The phenotypic correlation coefficients between abdominal fat and other traits were: 0.65 - left external sartorial; 0.51 - right external sartorial fat; 0.65 - total external sartorial fat; 0.51 - left internal sartorial fat; 0.46 total internal sartorial fat; 0.66 - total left sartorial fat; 0.49 - total right sartorial fat; 0.63 - total sartorial fat; 0.37 - back skin pinch thickness (under wings).
AB  - Ispitivanja osobina masnoće trupa obavljena su na 52 pileta (26 petlića i 26 kokica) u uzrastu 42 dana. Effects of age and time of day of sampling on proximate and fatty acid composition of whole eggs from two strains of laying hens

AB  - The aim of the present study was to determine the effects of breed (Naked Neck - NN - and Lohmann Brown - LB), age (46 to 49 weeks) and the time of day of sampling (morning eggs - M - and afternoon eggs A) on the proximate and fatty acid composition of whole eggs. Eggs of commercial hens (LB) had significantly (P  (lt)  0.001) less fat, ash and protein and lower dry-matter content (more water content) compared to the autochthonous breed (NN). The NN eggs contained significantly (P  (lt)  0.001) more SFA (saturated fatty acid) and less PUFA (polyunsaturated fatty acid) than LB ones, while the share of the eggs' total n-3 fatty acids did not differ significantly between breeds. The share of total MUFA (monounsaturated fatty acid) significantly (P = 0.011) decreased, while the share of total PUFA, n-6 and n-6 / n-3 ratio significantly increased (P  (lt)  0.001; P  (lt)  0.001; P = 0.032, respectively) with age of hens. Additionally, compared with morning eggs, afternoon eggs had a significantly (P = 0.046) higher share of total n-6 fatty acids. PCA (principal component analysis) offered a good separation of the samples according to breed and age when two first principal component were extracted. PC1 was positively related to parameters of proximate composition and SFA content, while PC2 was positively determined by PUFA, n-6 and n-3 content. Eggs of autochthonous hens (NN) were located in the positive area of PC1, whereas those from the commercial hens (LB) were in the negative quarter, which indicates opposite characteristics.

Incidence of footpad dermatitis and hock burns in broilers as affected by genotype, lighting program and litter type

AB  - The aim of this study was to define the conditions for improving broiler leg health, thus ultimately promoting broiler welfare and greater economic efficiency of production, by investigating the effects of litter type, lighting program, or genetic predisposition on the incidence and severity of footpad dermatitis and hock burns. The study was conducted on broiler genotypes (G) Hubbard Classic and Ross 308. Litter (L) was either chopped straw or wood shavings. Lighting programs (LP) were applied when broilers were eight days old. One lighting program (LP1) was designed so that chicks between 8 to 39 days of age were exposed to 16L:4D:2L:2D, and received 23L:1D between 40 to 42 days of age. The other lighting program (LP2) was a gradual extension of photoperiod after restrictions in the second week: 16L:8D (8-14 days), 16L:3D:2L:3D (15-21 days), 16L:2D:4L:2D (22-28 days), 16L:1D:6L:1D (29-35 days) and 23L:1D (36-42 days). Evaluations of footpad lesions and hock burn, according to the method described by Thomas et al. (2004), were carried out individually for each bird, on days 21 and 42. Based on the average score and the frequency of the worst forms of footpad dermatitis, better growing conditions for broilers were found when wood shavings were used as litter material rather than the chopped straw (P (lt) 0.01), and when a lighting program with gradual lengthening of photoperiod and with intermittent light/dark periods (LP2) was applied, compared to a moderate-constant photoperiod lighting program (LP1) (P (lt) 0.01). The Ross 308 broiler genotype, despite its lower body weight, showed a greater tendency to develop footpad dermatitis and hock burns. Hock burns developed more slowly than footpad dermatitis, and thereby, would be likely to exhibit a smaller adverse effect on broiler welfare and quality of chicken feet.

AB  - Intenziviranje brojlerske proizvodnje dovelo je do značajnog porasta učestalosti kontaktnih dermatitisa koji se najčešće javljaju na nožnim jastučićima („footpad“). Razlozi su, pored intenziviranja tehnološkog aspekta proizvodnje, u smislu uslova ishrane i smeštaja, i u genetskom unapređenju hibrida za brzinu i intenzitet porasta, sa efektima na njihovu smanjenu fizičku aktivnost i produžen kontakt sa vlažnom prostirkom. Teži oblici dermatitisa izazivaju bol, otežavaju kretanje i redukuju redovan pristup hrani i vodi, što pored narušene dobrobiti vodi redukovanom porastu telesne mase. Takođe, lezije na nogama iako primarno nisu izazvane mikroorganizmima, mogu biti mesto ulaska bakterija koje se krvotokom mogu proširiti i izazvati infekciju drugih tkiva. Poslednjih godina postoji velika potražnja za kvalitetnim pilećim nožicama koje ostvaruju značajnu tržišnu vrednost. Kontaktni dermatitisi u brojlerskoj proizvodnji se sagledavaju kao problem sa efektima na kvalitet celog trupa, bezbednost hrane i dobrobit životinja, što utiče na sve veću zainteresovanost za definisanje uzročnika u nastojanju rešavanja ovog problema. Učestalost i frekvencija pojedihih oblika dermatitisa u uslovima brojlerske proizvodnje najčešće je u korelaciji sa kvalitetom prostirke, koji je pored vrste materijala za prostirku i debljine sloja, određen i gustinom naseljenosti brojlera, svetlosnim režimom, ambijentalnim uslovima, ishranom, napajanjem, zdravstvenim stanjem životinja.
Inovacija tehničkog rešenja zasniva se na definisanju tehnoloških postupaka i preporukama sistema kontrole i ocenjivanja, u cilju smanjivanja incidence kontaktnih dermatitisa na brojlerskim farmama, što će rezultirati poboljšanjem kvaliteta trupa na liniji klanja i proizvodnjom kvalitetnih pilećih nožica, kao izvozno orjentisanog proizvoda. Tehničko rešenje daje detaljan opis tehnoloških postupaka čiji je značaj, na osnovu sprovedenih istraživanja autorskog tima, potvrđen za nastanak i razvoj kontaktnih dermatitisa, vodeći računa i o primarnom cilju - produktivnosti brojlerske proizvodnje.

The effect of using different levels of share of raw soybean of two varieties in mixtures for feeding hens on egg production, body weight, food consumption, the occurrence of defective eggs, mortality and the relative weight of the pancreas was studied. The possibility of replacing the heat-treated soybean grains, varieties Lana, with reduced trypsin inhibitor (TI) and Lydia with a standard level of TI, with raw soybean grains was examined. The research was conducted on the principle of two factorial experiment 2 x 4 (2 varieties x 4 levels of share of raw grain in the mixture) with a total of 8 diet treatments and 4 replicates per each treatment. In the first 5 weeks of the study, the differences in the number of eggs produced under the influence of tested factors were not significant. Under the influence of soybean varieties, the level of share of raw soybean and interaction of the studied factors showed significant differences (p (lt) 0.01) after 53 week of age. The use of soy with lower TI in the diet for laying hens resulted in a significantly greater capacity compared to standard variety. The share of raw soybean grains of 8 % in the mixtures significantly reduced the number of eggs laid. The differences in body weights, food consumption, occurrence of defective eggs and the relative weight of the pancreas were not significantly influenced by the studied factors or by their interaction effect.
AB  - Cilj ovih istraživanja je bio da se ispitaju mogućnosti zamene termički obrađenog sojinog zrna, sorte Lana sa smanjenim sadržajem tripsin inhibitora (TI) i sorte Lidija sa standardnim nivoom TI, sirovim zrnom. Ispitan je efekat korišćenja različitog nivoa učešća sirove soje obe sorte u smešama za ishranu kokoši nosilja hibrida Isa Brown na proizvodnju jaja, telesne mase, konzumaciju hrane, pojavu defektnih jaja, mortalitet i relativnu masu pankreasa. Istraživanje je izvedeno po principu dvofaktorijalnog ogleda 2 x 4 (2 sorte soje x 4 nivoa učešća sirovog zrna u smeši) sa ukupno 8 tretmana ishrane i 4 ponavljanja po tretmanu. Razlike u ostvarenim telesnim masama, konzumaciji hrane, pojavi defektnih jaja i relativnoj masi pankreasa koje su se javile nisu bile pod značajnim uticajem ispitivanih faktora kao ni pod uticajem njihovog interakcijskog dejstva.

Fungal contamination and natural occurrence of ochratoxin A (OTA) in poultry feed

AB  - Total fungal count, the presence of potentially toxigenic fungi and natural occurrence of ochratoxin A (OTA) were studied in 30 poultry feed samples (14 samples of feed for chickens and 16 samples of feed for laying hens), which were collected from different farms in Serbia at the beginning of year 2014. The total number of fungi was determined by the method of dilution and OTA was detected using the imunoadsorption enzymatic assay (ELISA). In most of the samples of chickens feed (50%) the total number of fungi was 1 - 3 x 102 CFU g-1, and in feed for laying hens the highest number of samples (37.50%) had the total fungal count from 1.4 to 4.8 x 104 CFU g -1. The species of genera Aspergillus and Pénicillium were identified as producers of OTA in 21.43% and 42.86% of chickens feed samples and in 68.75% and 25% of samples of feed for laying hens. The presence of OTA was detected in 100% of samples of feed for chickens and laying hens, with average concentrations of 34.40 μg kg-1 (feed for chickens) and 43.89 μg kg-1 (feed for laying hens). The total fungal count and content of OTA were not above the maximum allowed quantities, even though the presence of Aspergillus and Penicillium species was found in a large number of samples (up to 68.75%). These results indicate that the tested samples of poultry feed were mycologically and mycotoxicologically correct.
AB  - Ukupan broj gljiva, prisustvo potencijalno toksigenih rodova gljiva i prirodna pojava ohratoksina A (OTA) proučavani su u 30 uzoraka hrane za živinu (14 uzoraka hrane za piliće i 16 uzoraka hrane za nosilje), koji su sakupljeni iz različitih farmi u Srbiji početkom 2014. godine. Ukupan broj gljiva određen je primenom metode razređenja a OTA je detektovan primenom imunoadsorpcione enzimske metode (ELISA). Carcass quality of chickens of different conformation

AB  - The aim of this study was to investigate the effect of conformation of chickens of different genotype on the yield of breast meat. As a typical example of the chickens of very poor conformation pure breed Naked neck chickens were taken, fattened 8 and 10 weeks (groups K8 and K10). As an example of good conformation, an imported hybrid of chickens was taken, known for its broiler qualities and as medium growing hybrid, Red Bro (R). The second experiment included commercial hybrids of fast growth (Ross, Cobb and Hubbard) reared according to all technological standards of intensive fattening until the age of 42 days. The results obtained were contrary to the conclusion obtained a few decades ago, at the beginning of the study the conformation of chicken, by Scots and Darrow (1953), according to which the selection of chickens of heavy type, despite the fact that, to some extent, it had improved meat yield of the breast, did not significantly improve slaughter traits of fattening chickens, confirming that better conformation and higher body weight had a positive impact on improving relative share of breast, i.e. white meat. The results regarding the slaughter traits of chicken genotypes of different conformation suggest that breeding - selection work to improve the conformation of broilers significantly improved slaughter yields and breast meat yield. In this sense, the conformation can be treated as an indicator of the slaughter value of carcasses, rather than an aesthetic category.
AB  - Cilj rada je bio da se ispita uticaj konformacije pilića različitog genotipa na prinos mesa grudi. Kao tipični predstavnici pilića izuzetno loše konformacije uzeti su pilići čiste rase nacked neck, koji su tovljeni 8 i 10 nedelja (grupe K8 i K10). Kao primer povoljne konformacije uzeta je jedna uvozna provenijenca hibridnih pilića, poznatih po svojim brojlerskim kvalitetima i kao provenijenca srednjeg porasta, Red Bro (R). Drugim ogledom su obuhvaćeni komercijalni hibridi brzog porasta (Ross, Cobb i Hubbard) koji su gajeni po svim tehnološkim standardima intenzivnog tova do uzrasta 42 dana. Dobijeni rezultati suprotno od zaključka koji su pre nekoliko decenija, na početku ispitivanja konformacije pilića, dali Scots and Darrow (1953), a prema kojima selekcija kokoši teškog tipa, i pored toga što je u izvesnoj meri popravila mesnatost grudi, ipak nije bitno poboljšala klanične osobine pilića u tovu, potvrđuju da bolja konformacija i veća telesna masa pozitivno utiču na poboljšanje realivnog udela grudi, odnosno belog mesa. Rezultati ispitivanja klaničnih osobina pilića genotipa različite konformacije ukazuju na to da odgajivačko - selekcijski rad na poboljšanju konformacije brojlera je bitno poboljšao klanične randmane i mesnatost grudi. U tom smislu, konformacija se pre može tretirati kao indikator klanične vrednosti trupova, nego kao estetska kategorija.

AB  - Alternative laying hen rearing systems have been rapidly introduced into poultry production in an effort to harmonise poultry health and welfare with consumer, producer, industry and environmental demands. They are an integral part of modern egg production. Husbandry systems for keeping laying hens have an impact on, inter alia, the chemical composition of eggs. The subject matter of this study is a comparative review of the results obtained by different authors on the effect of rearing system on chemical composition ( proteins, lipids, cholesterol, vitamins and fatty acids content) and hygienic conditions of eggs from different rearing systems of laying hens. Eggs from these laying hen rearing systems have been proven by a large body of literature data to have better nutritional properties. Moreover, the results analysed also indicate differences within rearing systems. Rearing systems also have an influence on hygienic and microbiological quality of eggs. In view of the above, this comparable overview of the literature on the use of different rearing systems in table egg production can serve as a tool in determining the future direction of research as well as an indicator of its practical application.

Fungal contamination and natural occurrence of T-2 toxin in poultry feed

AB  - In this study, a total of 41 poultry (chicken and laying hens) feed samples collected from different farms in Serbia in the beginning of 2014 were investigated for total fungal count, presence of potential toxigenic fungi and natural occurrence of T-2 toxin. The number of total fungi was determined using the plate count method whereas T-2 toxin was detected by enzyme-linked immune sorbent assay (ELISA) method. Relative high percent of investigated poultry feed samples (43.90%) had the total fungal count 1 - 7 x 102 CFU g-1, while in 29.27% of the samples that number was 1.4 - 14 x 104 CFU g-1. In regard to potentially toxigenic fungi, species of Fusarium genus were isolated in most of poultry feed samples (58.54%), while species from genus Alternaria were isolated in least of samples (9.76%). The presence of T-2 toxin was detected in 75.61% of the samples, with concentration of 25.07 - 426.08 μg kg-1 (in average, 55.34 μg kg-1). The statistical insignificant negative correlation (r = - 0.05) was obtained between total fungal count and concentrations of T-2 toxin. In addition, a total fungal count and content of T-2 toxin in the samples were not above the maximum allowed levels, although the presence of species from genus Fusarium was found in 58.54% samples. These results indicated that the sanitary and hygienic conditions during the production of poultry feed in Serbia have been at satisfactory level.
AB  - U radu su proučavani ukupan broj gljiva, prisustvo potencijalno toksigenih rodova gljiva i prirodna pojava T-2 toksina u 41 uzoraka hrane za živinu (piliće i nosilje) koji su sakupljeni iz različitih farmi u Srbiji početkom 2014. godine. Ukupan broj gljiva određen je primenom metode razređenja a T-2 toksin je detektovan primenom imunoadsorpcione enzimske metode (ELISA). Effects of rearing system and body weight of Redbro broilers on the frequency and severity of footpad dermatitis

AB  - High market demand for high-quality chicken paws, as well as their role in the assessment of the welfare of broiler chickens are the main reasons for the research in this area. In order to determine the effects of rearing system and the body weight of moderate growing broilers on the frequency and severity of incidence of footpad dermatitis, experimental research was conducted on a total of 300 Redbro chickens reared in free range and floor system in the production facility until the age of 84 days. Based on an individual weighing of broilers and visual evaluation of the incidence and severity of footpad lesions at the end of the experiment, the frequency of the individual scores for footpad dermatitis was determined, as well as the average score in each of the five weight groups. The effect of body weight on the incidence and severity of footpad dermatitis was not statistically confirmed, but the absence of the most difficult forms of footpad dermatitis in broiler group with the lowest body weight was recorded. Rearing broiler chickens in free range system manifested a positive effect in terms of increased frequency of broilers without lesions and less frequency of moderate and severe lesions in relation to rearing system in the production facility. Also, the effect of rearing system on the frequency of the most severe degree of dermatitis in broilers Redbro was statistically confirmed.
AB  - Velika potražnja na tržištu za kvalitetnim pilećim nogama, kao i njihova uloga u proceni dobrobiti brojlera su osnovni razlozi za istraživanja u ovoj oblasti. U cilju utvrđivanja efekata sistema gajenja i telesne mase brojlera umerenog porasta na učestalost i ozbiljnost pojave footpad dermatitisa, sprovedeno je eksperimentalno istraživanje na ukupno 300 Redbro pilića gajenih u sistemu sa ispustom i podnom sistemu u objektu do uzrasta 84 dana. Na osnovu individualnog merenja telesne mase brojlera i vizuelne ocene pojave i težine lezija na nožnim jastučićima, na kraju ogleda, utvrđena je frekvencija pojedinačnih ocena za footpad dermatitis, kao i prosečna ocena u svakoj od pet težinskih grupa. Efekat telesne mase na učestalost i ozbiljnost footpad dermatitisa nije statistički potvrđen ali je utvrđeno odsustvo najtežih oblika footpad dermatitisa u grupi brojlera sa najmanjim telesnim masama. Gajenjem brojlera u sistemu sa ispustom ispoljen je pozitivan efekat u smislu veće frekvencije brojlera bez lezija i manje frekvencije umerenih i teških lezija u odnosu na sistem gajenja u objektu.Takođe je dobijena statistička potvrda efekta sistema gajenja na frekvenciju dermatitisa najtežeg stepena kod Redbro brojlera.

The aim of the present study was to evaluate differences in fatty acids content of meat of Naked Neck chickens rared in free range system and two commercial broiler breeds (Cobb 308 and Hybro G+) reared in conventional production system. The trial involved 100 chickens per group. Fattening period lasted 42 days for conventional system and 84 days for free range system. Breast meat of Naked Neck chicken had statistically more 16:0 content compared with Cobb 308 (p≤0.05), where in thigh meat the highest content of 16:0 was determined in Hybro G+ breed. Differences for fatty acids composition of breast meat between breeds were also established for 14:0, 17:0, 18:0, 16:1, 18:1, 18:2, 20:2, 22:1 and 22:5 fatty acid. The Naked Neck group showed the highest (p≤0.05) percentage of SFA and the Cobb 308 showed the lowest in breast meat. Thigh SFA were also significantly different (p≤0.05) between breeds, where Naked Neck chickens had the lowest and Hybro G+ the highest values. Breast MUFA were higher in Hybro G+ than in Naked Neck or Cobb 308 chickens, and thigh MUFA content had opposite trend and it was the lowest in Hybro G+ chicken. In conclusion, free ranged Naked Neck chickens have been shown to have significant different fatty acid composition compared with broiler chickens reared in conventional system.
AB  - Cilj istraživanja je bio da se utvrdi razlika u masnokiselinskom sastavu mesa gološijana gajenih u slobodnom sistemu i dva komercijalna brojlerska hibrida (Cobb 308 i Hybro G+ gajenih u konvencionalnom proizvodnom sistemu. U ogledu je bilo po 100 pilića po grupi. Tov u konvencionalnom sistemu je trajao 42 dana, a u slobodnom sistemu 84 dana. Meso grudi gološijana sadržalo je statistički više 16:0 u odnosu na Cobb 308 (p≤0.05), dok je meso karabataka hibrida Hybro G+ imalo veći sadržaj 16:0 masnih kiselina. Sadržaj masnih kiselina u mesu grudi između hibrida je bio različit za 14:0, 17:0, 18:0, 16:1, 18:1, 18:2, 20:2, 22:1 i 22:5 masne kiseline. Zaključno, može se reći da je u mesu gološijana gajenih u slobodnom sistemu utvrđen statistički značajno različit sadržaj masnih kiselina u poređenju sa brojlerima gajenih u konvencionalnom sistemu.

AB  - The study was conducted with the purpose of the comparative analysis of production performance and carcass quality of two coloured broiler genotypes of differentiated genetic potential for growth (Redbro and Redbro Naked Neck) in conditions of intensive feeding, as well as determining the effect of housing system (free range and poultry house) on fattening performance of Redbro broilers. Production performance is presented in the two control periods (days 42 and 84). Carcass quality was analysed at 84 days old broilers based on carcass conformation, yield, share of valuable parts and abdominal fat content. Redbro and Redbro Naked Neck broilers had different growth intensity according to the phases of the experiment, but at the age of 84 days, their body weight did not differ significantly (3382.44g to 3236.0g). Lower efficiency of food utilization (3.08 kg to 2.79 kg) and improved vitality (100 % vs. 97.33 %) was found in Redbro Naked Neck broilers. In terms of carcass quality, there were no significant differences except in the share of wings. The positive impact of growing Redbro broilers in the poultry house was determined on the body weight (p (lt)  0.05), feed efficiency and broiler mortality, which resulted in higher production index (169.83 vs. 140.37) compared to free range reared Redbro chickens. The differences in carcass quality were determined on the basis of better conformation, a small share of the wings but also lower yields of classically dressed carcasses of broilers Redbro reared in the poultry house.
AB  - Istraživanje je sprovedeno sa ciljem uporedne analize proizvodnih performansi i kvaliteta trupa dve provenijence brojlera diferenciranog genetskog potencijala za porast (Redbro i Redbro Naked Neck) u uslovima intenzivne ishrane, kao i utvrđivanja efekta sistema gajenja (na ispustu i u objektu) na tovne performanse Redbro brojlera. Proizvodne performanse su prikazane u dva kontrolna perioda (42 i 84 dana). Kvalitet trupa analiziran je na osnovu konformacije, prinosa, udela vrednijih delova i sadržaja abdominalne masti. Redbro i Redbro Naked Neck brojleri su imali različit intenzitet porasta po fazama ogleda ali se u starosti 84 dana njihove telesne mase nisu značajno razlikovale (3382.44g prema 3236.0g). Manja efikasnost korišćenja hrane (3.08kg prema 2.79kg) i bolja vitalnost (100% prema 97.33%) utvrđena je kod Redbro Naked Neck brojlera. Effect of vegetable oils on productive performances and lipid fatty acid composition of chicken abdominal fat

AB  - This paper investigates the effect of soybean, flax and rapeseed oil on productive performance and lipid fatty acid composition of broiler chickens. Six groups of 40 one day-old chicks hybrid line Cobb 500, with five replications were formed. Three mixtures with 21, 20 and 18% protein were used. The first 14 days groups were fed with the starter mixture. The control group was based on the 4% and 8% soybean oil while in the experimental groups were included the same concentration of flax and rapeseed oil. The experiment lasted 42 days. At the end of the experiment 10 chickens from each group were sacrificed for examination of fatty acid composition of lipids. The control group achieved weight of 2704g and 2695g, and the experimental group in 2735, 2645, 2735 and 2670g, respectively. Feed conversion was improved with increasing the amount of oil in the diet. The usage of flax and rapeseed oil changed the fatty acid composition of lipids. Substituting soybean oil with rapeseed oil reduces the percentage of palmitic, stearic, and linoleic acids, and increases participation of oleic and linoleic acids in abdominal fat. The inclusion of flaxseed oil in the diet of chickens in the amount of 4% and 8%, increases the amount of linoleic acid by 63% and 203%, which is a statistically high and significant difference for the control group I and II, while the amount of linoleic acid is reduced by 14% and 33 %, which presents a statistically significant difference compared to group II.
AB  - Za normalno odvijanje metaboličkih procesa u ljudskom organizmu, neophodne su esencijalne masne kiseline. Pošto organizam nije u mogućnosti da ih sintetiše, moraju se unositi hranom u dovoljnoj količini, obično konzumiranjem namirnica životinjskog porekla. Istraživanja su pokazala da se odabirom lipida u hrani za piliće može značajno uticati na masnokiselinski sastav lipida pilećeg mesa. Značaj ovog odabira je u toliko veći, jer se istovremeno postižu dva efekta, izuzetno važna sa nutritivnog i sa aspekta zdravstvene bezbednosti namirnica. Jedan efekat se odnosi na povećanje učešća polinezasićenih masnih kiselina, linolne i linolenske kiseline, koje zajedno sa oleinskom predstavljaju direktne prekursore za višestruko nezasićene masne kiseline sa 20 i 22 atoma ugljenika i jednom dvostrukom vezom u položaju n-3, n-6 ili n-3 i cis konfiguracijom, koje se takođe ubrajaju u esencijalne (Pokorn, 1990). A drugi, na smanjenje učešća masnih kiselina sa dokazanim štetnim efektima (C10:0, C12:0, C14:0). Polinezasićene masne kiseline n-3 familije i njihove poznate prednosti sa aspekta zdravstvene bezbednosti, dovele su do razvoja proučavanje efekta masnokiselinskog sastava lipida u hrani za živinu, na deponovanje masnih kiselina u lipidima pilećeg mesa i konzumnih jaja (Cherian and Sim, 1991; Scaife et al., 1994). Glavni izvori polinezasićenih masnih kiselina dugog lanca su ulja morskih riba. Međutim, njihovo dodavanje u hranu za piliće narušava organoleptička svojstva proizvoda, stoga se pribegava obogaćivanju pilećeg mesa polinezasićenim masnim kiselinama sa 18C atoma dodavanjem biljnih ulja bogatih ovim kiselinama (Leeson i Summers, 1997).

Different sources and levels of vegetable oils in broiler chicken nutrition

AB  - The aim of this study was to investigate the effects of soybean, flax and rapeseed oil on productive performance and carcass quality of broilers chickens. At the beginning of the experiment six groups of 40 one day-old chicks, hybrid line Cobb 500 was formed, with five replications. For nutrition two feed mixtures were used. During the first two weeks, in preparation period, chickens were fed with starter mixture, and then with grower mixture until the end of the experiment. Control group was fed with mixture of standard composition and quality based on corn and soybean meal with the addition of 4% and 8% soybean oil, while the experimental group included 4% and 8% flaxseed oil and 4% and 8% rapeseed oil. The experiment lasted 35 days. During the experimental period, chickens were fed and watered ad libitum and microclimatic conditions were constantly monitored. Control of body weight and feed consumption was carried out every seven days. At the end of the experiment 10 chickens from each group were sacrificed for the purpose of testing the carcass quality. Upon completion of the experiment, control group achieved weight of 2122g and 2053g, and the experimental group with flax oil 2164g and 2094g, and the group with rapeseed oil weighs of 2121g and 2081g. Chickens on treatment with 4% flax oil in the diet achieved significantly higher body mass (P (lt) 0.05) at the end of the experiment compared with the groups who were on treatment with 8% rapeseed and soybean oil. Soybean oil at a rate of 4% showed significantly (P (lt) 0.05) increased final body weight compared to body mass of chicks in a group with the addition of 8% soybean oil. Feed conversion ratio was lowest in the group with the addition of 4% flax oil and rapeseed oil, and the highest in the group with the addition of 8% flax oil. The differences found in the carcass quality between the control and experimental groups were not statistically significant (P>0.05). The largest amount of abdominal fat (18.9 g) was in the group with the addition of 4% rapeseed oil and lowest in the group with the addition of 8% soybean oil (12.6 g). Based on these results it can be concluded that the addition of 4% oil showed better productive results, but had no effect on carcass quality of chickens.
AB  - Cilj ovog rada je bio da se ispita efekat ulja soje, lana i uljane repice na proizvodne parametre i kvalitet trupa brojlera. Na početku ogleda formirano je šest grupa sa po 40 jednodnevnih pilića linijskog hibrida Cobb 500, u pet ponavljanja. Za ishranu su korišćene dve smeše. Tokom prve dve nedelje pripremnog perioda, za ishranu pilića je korišćena starter, a potom grover smeša do kraja eksperimenta. Kontrolna grupa je hranjena smešom standardnog sastava i kvaliteta na bazi sojine sačme i kukuruza sa dodatkom 4% i 8% ulja soje, dok je u eksperimentalnim grupama bilo uključeno 4% i 8% lanenog ulja, odnosno 4% i 8% ulja repice. Ogled je trajao 35 dana. U toku eksperimentalnog perioda piliću su hranjeni i napajani po volji, a mikroklimatski uslovi redovno kontrolisani. Kontrola telesne mase i utroška hrane je vršena svakih sedam dana. Na kraju eksperimenta žrtvovano je po 10 pilića iz svake grupe za potrebe ispitivanja kvaliteta trupa. Po završetku eksperimentalnog perioda, kontrolna grupa je ostvarila masu od 2122g i 2053g, a ogledne grupe sa uljem lana 2164g i 2094g, dok su grupe sa repičinim uljem ostvarile masu od 2121g i 2081g. Pilići na tretmanu sa 4% ulja lana u ishrani ostvarili su statistički značajno veću telesnu masu (P (lt) 0,05) na kraju eksperimenta u poređenju sa grupama koje su bile na tretmanu sa 8% ulja repice i soje. Ulje soje u količini od 4% je takođe statistički značajno (P (lt) 0,05) uticalo na povećanje završne telesne mase u poređenju sa telesnom masom pilića u grupi sa dodatkom 8% sojinog ulja. Konverzija hrane je bila najniža u grupi sa dodatkom 4% ulja lana i uljane repice, a najviša u grupi sa dodatkom 8% ulja lana. Utvrđene razlike u kvalitetu trupa između kontrolne i oglednih grupa nisu bile statistički značajne (P>0,05). Najveća količina abdominalne masti (18,9g) je u grupi sa dodatkom 4% ulja repice, a najmanja u grupi sa dodatkom 8% ulja soje (12,6g). Na osnovu dobijenih rezultata može se zaključiti da je dodatak 4% ulja ispoljio bolje prozvodne rezulate, ali nije uticao na kvalitet trupa pilića.

AB  - Enzyme supplementation of poultry diets is nutritionally, economically and environmentally justified. Enzymes are used to increase the energy value of feed ingredients and enhance the utilisation of protein, fats, carbohydrates and phytin phosphorus from plant materials, leading to a lower excretion rate of undigested nutrients into the environment and, hence, reduced environmental pollution. This is especially important regarding proteases, as the correct digestion of nitrogenous compounds in feed materials is essential for reducing N excretion - a major pollutant worldwide. Numerous studies have shown no adverse effects of enzyme supplementation in broiler diets on body weight, mortality, health, feed intake, FCR, nutrient digestibility, meat quality and production costs. However, there is still a large amount of uncertainty regarding the use of enzymes.

Principles of livestock development in the Republic of Serbia

AB  - Livestock production is an important branch of agriculture in the Republic of Serbia because it provides necessary products (milk, meat, eggs). In addition, livestock production provides raw materials for food industry and leather industry. Livestock production is expected to provide quality products for export, primarily beef and lamb. There is an opportunity for export of cheese (especially sheep and goat milk cheese) with defined origin and standard of quality. However, based on available data, the situation in livestock production is assessed as negative. In the last years, number of heads of all species of domestic animals has decreased continuously. In several years, Serbia will become member of European Union (EU). This means that livestock production should prepare for competition in the single developed market, without any state trade barriers. Serbia's membership in international organizations, liberalization of trade in livestock products, a small possibility of protection from imports, the implementation of quality standards (HACCP, ISO, Global GAP), reduced levels of domestic support, elimination of export subsidies, increase profitability and ability to be competitive on the international market. Based on these circumstances, it is necessary to build efficient livestock production that can compete in the European market contributing to the growth of farmers and national income.
AB  - Stočarska proizvodnja je važna grana poljoprivrede u Republici Srbiji i posmatrani istorijski, oduvek je igrala vodeću ulogu u održanju egzistencije stanovništva. Stočarstvo pruža neophodne proizvode (mleko, meso, jaja), a takođe obezbeđuje sirovine za prehrambenu industriju i industriju kože. Od stočarske proizvodnje se takođe očekuje da obezbedi kvalitetne proizvode za izvoz, pre svega govedine i jagnjetine. Priliku za izvoz imaju sir (posebno od ovčijeg i kozjeg mleka), sa definisanim poreklom i standardom kvaliteta. Međutim, na osnovu raspoloživih podataka, situacija u stočarstvu se ocenjuje kao negativna. U poslednjih nekoliko godina broj grla svih vrsta domaćih životinja kontinuirano se smanjuje. Srbija je dobila kandidaturu za članstvo u Evropskoj uniji (EU). To znači da bi stočarska proizvodnja trebala da se pripremi za konkurenciju na jedinstvenom razvijenom tržištu, bez ikakvih državnih trgovinskih barijera. Članstvo Srbije u međunarodnim organizacijama, liberalizacija trgovine stočarskih proizvoda, mala mogućnost zaštite od uvoza, implementacija standarda kvaliteta (HACCP, ISO, GLOBAL GAP), smanjeni nivo domaće podrške, eliminisanje izvoznih subvencija,rast profitabilnosti i sposobnost da budu konkurentna na međunarodnom tržištu, su još dodatni izazovi sa kojima se suočava ili će se suočiti stočarstvo Srbije. Na osnovu ovih okolnosti, neophodno je da se izgrade principi za efikasan razvoj stočarske proizvodnje, koja može da se takmiči na evropskom tržištu i doprinosi rastu poljoprivrede i nacionalnog dohotka.

Consumer attitudes to broiler meat and products

AB  - The aim of this paper was to select the most acceptable housing system of broiler meat production evaluating consumers attitudes and to investigate quality of raw type sausages made of chicken meat, applying quantitative descriptive sensory analysis. Based on the survey conducted among consumers of different sex, age and education, it was concluded that majority of consumers of both sexes finds that the price of broiler meat produced in free range production is justifiably higher because of the quality of meat provided. Meat should be labelled according to production system and quality of meat should be controlled by scientific institution according to the opinion of female consumers, whereas male consumers stated that meat quality should be controlled by producers and inspection. Compared sausages samples are made with different chicken meat type: A - commercial broiler, B - commercial broiler and Naked Neck chickens (50:50 ratios) and C - Naked Neck chicken. In all three variants of sausages 20% of pork fat was added. Sensory evaluation was done after roasting. System of 9 points was used for sausages quality attributes (parameters) scoring: 1-exceptionally unacceptable to 9-exceptionally acceptable. Following attributes were evaluated/scored: external appearance, cross-section appearance, colour, smell, taste and texture. Thirty untrained panellists participated in scoring. The appearance of all examined sausage was very good. The colour of group B and C were evaluated as acceptable, but not the usual for this sausage type. Sausages from group A had lighter colour than expected and assessed as too pale. Group B had the highest scores for smell and taste. As a result of conducted sensory analysis, sausages from variant B were selected as the best of compared samples, with overall scores of 7.87.

abstract = "The aim of this paper was to select the most acceptable housing system of broiler meat production evaluating consumers attitudes and to investigate quality of raw type sausages made of chicken meat, applying quantitative descriptive sensory analysis. Based on the survey conducted among consumers of different sex, age and education, it was concluded that majority of consumers of both sexes finds that the price of broiler meat produced in free range production is justifiably higher because of the quality of meat provided. Meat should be labelled according to production system and quality of meat should be controlled by scientific institution according to the opinion of female consumers, whereas male consumers stated that meat quality should be controlled by producers and inspection. Compared sausages samples are made with different chicken meat type: A - commercial broiler, B - commercial broiler and Naked Neck chickens (50:50 ratios) and C - Naked Neck chicken. In all three variants of sausages 20% of pork fat was added. Sensory evaluation was done after roasting. System of 9 points was used for sausages quality attributes (parameters) scoring: 1-exceptionally unacceptable to 9-exceptionally acceptable. Following attributes were evaluated/scored: external appearance, cross-section appearance, colour, smell, taste and texture. Thirty untrained panellists participated in scoring. The appearance of all examined sausage was very good. The colour of group B and C were evaluated as acceptable, but not the usual for this sausage type. Sausages from group A had lighter colour than expected and assessed as too pale. Group B had the highest scores for smell and taste. As a result of conducted sensory analysis, sausages from variant B were selected as the best of compared samples, with overall scores of 7.87.",

AB  - Light program and quality of litter are important for forming of the environment and have a direct impact on the performance and welfare of broilers. In conditions of short-photoperiod, the welfare of broilers is improved, but they lead to reduced body mass. In this sense, the aim of this study was to investigate the effects of two light programs and two types of litter on production and carcass characteristics of broilers of different genotypes. Trial was conducted on 800 day-old chicks of genotype Hubbard classic and Ross 308. For litter, two types of materials were used - chopped straw and sawdust, the same thickness. Chickens were exposed to light program with constant moderate photoperiod (LP1), and gradual extending of the photoperiod (LP2). The results suggest that the LP2 would slow down the initial growth of broilers and the occurrence of compensatory growth, without any negative effect on the final body weight and production efficiency. LP1 effect was confirmed in increasing the yield of the carcass. The effects of both light programs are not the result of their major influence, but they are consequence of the interaction with genotype. From the point established of production and carcass parameters in treatments with litter, the criteria for selection of materials for the litter should include indicators of welfare, as well as the availability and cost of certain materials.
AB  - Svetlosni program i kvalitet prostirke su važni za formiranje ambijenta i imaju direktan uticaj na performanse i dobrobit brojlera. U uslovima skraćenog fotoperioda poboljšava se dobrobit brojlera ali oni vode redukovanoj telesnoj masi.U tom smislu, cilj rada je bio da se ispitaju efekti dva svetlosna programa i dva tipa prostirke na proizvodne i klanične karakteristike brojlera različitog genotipa.Ogled je izveden na 800 jednodnevnih pilića genotipa Hubbard classic i Ross 308. Za prostirku su korišćene dve vrste materijala - seckana slama i piljevina, pri istoj debljini. Pilići su izloženi svetlosnom programu sa konstantno umerenim fotoperiodom (LP1), odnosno sa postepenim produžavanjem fotoperioda (LP2). Rezultati istraživanja su ukazali da je LP2 uticao na usporavanje početnog porasta brojlera i pojavu kompenzatornog porasta, bez negativnog efekta na završne telesne mase i efikasnost proizvodnje. Efekat LP1 je potvrđen u povećanju prinosa trupa. Efekti oba svetlosna programa nisu rezultat njihovog glavnog uticaja već su posledica interakcije sa genotipom. Sa aspekta utvrđenih proizvodnih i klaničnih parametara u tretmanima sa prostirkom, u kriterijume za izbor vrste materijala za prostirku bi trebalo uključiti indikatore dobrobiti, kao i dostupnost i troškove nabavke pojedinih materijala.

The effect of full substitution of supplemental methionine with betaine in broiler nutrition on production and slaughter results

AB  - The use of betaine can influence the resistance, production performance and quality of broiler carcass, and potentially it can reduce the need for choline and methionine in food due to the mutual correlation of these three substances in the organism. Objective of the paper was to investigate the effect of full substitution of added DL-methionine with betaine in diets for broilers on production and slaughter parameters in conditions of optimal amount of choline in the feed. Study was carried out on 1725 one day old broiler chickens of Cobb 500 hybrid divided into 3 groups: Control group (C) fed complete forage mixtures with usual addition of DL methionine and two trial groups where methionine was substituted by 1g (B1group), and by 2g of betaine per kilogram of mixture (B2 group). Research results indicate that the full substitution of supplemented methionine with betaine in feed can have positive and negative impact in broiler fattening. Negative effects on final body mass, gain and feed conversion were determined in broilers fed mixtures where 1g of synthetic methionine was replaced with 1g of betaine preparation, and at the same time positive influence on mortality was observed, especially in broilers fed diets containing 2g of betaine. Production index showed no significant differences between trial groups, as well as studied broiler carcass quality parameters.
AB  - Upotreba betaina može imati uticaja na otpornost, proizvodne performanse i kvalitet trupa brojlera, a potencijalno može smanjiti i potrebu za holinom i metioninom u hrani usled međusobne povezanosti ove tri supstance u organizmu. Cilj rada je da se ispita uticaj kompletne zamene dodatog DL-metionina betainom u obrocima brojlera na proizvodne i klanične parametre u uslovima optimalne količine holina u hrani. Istraživanje je izvedeno na 1725 jednodnevnih brojlerskih pilića hibrida Cobb 500 podeljenih u 3 grupe: kontrolnu grupu (C) hranjenu potpunim krmnim smešama sa uobičajnim dodatkom DL metiona i dve ogledne grupe kojima je umesto metionina dodavan 1gram (B1grupa), odnosno 2g betaina po kilogramu smeše (B2 grupa). Rezultati istraživanja ukazuju da potpuna zamena dodatnog metionina betainom može imati i pozitivne i negativne efekte u tovu brojlera. Utvrđen je negativan uticaj na završnu telesnu masu, prirast i konverziju hrane kod brojlera kojima je u smešama 1g sintetičkog metionina zamenjen sa 1g betainskog preparata, ali i pozitivan uticaj na smanjenje mortaliteta, posebno kod brojlera sa 2g betaina u hrani. Proizvodni indeks se nije značajnije razlikovao između oglednih grupa, a takođe i ispitivani parametri kvaliteta trupa brojlera.

AB  - Carcass conformation is a very important parameter in assessing the overall appearance and meatiness of broilers. This study evaluates the effect of protease supplemented to reduced protein diets on production traits, dressed carcass weight and conformation measures in fast-growing Cobb 500 and slow-growing Master Gris broilers over a fattening period of 49 days. At slaughter, the following measurements were taken: pre-slaughter body weight (BW), conventionally dressed carcass weight and abdominal fat weight. Following carcass dissection into primal cuts, absolute conformation values, including metatarsus length (ML), keel length (KL), breast depth (BD), breast angle (BA) and thigh girth (TG), were determined. For carcass conformation evaluation purposes, index values of carcass conformation measures BW/ML, BW/KL, BW/BD and BW/TG were identified. Genotype and sex had a significant effect on dressed carcass weight and all conformation measures, whereas the effect of different protein levels in protease-supplemented diets was significant only in Master Gris, for metatarsus length and the following indices: BW/ML, BW/KL and BW/TG.
AB  - Konformacija trupova pilića predstavlja vrlo važan parametar za ocenu opšteg izgleda i mesnatosti pilića. U radu je analiziran efekat enzima proteaze, uz snižen nivo sirovih proteina, na proizvodne osobine, masu obrađenog trupa i mere konformacije kod brzorastućeg-Cobb 500 i spororastućeg hibrida - Master Gris. Tov pilića trajao je 49 dana. Na liniji klanja izmerena je telesna masa pilića pre klanja, masa klasično-obrađenog trupa i masa abdominalne masti. Nakon rasecanja trupova na osnovne delove izmerene su apsolutne mere konformacije: dužina piska, dužina kobilice, dubina grudi, grudni ugao i obim bataka. Za bolju ocenu konformacije trupova izračunati su indeksi mera konformacije: telesna masa/dužina piska, telesna masa/dužina kobilice, telesna masa/dubina grudi i telesna masa/obim bataka. Značajan je bio uticaj genotipa i pola na masu obrađenih trupova i sve ispitivane mere konformacije, dok je uticaj različitih nivoa proteina, uz dodatak enzima proteaze, bio značajan samo kod hibrida Master Gris, i to za dužinu piska i indekse telesna masa/dužina piska, telesna masa/dužina kobilice i telesna masa/obim bataka.

AB  - Lom ljuske (6-20%) problem je od velikog značaja sa stanovišta ekonomskih posledica i bezbednosti jaja u ishrani. U oblasti ishrane, genetike i uslova životne sredine se čine veliki napori kako bi se poboljšao kvalitet ljuske jajeta, ali razumevanje procesa nastanka ljuske i porekla defekata ljuske predstavlja ključ za razumevanje ovog problema. Cilj ovog preglednog rada je da se rezimiraju nova saznanja i informacije o pitanjima ljuske jajeta, kao i ažuriraju novi nepovoljni prehrambeni i uslovi životne sredine.

Foot-pad dermatitis in commercial broilers

AB  - In the present experiment, the presence of mycological agents in chickens with skin lesions on foot pads was investigated, in order to improve the health of broiler chickens. Foot-pad dermatitis (FPD) is described in the literature as dermatitis caused by multifactor causes. The presence of irritating chemical substances in the litter, genetic predispositions of hybrids, immune suppressive diseases of chickens, as well as the composition of commercial broiler diets that influence the occurrence of wet litter, are proven factors that contribute to a more intensive incidence of foot-pad dermatitis. Foot-pad dermatitis is a condition characterized by lesions on metatarsal and digital ventral skin of poultry feet. It is type of contact dermatitis which in severe cases shows slower weight gain, poor health condition and welfare. Taking into consideration the literature data, chickens reared in closed facilities where the bacterial and mycological agents are present partly in the litter if not properly disinfected, but also in the food or the chicken plumage, we wanted to investigate their presence in the skin of foot pads. The study was focused on incidence of foot-pad dermatitis in 500 one day old broiler chickens of Hubbard genotype, in two feeding (standard/economical) programs for broilers available on our market. Chopped straw was used as litter. At the end of fattening, all chickens were examined for the presence of lesions on the skin of the feet. Total of 39 chickens were allocated to the intensity of the lesion on foot pads rated as 2 (mild) and 3 (severe). In the mycological examination of the 9 samples of autoclaved chicken legs with lesions on the feet, we have isolated and identified the presence of fungi /mould Aspergillus fumigatus. The histopathology investigation, during which the tissue section from mild and severe skin foot pads was collected and stained using Hematoxylin and eosin, revealed the hyperkeratosis, panniculitis, ballooning degeneration and dermis inflammation. No fungal elements were observed in the sections of pads stained with Gomori methenamine silver. Birds are especially susceptible to infection with Aspergillus fumigatus. That species of fungus is also classified as allergenic factor.
AB  - U ogledu je ispitivano prisustvo mikoloških agenasa kod pilića sa lezijama na koži tabanskih jastučića, u cilju poboljšanja zdravlja brojlerskih pilica. Dermatitis na tabanskim jastučićima (DTJ) je u literaturi multifaktornog porekla. Postojanje iritantnih hemijskih supstanci u prostirci, genetske predispozicije hibrida, imunosupresivne bolesti pilića, kao i sastav komercijalnih smeša za ishranu brojlera koje utiču na pojavu vlažne prostirke, su dokazani faktori koji doprinose intenzivnijoj pojavi DTJ. To je kontaktni dermatitis koji kod težih slučajeva utiče na prirast, zdravlje i dobrobit. Na kraju tova pilića, svi pilići su pregledani na prisustvo lezija na koži tabana. U ovom radu, ispitano je 39 pilića sa intenzitetom lezija na tabanskim jastučićima. Intenzitet lezija je ocenjen sa 2 (blage) i sa 3 (izražene) lezije. Mikološkim ispitivanjem utvrđeno je prisustvo gljivice/plesni Aspergillus fumigatus, kod 9 autoklaviranih promenjenih pilećih nogica. Histološkim ispitivanjem utvrdili smo postojanje hiperkeratoze, panikulitisa, zapaljenje dermisa i balonirajuću degeneraciju. Nismo utvrdili prisustvo fungalnih elemenata u koži tabana, nakon bojenja Gomory methenamin silver bojenjem. Ptice su posebno osetljive na infekciju A. fumigatus koji je klasifikovan kao alergijski uzročnik.

AB  - Nutrition factors are considered to be very important for incidence of foot-pad dermatitis through the effect on the quality of litter. Objective of this study was to investigate the effect of the use of two feeding programs for broilers available on the market and declared in the nutritional/economical sense as standard and economical, on quality of litter, incidence of leg dermatitis (foot-pad and hock burns) and production performance. Trial was carried out on 500 one day old chickens of Hubbard genotype, in two treatments and five replicates. Chopped straw was used as litter. During the trial, the mortality and food consumption were monitored, and at the end of trial the body mass was controlled, as well as the incidence of foot-pad and hock burns and their severity were evaluated and quality of litter analyzed. Research results indicate significant effect of the diets from the aspect of broiler welfare and productivity. Application of the feeding program declared in the nutritional/economical sense as economical resulted in higher content of litter moisture, significantly higher frequency of incidence of the most severe forms of foot-pad dermatitis and significantly lower broiler performance.
AB  - Ishranbeni faktori se smatraju veoma značajnim za nastanak dermatitisa na nožnim jastučićima brojlera preko uticaja na kvalitet prostirke. Cilj rada je bio ispitivanje efekta upotrebe dva, tržišno dostupna programa ishrane brojlera koji su deklarisani u nutritivno/ekonomskom smislu kao standardan i ekonomičan, na kvalitet prostirke, pojavu dermatitisa na nogama i proizvodne performanse. Ogled je izveden na 500 jednodnevnih pilića genotipa Hubbard, sa dva tretmana i pet ponavljanja. Za prostirku je korišćena seckana slama. Tokom ogleda su evidentirani mortalitet i utrošak hrane a na kraju ogleda je izvršena kontrola telesne mase, ocena pojave i težine oblika lezija na nožnim jastučićima i skočnim zglobovima, analiza kvaliteta prostirke. Rezultati istraživanja su ukazali na značajan efekat programa ishrane sa stanovišta dobrobiti i produktivnosti brojlera. Primena programa ishrane deklarisanog u nutritivno/ekonomskom smislu kao ekonomičnog, rezultirala je većim sadržajem vlage u prostirci, značajno većom frekvencijom pojavljivanja najtežih oblika dermatitisa na nožnim jastučićima i značajno lošijim performansama brojlera.

The effect of rearing system and length of fattening period on selected parameters of broiler carcass quality

AB  - This study involved analysis of some carcass quality parameters in broilers reared under two different non-industrial systems (extensive indoor and free range) at two different lengths of fattening period (56 and 63 days). The quality parameters tested included dressed carcass yield, dressing percentage, proportion of primal cuts (breast, drumstick, thigh, wing, pelvis and back) in dressed carcass, and proportion of major tissues (muscular tissue, bone and skin) in high-value carcass cuts (breast, drumstick and thigh). The objective of the study was to evaluate the effect of broiler rearing system, length of fattening period and gender on the carcass quality traits tested. The male broilers had a higher carcass weight at the slaughtering line at both lengths of fattening period, and the obtained differences were statistically significant. The broilers raised under extensive indoor system had a somewhat higher proportion of breast and a lower proportion of thigh and drumstick. A significant effect of gender was observed on these traits. The proportion of muscular tissue, bone and skin in the high-value primal cuts, including breast, drumsticks and thighs, dependent also on broiler gender and partly on the rearing system and length of fattening period.

abstract = "This study involved analysis of some carcass quality parameters in broilers reared under two different non-industrial systems (extensive indoor and free range) at two different lengths of fattening period (56 and 63 days). The quality parameters tested included dressed carcass yield, dressing percentage, proportion of primal cuts (breast, drumstick, thigh, wing, pelvis and back) in dressed carcass, and proportion of major tissues (muscular tissue, bone and skin) in high-value carcass cuts (breast, drumstick and thigh). The objective of the study was to evaluate the effect of broiler rearing system, length of fattening period and gender on the carcass quality traits tested. The male broilers had a higher carcass weight at the slaughtering line at both lengths of fattening period, and the obtained differences were statistically significant. The broilers raised under extensive indoor system had a somewhat higher proportion of breast and a lower proportion of thigh and drumstick. A significant effect of gender was observed on these traits. The proportion of muscular tissue, bone and skin in the high-value primal cuts, including breast, drumsticks and thighs, dependent also on broiler gender and partly on the rearing system and length of fattening period.",
