cell count and chemical quality of milk were controlled on a daily basis in the laboratory for raw milk AD Mlekara - Subotica on the device CombiFoss 6200 FC. Both groups of goats had a statistically significant increase in production of milk (about 45 l) and the average daily milk yield (of about 0.15 l) in the second compared with the third lactation (p  (lt) 0.01). It was also determined statistically significant effect of lactation on content of protein, dry matter without fat (DMwF) and the number of somatic cells in milk in both groups of goats. Body condition score of the analyzed groups of goats varied over time, and statistically significant differences were found in July (p = 0.021) and September (p = 0.013), where goats from the second group that remained at the pasture in the examined period had higher scores for BCS compared with the first group.
AB  - U ovom radu prikazani su rezultati ispitivanja uticaja različitih sistema uzgoja na proizvodnju, sastav mleka (sadržaj mlečne masti, proteina i suve materije bez masti) i ocenu telesne kondicije koza rase Alpina u različitim sistemima uzgoja u toku jedne proizvodne godine. Kontrolom količine i hemijskog sastava mleka bilo je obuhvaćeno ukupno 59 koza francuske alpine u starosti 2-3 godine (2-3 laktacija), koje su podeljene u dve grupe sa približnom telesnom masom. Kod prve grupe koza primenjivan je stajski način ishrane. Koze su na raspolaganju imale dovoljnu količinu lucerkinog sena (ad libidum) kao i dodatak oko 0.5 kg koncentrata koji je davan u dva navrata u toku dana. Koze druge grupe su pored 0.5 kg lucerkinog sena, dobijale 0.25 kg koncentrata i u periodu od Aprila do Oktobra meseca su u toku dana boravile na ispustu i okolnom pašnjaku. Kontrola telesne mase koza i ocena telesne kondicije kontrolisane su jednom u dva meseca počev od marta do oktobra meseca, pri čemu je pri oceni TK davana ocena od 1-5. Broj somatskih ćelija kao i hemijski kvalitet mleka, kontrolisan je svakodnevno u laboratoriji za sirovo mleko AD 'Mlekare' - Subotica na aparatu CombiFoss 6200 FC. The utilisation of grapeseed oil in improving the quality of dry fermented sausages

AB  - This study aims to examine the scope of changes in colour, texture and sensory characteristics of fermented sausages by substituting 20% of backfat with grapeseed oil prepared as liquid (GS), encapsulated (EGS) and pre-emulsified [with soy protein isolate (GSI) and alginate (GSA)], and their stability during 30days of refrigerated storage. Protein and fat contents, pH and TBA values were not significantly different between products after production and storage. Treatments with added oil had higher weight loss (1.5-2.5%), while moisture content was significantly lowest in GS. Internal product colour evaluation showed the highest values of L*, b* and hue angle in GSI. GSI had the highest hardness and chewiness. Storage affected more surface than internal product colour, hardness was significantly changed only in GSI (lower) and EGS (higher), and increasing of TBA did not lead to significant differences between treatments. The study showed that GSA was the most promising of all treatments investigated.

Natural mycobiota and aflatoxin B1 presence in bee pollen collected in Serbia

AB  - Total fungal count, incidence of fungi and aflatoxin B1 (AFB1) concentration were studied in 33 samples of bee pollen randomly collected from beekeepers in Serbia. The total number of fungi was determined by dilution method whereas AFB1 was detected using the Enzyme-Linked Immuno-Sorbent Assay (ELISA). The mycological estimation showed the presence of nine genera of fungi as followed: Acremonium, Alternaría, Aspergillus, Cladosporium, Epiccocum, Fusarium, Mucor, Pénicillium and Rhizopus, with total number ranging from 1 x 103 to 1 x 105 CFU g-1. The results have shown the predominance of the fungi from the genera Aspergillus and Alternaria. Among Aspergillus species it was observed that the most frequent species was A. flavus with incidence of 27.27 %. Mycotoxin AFB1 was detected as 100% positive in all samples (100%) with an average concentration of 8.61 μg kg-1. The obtained results indicated that honey bee pollen must be strictly controlled during its manipulation in the harvesting and manufacturing. Therefore, the implementation of good manufacturing (beekeeping) practice to define procedures for honeybee products could be crucial to reduce the risk of possible contamination and provide natural and safety product without risk on the human health.
AB  - Ukupan broj gljiva, učestalost (incidenca) gljiva i koncentracija aflatoksina B1 (AFB1) ispitivani su u 33 uzoraka polena sakupljenih od pčelara iz različitih regiona u Srbiji. Ukupan broj gljiva određen je primenom metode razređenja a AFB1 je određen primenom imunoadsorpcione enzimske metode (ELISA). Mikološkim ispitivanjima identifikovano je devet rodova gljiva: Acremonium, Alternaria, Aspergillus, Cladosporium, Epiccocum, Fusarium, Mucor, Penicillium i Rhizopus, sa ukupnim brojem od 1 x 103 to 1 x 105 CFU g-1. Najučestalije vrste gljiva su u rodovima Aspergillus i Alternaria. Među Aspergillus vrstama najučestalija je vrsta A. flavus sa incidencom od 27,27%. AFB1 je detektovan u svim uzorcima sa prosečnom koncentracijom od 8,61 μg kg-1. Dobijeni rezultati ukazuju da pčelarski polen mora biti strogo kontrolisan tokom prikupljanja i njegove dalje prerade. Zbog toga, sprovođenje dobre proizvođačke (pčelarske) prakse podrazumeva definisanje procedura za pčelarske proizvode što bi moglo biti presudno za smanjenje rizika od moguće kontaminacije i dobijanje prirodnih i bezbednih proizvoda bez rizika po zdravlje ljudi.

Sucuk (Turkish-style dry-fermented sausage) quality as an influence of recipe formulation and inoculation of starter cultures

AB  - Six variants of beef, mutton and goat sucuk without (B, M, G) and with (Bs, Ms, Gs) starter cultures were examined. Chemical composition, proteolytic changes, color and sensory quality were observed. Starter variants had greater (P (lt) 0.05) weight loss (1.12-3.04%) and lower moisture content at production end (1.05-1.31%). pH reached minimum 4.80-4.91 (day 14) in variants with starters, while variants without starters 5.10-5.13 (day 30). Earlier disappearance of bands 100, 37-46 and 10kDa was observed in sarcoplasmic protein pattern of starter variants. Starter cultures had no major effect on myofibrillar proteins. Starter variants had greater L* values (47.07, 49.28, 50.45 as opposed to 42.81, 42.92, 45.87) and b* values (except B/Bs - 9.62, 11.53, 10.48 as opposed to 8.54, 9.87, 9.02). Assessors noticed greatest influence of starters on color, texture and taste. Application of starters had positive effects. Goat meat and mutton can be used with slight recipe modifications. PRACTICAL APPLICATIONSSucuk, dry-fermented sausage, is very common in the Middle East, Middle Asia and Southeastern Europe, and is one of the three most widespread fermented sausages in Serbia. Manufacturing of sucuk varies regionally, but in general, sucuk recipes consist of beef and beef fat and/or sheep tail fat. Sheep and goat farming is traditional in some parts of Serbia, and during the past years it has been on the increase (in some other parts of the country as well) because of dairy products. It was deemed necessary to establish the possibility of use of other types of meat available in a certain area (not only in Serbia, but also worldwide). Furthermore, according to data in written sources, the use of starter cultures may contribute to safety and sensory quality of the product.

AB  - In order to have a more precise description of dairy farm structure and characteristics of dairy production systems, as well as to assess possibilities for improving production and farming conditions in which milk production is organized, a survey based research was directed at a select group of farms across the Serbia. 1180 questionnaires have been mailed to farmers whose farms are registered for either cattle or mixed production. Questionnaire was divided into 6 sections: general information of the farm, agricultural and structural information, zootechnical information, sanitary and veterinarian information, information about education and extension, and information on the perspectives of future farming. About 59% of analyzed farms have size up to 20 ha, with average size of about 10 ha. On the other hand, about 55% farms raises up to 15 cows and heifers with average of 6 heads per farm, while 3% of farms have more than 200 cows and heifers. Over 86% of surveyed farmers intend to expand existing farm production, mainly by increasing the number of animals, stricter selection and improvement of the conditions for feeding, housing, care and milking. About 75% of farmers have expressed a positive expectation from future membership of Serbia in EU, although these expectations are not clearly defined.
AB  - U cilju preciznijeg opisa strukture mlečnih farmi i karakteristika sistema za proizvodnju mleka, kao i procene mogućnosti za unapređenje proizvodnje i farmskih uslova u kojima se proizvodnja mleka organizuje, sprovedena je anketa među poljoprivrednim proizvođačima (farmerima) širom Srbije. Ukupno je poslato 1180 anketa farmerima čije su farme registrovane za govedarsku ili mešovitu proizvodnju. Upitnik koji je poslat farmerima sastojao se iz 6 delova i obuhvatao je opšte informacije o farmi, poljoprivredne i strukturne informacije, zootehničke informacije, sanitarne i veterinarske aspekte proizvodnje, edukaciju i savetodavstvo, kao i perspektive budućeg poslovanja. Oko 59% analiziranih farmi ima veličinu do 20ha, sa prosekom od oko 10ha. Sa druge strane, na oko 55% farmi odgaja se do 15 krava i junica, sa prosekom od 6 grla po farmi. Preko 86% anketiranih farmera namerava da proširi postojeću proizvodnju i to uglavnom povećanjem broja životinja, strožijom selekcijom roditeljskih parova, kao i unapređenjem uslova ishrane, smeštaja i nege. Oko 75% anketiranih farmera izrazilo je pozitivna očekivanja od budućeg članstva Srbije u EU, iako ta očekivanja nisu uvek jasna ili precizno definisana.

Sensory acceptability of 'Sremska' sausage made from meat of pigs of different ages

AB  - Dry fermented sausages are one of the most valued groups of meat products. Specific environmental conditions determined the production technology, which has remained mostly unchanged until the present day. These products possess specific, sometimes unique sensory characteristics. One of the most famous product in our country, belonging to this group, is Sremska sausage. Traditionally, Sremska sausage was made from meat of late maturing pig breeds that were slaughtered at the age of over 12 months and which, during the last decades, for well-known reasons, were suppressed by modern breeds and their crossbreeds. Today, meat of pigs of about six months of age, as well as pigs older than 12 months, is used for sausage production. Taste and aroma of dry and fermented products are formed, among other things, by the activity of endogenic proteinases, peptidases and lipase and it is well-known that their levels and activity are conditioned by the age of pigs. Colour intensity and stability, another important sensory parameter indicating the quality of fermented sausages, is closely associated with the colour of meat used in production, while the texture is a result of complex influences, including composition and quality of fatty tissue, dynamics and intensity of pH changes and presence of connective tissue in fresh meat. This paper examines the impact of pig age on biochemical and sensory parameters in Sremska sausage during production and three-month storage period. Meat and fatty tissue used in the experiments were from Swedish Landrace, more specifically six-month old fatteners (variant A) and 12-month old cull sows (variant B). Biochemical changes in sausages made from meat of pigs between six and 12 months of age basically differed only slightly. Dynamics of pH value changes and the content of non-protein nitrogen showed similar tendencies, as well as the electrophoretic profiles of sarcoplasmic and myofibrillar proteins. The impact of pig age on sensory characteristics of Sremska sausage was pronounced. Variant A sausages had the best appearance and texture when compared to variant B on days 14, 60 and 105 of the experiment. The colour of product A was also more appealing during the experiment. As for taste and aroma, variant A was inferior on day 14, but during storage, the taste and aroma of this variant improved, unlike those of variant B, in which these parameters deteriorated. Variant A sausages had much lighter cross-section (P  (lt)  0,05). On the surface and the cross-section of variant A, statistically significantly higher participation of red colour (a*) was registered, than in variant B.
AB  - Suve fermentisane kobasice poseduju specifične, nekada jedinstvene senzorne karakteristike. Sremska kobasica je jedan od najpoznatijih proizvoda iz ove grupe proizvoda u našoj zemlji. Tradicionalno se sremska kobasica proizvodila od mesa kasnostasnih rasa svinja, starijih od 12 meseci, koje su tokom prošlih decenija potisnutle plemenite rase svinja, i njihovi melezi. Danas se, najčešće, koristi meso tovljenika starih oko 6 meseci i meso svinja starijih od 12 meseci. Ukus i miris sušenih i fermentisanih proizvoda formiraju se, između ostalog, aktivnošću endogenih proteinaza, peptidaza i lipaza, a njihov nivo i aktivnost uslovljeni su starošću svinja. Intenzitet i postojanost boje u tesnoj je vezi sa bojom mesa koje se koristi, a tekstura je rezultat složenih uticaja, od kojih se ističu: sastav i kvalitet masnog tkiva, dinamika i intenzitet promena pH vrednosti, kao i razvijenost vezivnotkivnih komponenti sirovine. Ispitivan je uticaj starosti svinja na biohemijske i senzorne parametre sremske kobasice tokom proizvodnje i tromesečnog skladištenja. Korišćeni su meso i masno tkivo svinja rase švedski landras, i to: šestomesečnih tovljenika (varijanta A) i krmača starih 12 meseci izlučenih iz priploda (varijanta B). Biohemijske promene, u osnovi, se malo razlikuju. Dinamika promene pH vrednosti, sadržaj neproteinskog azota i elektroforetski profili sarkoplazmatskih i miofibrilarnih proteina, u obe varijante, pokazuju veoma slične tendencije. Uticaj starosti svinja na senzorne karakteristike ispitivanih varijanti sremske kobasice je izražen. Kobasice varijante A imale su bolji spoljašnji izgled i boju. U pogledu mirisa, varijanta A, je na početku ogleda, bila inferiorna, ali se tokom skladištenja miris ove varijante poboljšavao, za razliku od varijante B, kod koje se miris pogoršavao. U toku čuvanja, ukus varijante B ocenjen je sličnim ocenama, dok se ukus varijante A poboljšao. Na površini i na preseku kobasica varijante A utvrđeno je statistički značajno veće učešće crvene boje, a, takođe, su i značajno veće svetloće na preseku.
