AB - Nutrition is very important for maintaining the good health of
people at all stages of life and as such should be the subject of interest not only for
nutritionists, but also for each individual. The choice of food stuffs in the diet is
significantly influenced by habits, and in recent decades it has been noticed that
consumers are increasingly concerned about the way food is produced, its safety
and harmlessness. Although eggs, as a food, have an excellent nutritional
composition, they have had a bad reputation for decades due to the high content of
cholesterol, which was considered bad, which is why many consumers avoided
them or ate only egg whites. The results of research indicating that cholesterol in
food such as eggs has an insignificant effect on blood cholesterol have contributed
to solving the problem of cholestephobia, so that official nutrition organizations,
around year 2000, recommended the abolition of restrictions on egg consumption.
Egg consumption and method of preparation vary significantly among different
countries, which may be related to dietary traditions and consumer preferences.
During the last decades, the attitudes of consumers are gaining in importance and
are being studied in relation to the characteristics of egg quality, according to
production systems, the welfare of chickens, etc. A comprehensive view of
consumers' perceptions, their habits and understanding of the role of eggs in the
diet requires a systematic approach, at the level of the entire social community,
including education, which is especially important for younger populations. The
aim of this paper is to point out the importance of eggs in the diet, to show the
situation in the sector of table egg production in Serbia, with reference to EU
countries, including expected changes caused by changes in the legislation, which
may have far-reaching consequences for this sector, consumers and the market
situation.

AB - The aim of the survey was to determine how the egg production sector is complying with animal welfare legislation, which requires a ban on conventional cages and the transition to permitted systems for rearing laying hens - enriched cages and alternative systems, as well as the attitudes of egg producers and consumers on the impact of permitted systems of egg production/purchase and hen welfare. The survey included producers (50), with 1000 and more hens, where in the sample, the percentage share of producers was according to the capacity - the size of the farm, i.e. similar to the share in the total egg production in Serbia. A consumer survey (261) established their views on the impact of the welfare of layers and the rearing system when buying eggs. According to the test results, it can be stated that: when switching to permitted rearing systems, enriched cages were the choice of all surveyed producers (100%) and that in the transition period from 2014 to autumn 2020, 16.3% of respondents switched from conventional cages to enriched ones (2.04% in full and 14.29% in part). According to the results obtained, 80.49% of them are planning to switch from a conventional cage system to another rearing system, of which 60.98% said they would do so if they had the financial means, while about 19% of producers believe they will be forced to leave production. All producers expect that the transition to enriched cages will lead to a reduction in their production, and 83.33% of them believe that it will be from 20 to 40%. Surveyed producers (87.18%) expect that the transition from conventional cages will increase production costs, and 65.11% believe that this will not affect

the welfare of layers. A survey of consumer attitudes found that when buying eggs, the production system was very important for 19.91% of consumers, and for 19.41% of consumers it was not important at all, while the welfare of layers was very important for 26.84% and not at all important for 10.32% of consumers. The conclusion of the research is that in Serbia the transition to permitted rearing systems is slow, that harmonization with legal regulations is a great challenge and that changes are expected in the coming period that may have far-reaching consequences for the sector of table egg production.

AB - The study was conducted with the purpose of the comparative analysis of production performance and carcass quality of two coloured broiler genotypes of differentiated genetic potential for growth (Redbro and Redbro Naked Neck) in conditions of intensive feeding, as well as determining the effect of housing system (free range and poultry house) on fattening performance of Redbro broilers. Production performance is presented in the two control periods (days 42 and 84). Carcass quality was analysed at 84 days old broilers based on carcass conformation, yield, share of valuable parts and abdominal fat content. Redbro and Redbro Naked Neck broilers had different growth intensity according to the phases of the experiment, but at the age of 84 days, their body weight did not differ significantly (3382.44g to 3236.0g). Lower efficiency of food utilization (3.08 kg to 2.79 kg) and improved vitality (100 % vs. 97.33 %) was found in Redbro Naked Neck broilers. In terms of carcass quality, there were no significant differences except in the share of wings. The positive impact of growing Redbro broilers in the poultry house was determined on the body weight (p (lt) 0.05), feed efficiency and broiler mortality, which resulted in higher production index (169.83 vs. 140.37) compared to free range reared Redbro chickens. The differences in carcass quality were determined on the basis of better conformation, a small share of the wings but also lower yields of classically dressed carcasses of broilers Redbro reared in the poultry house.

AB - This paper investigates the effect of soybean, flax and rapeseed oil on productive performance and lipid fatty acid composition of broiler chickens. Six groups of 40 one day-old chicks hybrid line Cobb 500, with five replications were formed. Three mixtures with 21, 20 and 18% protein were used. The first 14 days groups were fed with the starter mixture. The control group was based on the 4% and 8% soybean oil while in the experimental groups were included the same concentration of flax and rapeseed oil. The experiment lasted 42 days. At the end of the experiment 10 chickens from each group were sacrificed for examination of fatty acid composition of lipids. The control group achieved weight of 2704g and 2695g, and the experimental group in 2735, 2645, 2735 and 2670g, respectively. Feed conversion was improved with increasing the amount of oil in the diet. The usage of flax and rapeseed oil changed the fatty acid composition of lipids. Substituting soybean oil with rapeseed oil reduces the percentage of palmitic, stearic, and linoleic acids, and increases participation of oleic and linoleic acids in abdominal fat. The inclusion of flaxseed oil in the diet of chickens in the amount of 4% and 8%, increases the amount of linoleic acid by 63% and 203%, which is a statistically high and significant difference for the control group I and II, while the amount of linoleic acid is reduced by 14% and 33 %, which presents a statistically significant difference compared to group II.
Glavni izvori polinezasićenih masnih kiselina dugog lanca su ulja morskih riba. Međutim, njihovo dodavanje u hranu za piliće narušava organoleptička svojstva proizvoda, stoga se pribegava obogaćivanju pilećeg mesa polinezasićenim masnim kiselinama sa 18C atoma dodavanjem biljnih ulja bogatih ovim kiselinama (Leeson i Summers, 1997).

AB - The aim of this study was to investigate the effects of soybean, flax and rapeseed oil on productive performance and carcass quality of broilers chickens. At the beginning of the experiment six groups of 40 one day-old chicks, hybrid line Cobb 500 was formed, with five replications. For nutrition two feed mixtures were used. During the first two weeks, in preparation period, chickens were fed with starter mixture, and then with grower mixture until the end of the experiment. Control group was fed with mixture of standard composition and quality based on corn and soybean meal with the addition of 4% and 8% soybean oil, while the experimental group included 4% and 8% flaxseed oil and 4% and 8% rapeseed oil. The experiment lasted 35 days. During the experimental period, chickens were fed and watered ad libitum and microclimatic conditions were constantly monitored. Control of body weight and feed consumption was carried out every seven days. At the end of the experiment 10 chickens from each group were sacrificed for the purpose of testing the carcass quality. Upon completion of the experiment, control group achieved weight of 2122g and 2053g, and the experimental group with flax oil 2164g and 2094g, and the group with rapeseed oil weighs of 2121g and 2081g. Chickens on treatment with 4% flax oil in the diet achieved significantly higher body mass (P (lt) 0.05) at the end of the experiment compared with the groups who were on treatment with 8% rapeseed and soybean oil. Soybean oil at a rate of 4% showed significantly (P (lt) 0.05) increased final body weight compared to body mass of chicks in a group with the addition of 8% soybean oil. Feed conversion ratio was lowest in the group with the addition of 4% flax oil and rapeseed oil, and the highest in the group with the addition of 8% flax oil. The differences found in the carcass quality between the control and experimental groups were not statistically significant (P>0.05). The largest amount of abdominal fat (18.9 g) was in the group with the addition of 4% rapeseed oil and lowest in the group with the addition of 8% soybean oil (12.6 g). Based on these results it can be concluded that the addition of 4% oil showed better productive results, but had no effect on carcass quality of chickens.

AB - Light program and quality of litter are important for forming of the environment and have a direct impact on the performance and welfare of broilers. In conditions of short-photoperiod, the welfare of broilers is improved, but they lead to reduced body mass. In this sense, the aim of this study was to investigate the effects of two light programs and two types of litter on production and carcass characteristics of broilers of different genotypes. Trial was conducted on 800 day-old chicks of genotype Hubbard classic and Ross 308. For litter, two types of materials were used - chopped straw and sawdust, the same thickness. Chickens were exposed to light program with constant moderate photoperiod (LP1), and gradual extending of the photoperiod (LP2). The results suggest that the LP2 would slow down the initial growth of broilers and the occurrence of compensatory growth, without any negative effect on the final body weight and production efficiency. LP1 effect was confirmed in increasing the yield of the carcass. The effects of both light programs are not the result of their major influence, but they are consequence of the interaction with genotype. From the point established of production and carcass parameters in treatments with litter, the criteria for selection of materials for the litter should include indicators of welfare, as well as the availability and cost of certain materials.

From the point established of production and carcass parameters in treatments with litter, the criteria for selection of materials for the litter should include indicators of welfare, as well as the availability and cost of certain materials., Svetlosni program i kvalitet prostirke su važni za formiranje ambijenta i imaju direktan uticaj na performanse i dobrobit brojlera.

AB - In this paper the effect of extruded rapeseed meal on the performance and sensory quality of the breast meat of broilers was investigated. The experiments were performed with hybrid line ROSS 308. The control group was fed soybean meal, and two levels of extruded rapeseed meal were added in experimental groups, 4% and 8% during a period of 42 days. Final body masses of chicken in the experimental groups were lower for 1.79% and 3.05% than the control group. Conversion of feed was satisfactory in all groups, and the best in the control group. Including extruded rapeseed meal in the meal did not show negative effect on the sensory quality, the smell and the colour, of fresh breast meat. Sensory quality (smell, taste and sensitivity) of heat-treated breast meat of the chickens in the control and experimental groups was marked as 'very good', or optimal.

AB - Requirements for improvement of broiler welfare have initiated certain changes in rearing and management conditions in conventional broiler production, with emphasis on stocking density and duration of photo period. Experimental study was conducted on broilers of fast growing genotypes reared in floor system. Two stocking densities were applied: 12 and 16 birds/m(2) and two light regimes: continuous: 23 h light (23 L):1 h dark (1 D) and intermittent: 4 h light (4 L): 2 h dark (2D), with 4 repetitions per treatment. Growth dynamics was investigated on 800 broilers and carcass quality traits (carcass weight, conformation, yields of major carcass parts and tibia quality) on sample of 80 carcasses differentiated according to gender of chickens. More intensive growth of broiler in the group reared in lower stocking density, that is, intermittent light regime, was established. Broilers reared in lower stocking density had significantly better carcass conformation and higher yield of breast, whereas in the response to the light regime the effect of sex was determined. Because of more physical activity of broilers in lower stocking density, the parameters of tibia quality are improved. In regard to present measures for preservation and improvement of animal welfare, application of lower stocking density of broilers and intermittent light regime is justified also from the aspect of improvement of carcass quality.
