AB  - Climate change and the emergence of new animal diseases emphasize the need to maintain and conserve plant and animal resources because of their adaptive capacity. For hundreds of millions of poor rural households, livestock produc-tion and crop farming are a key resource for life. Livestock production has great contribution and is vitally important for the life and safety of crop production. Conservation of animal genetic resources is not easy and simple, but it is of con-cern that in the past some animal genetic resources have been lost before their characterization and their genetic potential has not been studied. It is known that with the loss of a single breed or strain, the genetic diversity contained within also disappears. That is why it is necessary to continuously work on the conservation of animal genetic resources using various methods of conservation. The preservation and improvement of livestock production and animal genetic diversity, the preser-vation and the development of locally adapted (autochthonous) new breeds, as well as the preservation of genetically diverse populations provide society with a greater range of options to meet future challenges and further develop agriculture.

Effect of immunocastration on sex glands of male Mangulica (Swallow-bellied Mangalitsa) pigs

AB  - The objective of this research was to study the effect of immunocastration
on the morphometric characteristics of sex glands in male Swallow-bellied Mangalitsa
pigs. The study included 24 animals (13 entire and 11 immunocastrated males). The
research focused on the following traits: age at slaughter (days), live weight at slaughter
(kg), growth rate (kg day−1), and morphometric testicle traits (volume, cm3; weight, g;
length, width, thickness, and circumference, mm). The efficacy of immunocastration
was determined based on androstenone and skatole levels in adipose tissue. The
group of immunocastrated animals had higher body weight at slaughter (+18.8 kg)
due to higher average daily live gain (+87 g). Immunocastration resulted in reduced
morphometric measures of testes. The volumes and weight of testes/epididymes were
reduced by 28.9-54.4 and 32.1-53.3%, respectively. Testis length and other size-related
traits were significantly reduced by 17.4-27.6%. The linear regression effect of live body
weight at slaughter within the immunocastrated group on testis measurements was not
significant. Within the entire group of males, the increase of live body weight at slaughter
by 1 kg had an effect on the increase of volume and weight of testes/epididymes by
0.55-2.24 cm3 and 0.52-2.28 g, respectively. Other size-related testis traits increased
by 0.04-0.55 mm for each kg of body weight. Immunocastration also resulted in
79.6% decrease in the weight of accessory sex glands. The present study is the first to
demonstrate that immunocastration could be a method of choice for castration of the
local fatty pig breed, Mangulica (Swallow-bellied Mangalitsa).

AB  - Indigenous breeds of pigs are adapted to the specific areas in which they were created. In terms of scientific substantiation, their production potential and the products
obtained from them are, as in the case of Moravka pig, practically untapped. The main
objective of the present chapter is to present history and current status of this breed,
breeding area, its performance, production systems and main products from this local
breed of pigs. Reproductive traits were estimated by means of sow age at first farrowing,
litter size, weaning weight, duration of lactation and length of the farrowing interval.
Growth performance was estimated by means of average daily gain and average daily
feed intake in the early, middle, late and overall fattening stage. Carcass performance
was evaluated by means of slaughter weight, hot carcass weight, carcass yield, lean meat
content, loin eye area, the back fat thickness at the level of the last rib and withers and
the back fat and muscle thickness above the gluteus medius muscle. Meat quality traits of
the longissimus muscle were evaluated by means of pH at 45 min and 24 h after slaughter, objective colour (CIE L*, a* b*), intra muscular fat content and fatty acid content of
intramuscular fat.

the greater importance will be attributed to the resistance and adaptability of the
breed. In terms of scientific substantiation, their performances and products are, as in
the case of Mangalitsa pig, practically untapped. Thus, the aim of the present chapter
is to present history and current status of Mangalitsa pig breed, its exterior phenotypic characteristics, geographical distribution, production management and main
products from this Serbian autochthonous breed of pigs, one of the local pig breeds
investigated in the project TREASURE. Moreover, a collection and review of available
literature data, available until August 2017, on reproductive and productive traits of
Mangalitsa pig breed were carried out. Mangalitsa is a late and extremely fatty pig
breed with low fertility, long suckling period and a very weak-slow growth. Although
studies on Mangalitsa pig are scarce, the current review gives the first insight into this
local pig breed.

Treasure - Mangalitsa Local Pig Breed In Serbia

AB  - The main objective of this paper is to present the results of the research of the Swallow belly Mangalitsa genotype in the last six decades. According to the research, females reach the full maturity the age of 9-10 months, but they are mated at the age of 1-1.5 years. Average age at first farrowing is 556 days. Reproductive ability is poorly expressed, with a strong maternal instinct. Fertility of the Mangalitsa is relatively poor because it gives birth to 1-12 piglets, on average 4 to 5 piglets, with an average body weight of 1.25 kg with a variation of 0.8 to 1.8 kg. The suckling period is about 50 days (from 47 to 53 days). At lactation duration of 60 days, the piglet weight at the weaning ranges from 6-13 kg (average 9.61 kg) for piglets born in the spring, and from 7-15 kg (average 9.50 kg) for piglets born in fall. Depending on the rearing system, the start of fattening and final body weight, gains range 268 g to 830 g. The fat thickness (average measurements) at the ridge was 10.2 cm, the middle of the back 7.9 cm and the rump 8.1 cm, in previous studies, while in recent studies these values of fat thickness are somewhat lower, with the pre-slaughter body weight also being lower (the ridge 6.18 cm, the middle of the back 4.38 cm and at the rump 5.19 cm). The recent research of the Longissimus dorsi muscle shows an intramuscular fat content of 13.5%, protein content of 21.1% with specific qualitative properties pH45=6.11; pH24=5.50; CIE L*=40.13; a*=11.77; b*=3.73). In the musculus longissimus lumborum and thoracis, Mangalitsa (Swallow-bellied) pigs show higher levels of monounsaturated fatty acids (MUFA 55.1%) and lower levels of saturated fatty acids (SFA 35.3%) in comparison with Swedish Landrace pigs.

AB  - The main objective of this paper is to present characteristics of autochthonous pig breed Moravka, reared in the previous century, as well as results of investigations of production performance in the last ten years. A collection of available literature data on reproductive, growth, carcass and meat quality traits of Moravka breed was carried out. According to research studies done in the 50-ies of the last century, Moravka females reached sexual maturity at about 5-6 month, whereas breeding maturity was at age of 10-12 months. Average litter size (different parities) was 6.8-8.2 born alive piglets (1.2 kg birth weight). Lactation lasted around 60 days. At weaning piglets weighed 8.7-10.4 kg (i.e. 120-150 g daily gain). Recent studies show that in average the age at first farrowing was 373±10 days, litter size 8.6±1.7 born piglets, and duration of lactation 46.8±3.4 days. Regarding growing/fattening results, only one of old studies reported daily gain in growing phase which was in average 186-197 g (depending of sex), whereas depending on type of feeding and season daily gain for fattening phase was reported between 490 and 660 g (for pigs on feed mixture and intake between 2.5 to 3.2 kg). Reported feed conversion ratio was from 4.4 to 5.1 kg/kg feed mixtures. A more recent research reported piglets to have 31.9 kg at 192 days denoting a growth rate of about 160 g/day in growing phase, whereas pigs fattened from 32 to 94 kg with maize grew 385 g/day (reported feed conversion ratio was 3.74). Backfat thickness (average of measurements along split line) was app. 7 cm (from about 4 to 9 cm) in earlier and app. 4 cm (from about 3 to 6 cm) in recent studies, but it must be noted that slaughter weight was considerably lower in recent studies. The newest research on Longissimus dorsi muscle showed intramuscular fat content of 7.0±0.6%, 21.5±0.2% of proteins with the specific quality traits (pH45=6.53±0.13, pH24=5.65±0.05; CIE L*=48.9±1.4, a*=12.0±1.0, b*=5.9±0.4).

AB  - Extremely rich genetic funds of animals obtained by natural selection through the centuries are very important resources of Serbia. In Serbia, surgical castration of male animals in first week post partum is a usual practice to avoid boar taint. Considering that Mangalitsa sows are good mothers and most aggressively protect the piglets we tested the alternative to physical castration. The aim of this study was to examine the effect of method of castration (physical or immunocastration) on growth potential of indigenous pig breed Mangalitsa Swallow Bellied. Investigation included surgically castrated (SC; n=12) and immunocastrated (IC; n=11) male pigs, fed ad libitum a feed mixture with 12-13 MJ ME/kg; 13-15% crude protein (two-phase feeding). The experiment started at 24.4 weeks of age when average body  weight (ABW) of SC pigs was 24.3 kg and of IC pigs 28.4 kg. Immunocastrates were vaccinated with Improvac® (Zoetis-Pfizer) at 39 (V1) and revacinated at 46 (V2) weeks of age (WA). Pigs were slaughtered 6 weeks after V2. Until V1 when IC are actually entire males, growth rate was slightly lower in IC than SC pigs (446 vs. 495 g/day, respectively).  Established difference was statistically significant (P=0.03). In the period between V1 and V2 growth rate was alike in IC and SC (454 vs. 448 g/day, respectively; P=0.92). Overalluntil V2, there was no difference in ABW between IC and SC pigs (99.2 vs. 100.2, respectively; P=0.89). The maximal growth rate (689 vs. 683 g/d for SC and IC, respectively) was observed between 35 and 39 WA. In the period after V2 until the end of the fattening period growth rate was significantly higher (P=0.002) in IC than SC pigs (548 g vs. 392 g, respectively) in agreement with higher feed intake of IC than SC (3.2 vs. 2.7 kg/pig/day recorded on a pen basis). Present results on the indigenous Mangalitsa breed confirm what has been previously demonstrated in modern breeds, i.e. that after the effective immunisation the pigs increase their feed intake and consequently growth rate.

AB  - Fatty acids composition of m. longissimus dorsi (MLD) of Moravka pigs was analyzed considering also the effect of sex and body weight of pigs at slaughter. Pigs were reared in facilities with the openaire section and fed a complete feed mixtures adapted to the stage of growth (from 20-60 kg mixture I: 15.50% of crude protein (CP) and 12.95 MJ metabolisable energy (ME)/kg,; from 60-120 kg mixture II: 13.00% CP and 13.05 MJ ME/kg). The study included 21 pigs (12 castrated males and 9 females). Pigs were slaughtered at 339±30 days of age and 112.8±19.9 kg of live weight. MLD of Moravka pigs had the following fatty acids composition: 41.8 % saturated fatty acids (ΣSFA), 54.0% monounsaturated fatty acids (ΣMUFA) and 4.1% polyunsaturated fatty acids (ΣPUFA) resulting in value 0.10 for the ratio of polyunsaturated to saturated fatty acids (P/S). Fatty acids C16:0 and C18:0 represented the largest share of ΣSFA (61.7 and 34.3 %, respectively), C18:1 and C16:1 the largest share of ΣMUFA (90.1 and 7.1%, respectively), and C18:2 the largest share of ΣPUFA (93.5%). With regard to sex effect, castrated males exhibited higher content of saturated fatty acids C14:0 (1.42 vs. 1.26, P=0.046) and C18:0 (15.07 vs. 13.38, P=0.025) than females. Significant effect (P<0.05) of body weight was observed on some fatty acids; thus 1 kg increase of slaughter weight was accompanied with 0.036% decrease of linoleic acid (C18:2n-6), 0.038% decrease of total content of polyunsaturated acids (ΣPUFA), 0.020% increase of palmitoleic acid (C16:1cis-9), 0.067% increase in total content of monounsaturated fatty acids (ΣMUFA), 0.003% increase of C17:0. Ratio P/S decreased by 0.001 unit per kg increase of slaughter weight. In agreement with their high relative content, a strong correlation (rP=0.79 and rP=0.77) was found between C16:0 and C18:0 and total content of saturated fatty acids (ΣSFA), between C16:1cis-9 and C18:1cis-9 and ΣMUFA (rP=0.80 and rP=0.98, p<0.001), and between linoleic acid (C18:2n-6) and ΣPUFA (rP=0.99, p<0.001).

During the winter, the fatteners were kept in wooden stables and fed with cereals (corn and barley mixture in a ratio of 70:30, approx. 3 kg per day). The data was carried out by statistical package SAS 9.1.3 (SAS Inst. Inc., 2002-2003) and basic statistical parameters are showed (Mean±SD). At the end of fattening, the pigs were about one year old, and slaughtered at 92.0±16.7 kg live body weight. The average lean content in the carcasses was 35.9±2.8 %, while the content of intermuscular fat in MLD was 6.2±1.2 %. In the MLD samples average content of proteins, water, fat and ash were 20.7±0.5 %, 70.4±0.5 %, 7.7±0.5 % and 1.0±0.1 %, respectively. Average cholesterol content was 41.4±3.8 mg/100g. Within ΣSFA the most common was palmitic acid (C16:0, 24.7±0.6 %), wile within ΣMUFA it was oleic acid (C18:1c-9, 46.9±1.1 %) and within ΣPUFA it was linoleic acid (C18:2n-6, 5.6±1.0 %). ΣPUFA and ΣSFA ratio was 0.2±0.0, while omega-6 and omega-3 ratio was 25.1±5.6. Showed ratios are not desirable from the nutritional aspect of human diet.

Within ΣSFA the most common was palmitic acid (C16:0, 24.7±0.6 %), wile within ΣMUFA it was oleic acid (C18:1c-9, 46.9±1.1 %) and within ΣPUFA it was linoleic acid (C18:2n-6, 5.6±1.0 %). ΣPUFA and ΣSFA ratio was 0.2±0.0, while omega-6 and omega-3 ratio was 25.1±5.6. Showed ratios are not desirable from the nutritional aspect of human diet.",

The average number of piglets born alive (for a period of four years) of SBSM was the lowest from 4.37 to 4.81; in case of M and R, this value was significantly (P (lt) 0.001) higher (from 5.75 to 8.17 and for R breed 6.40 to 9.00). With average duration of suckling period (duration of lactation - DL) of 52.92 days in the first year for the breed SBSM with the lowest number of reared piglets (NRP=4.10) whereas the DL for M and R breeds was shorter (from 45.75 to 52.03 day) with a higher NRP (from 4.57 to 8.92 reared piglets).
AB  - Cilj ovog rada je bio da se utvrdi fenotipska varijabilnost osobina plodnosti autohtonih rasa mangulice (lasasta mangulica-SBSM), moravke (M) i resavke (R). Autohtone populacije svinja obično čini prilično mali broj aktivnih nerasta i krmača. Informacije o poreklu često nedostaju ili su nedostupne, kompletan fenotipski opis obično nije dostupan za većinu ovih populacija koje su vrlo dobro prilagođene specifičnim lokalnim agro-klimatskim uslovima. Kod kontrolisanih zapata, u periodu od četiri godine, prosečan uzrast pri prvom prašenju (AFF) iznosio je 18,5 meseci sa velikom varijacijom od 5,9 meseci kod lasaste mangulice. Fertility of boars: What is important to know

AB  - The most important part in reproductive management is the control of boar fertility. A common division of fertility traits is on the: in vitro (sperm traits) and in vivo (return rate, farrowing rate and litter size traits) fertility. In many studies were found differences between breed in the both groups of fertility traits. Variability of sperm traits of boars during the reproductive exploitation is influenced by various genetic (boar, breed) and paragenetic factors/effects (age, season, intensity of use). Good libido is desirable characteristics in boars, but the knowledge of the correlation of libido and boar fertility traits are limited. Also, there is no standardised procedure or methods for the estimation of libido of the boars. The permanent ranking of boars according to the reproductive efficiency should be performing. Good reproductive management implies the timely identification of boars with the low fertility (or close to the average).
AB  - Najvažniji segment u reproduktivnom menadžmentu je kontrola plodnosti nerasta. Uobičajena je podela osobina plodnosti na: in vitro (osobine sperme) i in vivo (procenat povađanja, procenat prašenja i osobine veličine legla) plodnost. Mnoga istraživanja pokazala su razlike između rasa u obe grupe osobina plodnosti. Varijabilnost osobina sperme nerasta tokom iskorišćavanja pod uticajem je različitih genetskih (nerast, rasa) i paragenetskih (starost, sezona, intenzitet korišćenja) faktora. Dobar libido je poželjna karakteristika nerasta, ali saznanja o povezanosti libida i plodnosti nerasta su ograničena. Takođe ne postoji standardizovana procedura ili metod za ocenu libida nerasta. Neophodno je stalno rangiranje nerasta na osnovu reproduktivne efikasnosti. Dobar reproduktivni menadžment podrazumeva pravovremenu identifikaciju nerasta sa niskom plodnošću (ili blizu proseka).

Correlation of litter size traits

AB  - Heredity and correlation of litter size traits were observed in 3693 litters, i.e. in 1622 daughters of two genotypes Swedish Landrace genotype - SL; and F1 ♀ SLxLW. The study included daughters (minimum ten daughters per sire) of 24 sires. Heritability estimates for the total number of piglets per litter in the first, the first two parities, and for all three parities was 0.174; 0.167 and 0.135. Heritability estimates for the number of piglets born alive were 0.181; 0.160 and 0.121, and for the weight of litter at birth 0.166; 0.174 and 0.150. On the other hand, very low heritability was determined for the number of weaned piglets, litter weight of piglets reared, individual weight of born and reared piglets, i.e. for the traits that are under greater influence of the environment (from 0.004 to 0.037). Phenotypic and genetic correlations ranged from weak to complete (rp = 0.021 to rp = 0.973 and rg=0.188 to rg=0.999, respectively). Analysis of the significance of correlations showed that the genetic correlations were statistically highly significant (P  (lt) 0.01).

Differences in meat colour between free-range Swallow Belly Mangalitsa and commercially reared Swedish Landrace pigs during 6 days of vacuum storage

AB  - The influence of storage on meat colour differences between free-range Swallow Belly Mangalitsa (MA, n = 19) and commercially reared Swedish Landrace (SL, n = 17) pigs, are investigated in the present study. Proximate composition analyses were done on fresh samples of M. longissimus thoracis (LT) and M. gluteus medius (GM), while pH values and colour quality attributes were determined on fresh cuts of the muscles (day 1) and after 3 and 6 days of vacuum storage at 4 +/- 1 degrees C. MA pork had a significantly higher share of intramuscular fat, a darker colour, a higher deoxymyoglobin (Mb) content and oxy / met (oxymyoglobin / metmyoglobin) ratio, higher pH(24h) values and a slower pH decline compared to the control SL group (P  (lt)  0.05). Greater changes in myoglobin forms during storage were observed in MA pork, which were reflected in a significant decrease in the content of Mb and an increase in the oxy / met ratio (P  (lt)  0.05). After 6 days of vacuum storage, higher pH(6d) values, a lower metmyoglobin (MetMb) content and a higher oxy / met ratio of MA pork lead to the conclusion that aged meat from free-range Swallow Belly Mangalitsa pigs had better colour quality compared to Swedish Landrace pigs.

abstract = "The influence of storage on meat colour differences between free-range Swallow Belly Mangalitsa (MA, n = 19) and commercially reared Swedish Landrace (SL, n = 17) pigs, are investigated in the present study. Proximate composition analyses were done on fresh samples of M. longissimus thoracis (LT) and M. gluteus medius (GM), while pH values and colour quality attributes were determined on fresh cuts of the muscles (day 1) and after 3 and 6 days of vacuum storage at 4 +/- 1 degrees C. MA pork had a significantly higher share of intramuscular fat, a darker colour, a higher deoxymyoglobin (Mb) content and oxy / met (oxymyoglobin / metmyoglobin) ratio, higher pH(24h) values and a slower pH decline compared to the control SL group (P  (lt)  0.05). Greater changes in myoglobin forms during storage were observed in MA pork, which were reflected in a significant decrease in the content of Mb and an increase in the oxy / met ratio (P  (lt)  0.05). After 6 days of vacuum storage, higher pH(6d) values, a lower metmyoglobin (MetMb) content and a higher oxy / met ratio of MA pork lead to the conclusion that aged meat from free-range Swallow Belly Mangalitsa pigs had better colour quality compared to Swedish Landrace pigs.",

Reliability of the PIGLOG assessment of meatiness and correlation of carcass quality properties

AB  - The aim of the work was to determine the reliability of measurement using PIGLOG 105 of fat thickness (SL1 and SL2), the depth of Musculus longissimus (ML) and to estimate the meatiness in living and slaughtered animals (dissection on the slaughter line according to the Ordinance of R. Serbia). The study was conducted on 170 animals of two genotypes: Swedish Landrace (n = 73) and F1 crosses SLxLY (n = 97), of both sexes (castrated males n = 79 and females n = 91). The average fat thickness was determined at an average body mass of 109.6 kg using PIGLOG 105 - SL1 = 14.55 mm, SL2 = 12.74 mm, while the thickness of the fat was determined by dissection, and the following values were determined on the same locations: SL1 = 16.42 mm, SL2 = 14.19 mm. Depth of ML established using PIGLOG 105 was 47.59 mm, while the greater depth of ML was obtained by dissection (55.58 mm). Percentage and meat yield determined with PIGLOG 105, dissection and JUS were 55.77%; 57.72% and 49.36 kg and 44.42% and 38.64 kg, respectively. Based on these results obtained, we can see that JUS has significantly lower absolute values for percentage and yield of meat compared to PIGLOG 105 and dissection. It was found that there is a statistically significant difference  between the estimated meatiness values. Correlations between traits measured using PIGLOG 105 and the same values determined on dissected carcass sides are as follows: strong for SL1 (r = 0.724), very strong for SL2 (r = 0.820), and medium for the depth of ML (r = 0.447 ). The correlation for the percentage of meat is very strong (r = 0.787). There were statistically highly significant correlations for the meatiness estimated using PIGLOG 105 and dissection.

AB  - Conjugated linoleic acid (CLA) is a mixture of the geometric isomers of linoleic acid. Studies have found that feeding animals with the addition of CLA has various positive effects, such as improved feed conversion, reduction of the amount of fat tissue and improvement of the quality of the resulting meat. The reason for the great interest in this compound is also its potential health effects on humans, such as anticancer effect, enhancing the immune system, reducing the occurrence of cardiovascular diseases and the like. Feeding pigs with the addition of CLA is gaining importance in recent years, because it affects the reduction of the thickness and share of subcutaneous fat tissue and the increase of lean meat/meat yield of the carcass without negative impacts on the quality of the resulting meat. Increased content of intramuscular fat, i.e. marbling in meat and fatty-acid changes in the composition of meat have been determined. Increasing the content of saturated fatty acids in the fat and muscle tissue improves technological characteristics and oxidative stability of meat. In addition, due to the incorporation of CLA isomers in the tissues of animals and its health benefits, this type of diet can be a method for obtaining the pork with the features "of functional foods." However, all these positive effects have not been confirmed in each of the experiments focusing on feeding pigs with CLA, because there are many factors that affect its efficiency.

AB  - In this paper, the comparative investigations on chemical content, fatty acid profiles and sensory properties of traditional fermented dry kulen sausages are presented. Five types of kulen sausages were made, which varied depending on the percentage of meat and fat derived from different pig breeds: autochthonous (Mangalitsa and Moravka) and commercial (Swedish Landrace). Kulen sausages made from Mangalitsa and Moravka pork meat had the lowest moisture and protein content and the highest total amount of fat. Sausages made from the combination of Mangalitsa and Moravka meat were superior in terms of odor, taste, aftertaste and overall acceptability. The highest cholesterol content was found in sausages made from meat of the autochthonous pig breeds. However, sausages made from the meat of Mangalitsa pigs contained higher levels of monounsaturated fatty acid and unsaturated fatty acid, and lower saturated fatty acid levels. This research indicates that pig breed affects the chemical and sensory characteristics of traditional dry fermented sausages.

AB  - The objective of this study was to determine the chemical composition and fatty acid content in m. longissimus dorsi (MLD) of two indigenous pig breeds (ML - Swallow-belly Mangalitsa and M - Moravka) reared in free range farm conditions and fed complete mixtures used for commercial meat pig genotypes. The body mass of ML and M pigs at slaughter was, on average, 107.14 and 107.61 kg, respectively. In MLD of M pigs, more total fat was measured compared to ML breed (6.96 % compared to 5.10 %, P (lt) 0.05). Protein content in MLD of ML pigs was higher by +0.92 % (P (lt) 0.01) compared to M pigs. Male castrates of M pigs had more fat compared to gilts of the same breed (8.64 compared to 5.29 %), and the 3.35 % difference between mean values was statistically significant (P (lt) 0.05). The breed of pigs influenced the total saturated fatty acids (P=0.011) and mono-unsaturated fatty acid (P=0.003) contents, but not the content of polyunsaturated fatty acids (P=0.325). In the case of saturated fatty acids in the MLD of ML and M pigs, the most common were C16:0 (25.05 % and 25.53 %) and C18:0 (12.73 % and 14.40 %). The MLD of M pigs contained 1.67 % more stearic acid compared to ML pigs (P=0.004). Pigs of ML, compared to M pigs, had more C18:1cis-9 (+2.31 %), C16:1 (+0.49 %), C17:1 (+0.10 %) and less C20:1cis-11 (-0.25 %). The content of two essential fatty acids, C18:2n-6 and C18:3n-3, did not vary according to breed or sex of pigs (P>0.05). The n-6/n-3 ratio was higher than optimal (18.7 for breed ML and 13.7 for M).

AB  - The purpose of this study was to investigate the relationship between the carcass weight and the level of skatole in boar back fat samples with descriptive sensory profiles ( trained sensory panel) immediately after heating the fat samples ( warm). A weak correlation was found between the carcass weight and skatole level in fat ( P > 0.05). Between skatole levels in the fat of boars, whose carcass weight was below 70 kg, and of those with the carcass weight equal or above 70 kg, there was a statistically significant difference ( P  (lt)  0.05). The average content of skatole in the fat tissue of the boars  (lt)  70 kg, ( 0.18 +/- 0.09 mg/kg fat, respectively) was below the commonly used respective thresholds for tainted meat ( 0.20 mg/kg fat), 53% of the samples showed the values of  (lt) = 20 mg/kg, and 73% of the samples the values of  (lt) = 25 mg/kg. In the group >= 70 kg ( 0.40 +/- 0.39 mg/kg fat, respectively), 80% of the samples revealed the values of >= 20 mg/kg, and 66% of the samples the values of >= 25 mg/kg. Our results show that a positive, compelling and statistically highly significant correlation exists between the skatole level and the sensory assessment of skatole intensity in fat.

AB  - U ovom radu prezentovani su rezultati ispitivanja sadržaja skatola u masnom tkivu mladih nerastova kao i njegova zavisnost od mase trupova mladih nerastova. Polovina ispitivanih trupova imala je masu ispod 70 kg, a druga polovina, jednaku, ili veću od 70 kg. Prosečan sadržaj skatola iznosio je 0,296 ìg/g masnog tkiva, i imao je jako slabu korelacionu zavisnost sa masom trupova (rxy = 0,129). Prosečan sadržaj skatola u masnom tkivu mladih nerastova, čija je masa trupova bila ispod 70 kg iznosio je 0,186 ìg/g, dok je kod mladih nerastova sa masom trupova iznad 70 kg prosečan sadržaj skatola iznosio 0,406 ìg/g. Između prosečnog sadržaja skatola u masnom tkivu mladih nerastova mase trupa ispod i iznad 70 kg postoji statistički značajna razlika (P  (lt)  0,01). Prema našim rezultatima, u 46,67 posto uzoraka masnog tkiva sadržaj skatola iznosio je više od 0,25 ìg/g, a u 63,33 posto uzoraka sadržaj skatola kretao se u opsegu 0,20 ìg/g do 0,25 ìg/g. .

AB  - The effect of sire breed (Swedish landrace and large White), sires within the breed, genotype, sex and season of birth of offspring on age at slaughtering, back fat thickness measured on three points (withers, center of the back and rump), length of carcass side Os pubis-atlas and Os pubis-first rib, yield and share of meat in warm carcass sides of average mass of 81,39 kg, using Yugoslav standards, was investigated. Results obtained show that investigated traits of offspring varied between sire breeds, genotype and sex (P (lt) 0,01). Sires within Swedish Landrace influenced (P (lt) 0,01) variation of back fat thickness (center of the back, rump, back+rump), age at slaughtering, length of carcass side Os pubis-atlas and Os pubis-first rib, but no effect was established on yield and share of meat (P>0,05). Sires within Large White breed had no effect on age at slaughtering and length of carcass side (P>0,05), whereas on other traits influence was demonstrated (P (lt) 0,01 and P (lt) 0,05). Season of birth had influence in the second model (P (lt) 0,05) on age at slaughtering and in both models on length of carcass side Os pubis-atlas and Os pubis-first rib (P (lt) 0,01 and P (lt) 0,05), whereas on other investigated traits no effect was established (P>0,05). Age, back fat thickness, length of carcass side and yield of meat were dependent on the mass of warm carcass sides.
AB  - Ispitivan je uticaj rase oca (švedski landras i veliki jorkšir), očeva unutar rase, genotipa, pola i sezone rođenja potomaka na uzrast pri klanju, debljinu slanine merene na tri mesta (greben, sredina leđa i krsta), dužine polutke Os pubis-atlas i Os pubis-prvo rebro, prinos i udeo mesa u toplim polutkama prosečne mase 81,39 kg, primenom Jugoslovenskog standarda. Rezultati koji su dobijeni pokazuju da ispitivane osobine potomaka varirale između rase očeva, genotipa i pola (P (lt) 0,01). Očevi unutar rase švedski landras su uticali (P (lt) 0,01) na variranje debljine slanine (sredina leđa, krsta, leđa+krsta) i (P (lt) 0,05) na uzrast pri klanju, dužine polutke Os pubis-atlas i Os pubis-prvo rebro dok na prinos i udeo mesa nije ispoljen uticaj (P>0,05). Očevi unutar rase veliki jorkšir nisu uticali na uzrast pri klanju i dužine polutki (P>0,05) dok su na ostale osobine ispoljili uticaj (P (lt) 0,01 i P (lt) 0,05). The effect of age of fatteners at slaughtering on slaughter values of Swedish landrace pigs

AB  - In order to investigate the effect of age of fatteners at slaughtering on quality of carcass sides, investigation in 115 fatteners of Swedish Landrace breed were carried out. Three groups of animals of different age were formed with different number of fatteners in the group, equal in regard to sex of animals which all come for same farm in Serbia. Highly significant (**P (lt) 0,01) effect of age of fatteners at slaughtering on quality of carcass sides was established. Considering the negative sign with the coefficient b, we can conclude that the negative regression of age on quality of carcass sides was observed. The oldest fatteners (>260 days) had the lightest carcass sides (65,218 kg), the lowest gain per day of life (237,14 days) and the lowest share of meat in sides (35,369%) which has no economical justification. Therefore, justification for prolonged fattening of pigs of investigated genotype needs to be reconsidered considering different quality of carcass sides of certain age groups.
AB  - U cilju utvrđivanja uticaja starosti tovljenika pri klanju na kvalitet polutki, izvršena su ispitivanja na 115 tovljenika rase švedski landras. Formirane su tri starosne grupe, sa različitim brojem tovljenika u grupi, izjednačene po polu, poreklom sa jedne farme u Srbiji. Po završetku ispitivanja, grla su žrtvovana sa prosečnom starošću od 233,983 dana i prosečne težine polutki 73,5994 kg. Ustanovljen je visoko značajan (P (lt) 0,01) uticaj starosti tovljenika pri klanju na kvalitet polutki. Pošto je negativan predznak uz koeficijent b, može se govoriti o jednoj negativnoj regresiji starosti na kvalitet polutki. Najstariji tovljenici (>260 dana) imali su najlakše polutke (65,218 kg), sa najnižim prirastom po danu života (237,14 dana) i najnižim udelom mesa u polutkama (35,369%) što nema svoju ekonomsku opravdanost.

Po završetku ispitivanja, grla su žrtvovana sa prosečnom starošću od 233,983 dana i prosečne težine polutki 73,5994 kg. Ustanovljen je visoko značajan (P (lt) 0,01) uticaj starosti tovljenika pri klanju na kvalitet polutki. Pošto je negativan predznak uz koeficijent b, može se govoriti o jednoj negativnoj regresiji starosti na kvalitet polutki. Najstariji tovljenici (>260 dana) imali su najlakše polutke (65,218 kg), sa najnižim prirastom po danu života (237,14 dana) i najnižim udelom mesa u polutkama (35,369%) što nema svoju ekonomsku opravdanost.",

AB  - Objective of the paper was to present characteristics of native/autochthonous pig breed Moravka, reared in the previous century, as well as results relating to activities such as collection, selection, identification and production performance of investigated heads in 2004. Moravka is one of three pig breeds in Serbia included in the programme of preservation of animal genetic resources.
AB  - U našoj zemlji su evidentirane tri autohtone rase svinja: mangulica, moravka i resavka. Moravka i resavka su dve autohtone rase svinja koje su u opasnosti da nestanu, te su obuhvaćene programom očuvanja i održivog korišćenja. U radu su prikazane karakteristike autohtone rase svinja moravka gajene u prošlom veku (Tabela 1 i 2) kao i rezultati rada na sakupljanju, odabiranju, identifikaciji i proizvodnim osobinama grla rase moravka od 2004. godine (Tabela 3 i 4). Prosečna telesna masa krmača (u jednom zapatu) starosti od 3 do 5 godina, bila je 77,67 kg a visina grebena 63,83 cm. Krmače su oprasile prosečano 7,20 prasadi sa variranjem od 5 do 14. U tovu od 31,92 do 94,33 kg prosečan dnevni prirast je bio 385g/dan a konverzija hrane 3,74 kg kukuruza za kilogram prirasta telesne mase. Prosečan dnevni prirast je bio najveći izmedju 3. i 4. merenja (514 g/dan) što odgovara uzrastu od 253 do 283 dana.

AB  - Investigation of phenotypic and genetic variability of carcass side quality traits and pH values of M. semimembranosusa was carried out on 997 fatteners (446 females and 551 castrates) who originated from 20 sires. Sires were pure breed (Swedish Landrace, Large White and Duroc) and two breed crosses (Duroc x hampshire). In average 48,8 progeny - fatteners over sire were tested. Obtained data was processed by application of several methods of least squares (Harvey, 1990) in which sire genotype, sex and mass of warm carcass sides were included (linear effect) or age at the end of fattening (linear effect). Sires and sex of offspring influenced variation of all traits (P (lt) 0.01) except on value pH45. Genotype of sire influenced (P (lt) 0.05) variation of both pH values Heritability coefficients of quality traits of carcass sides were medium and in the interval from 0.234 to 0.408. Low value of heritability coefficient (0.098) was evaluated for trait pH45. Contrary to this trait, heritability of pH24 was high. Phenotypic relation of carcass side traits was of different force (from very weak to complete) and sign. Between traits pH45 and pH24 evaluated coefficient of phenotypic correlation wasn't statistically significant.
AB  - Ispitivanje fenotipske i genetske varijabilnosti osobina kvaliteta polutki i pH vrednosti M. semimembranosusa je obavljeno u 997 tovljenika koji su vodili poreklo od 20 očeva. Očevi su bili čiste rase (švedski landras, veliki jorkšir i durok) i dvorasni melezi (durok x hempšir). Po ocu je ispitano prosečno 48,8 potomaka-tovljenika. Dobijeni podaci su obrađeni primenom nekoliko modela metoda najmanjih kvadrata (Harvey, 1990). Očevi i pol potomaka su uticali na variranje svih osobina (P (lt) 0,01) sem na vrednost pH45. Genotip oca je uticao (P (lt) 0,05) na variranje obe pH vrednosti. Koeficijenti heritabiliteta osobina kvaliteta polutki bili su srednji i u intervalu od 0,234 do 0,408. AB  - The quality traits of Swedish landrace pig carcasses were investigated. According to short procedure of the method pf partial dissection described in detail by Walstra and Merkus (1996) the highest relative yield of muscle tissue in leg/ham, shoulder, back-loin section and belly-rib fat in carcasses of pigs with thinner withers fat - I group ( 65,76; 66,32; 50,70 and 53,95%). The highest relative share of intermuscular fat in shoulder, back-loin section and belly-rib fat was established in pigs with thicker withers fat - II group (3,16; 5,63 and 7,96%). Differences were significant at the level of 5%. Higher yield of muscle tissue in carcasses was determined in fatteners with thinner withers fat - I group (57,83%) and differences between I and II research groups weren’t significant (p>0,05).
AB  - Ispitivane su osobine kvaliteta svinjskih trupova švedskog landrasa po skraćenom postupku metodom parcijalne disekcije, koju su detaljno opisali Walstra i Merkus (1996). Utvrđen je najveći relativni prinos mišićnog tkiva u butu, plećki, leđno-slabinskom delu i trbušno-rebarnoj slanini u trupovima svinja sa tanjom slaninom na grebenu - I grupa (65,76; 66,32; 50,70 i 53,95%). Najveći relativni udeo intermuskularne masti (3,16; 5,63 i 7,96%) u plećki, leđno-slabinskom delu i trbušno-rebarnoj slanini imale su svinje sa debljom slaninom na grebenu - II grupa. Razlike su bile značajne na nivou 5%. Veći prinos mišićnog tkiva u trupovima utvrđen je kod tovljenika sa tanjom slaninom na grebenu- I grupa (57,83%) a razlike između I i II ispitivane grupe nisu bile signifikantne (p>0,05).
